7 Facts about Food waste1) It’s estimated that 30 – 50% of food produced for human consumption is wasted globally every year.

2) The average family in Great Britain wastes nearly £60 a month by throwing away food, in some cases almost an entire meal a day. A family with children waste approximately £700 a year on unused food. In Thailand this is significantly less - but food is still wasted

3) It was reported in Thailand that 7.6 million tonnes— 64%—of the refuse collected was organic waste. It is thought that a significant portion of this waste is not merely fruit and vegetable peelings, but edible surplus food.

4) An average Bangkok grocery store can throw away up to 200 kg of edible food a day. An average 5-star hotel buffet throws away up to 50 kgs of edible food during each service period.

5) Most people will admit to cooking or preparing too much food which results in it being wasted. Careful planning would eliminate this risk.

6) The foods most commonly wasted are fresh produce such as vegetables and salad, and bakery products such as cakes and bread.

7) On average, each Thai person throws away more than a kilo of rubbish every single day, and more than 60% of it is food.

Grade 6 were challenged with reducing their food waste.

Here are a selection of interesting recipes that they tried at home from every day left over

foods.

BY COURAGE

Watermelon peel

Watermelon peel from the 1 small watermelon

4 spoon of Chili oil

3 drop of Pepper oil

3 spoon of Soy sauce

Peel the outside of the watermelon and leave the white

part to eat. Eat the red part of the watermelon and cut the

white part into thin strips. Pour all the seasoning on top,

stir it.

I Would give it a 8/10, Because it tastes like

cucumber but is more brittle and tasty. There is no

taste of the peel, so you could add anything. It could

taste sweet, spicy or soy.

Method

Ingredients

First you find out you have rotten milk and yogurt then. You place it out of the fridge and put the yoghurt and milk in a pan with a lid and wait overnight for it to get even more rotten. Then the next morning put the pan on to the stove and as soon as it starts to boil add the table spoon of lemon juice. Then place it on the stove for it to cool down, you will see that the cottage cheese is separated from liquid, the liquid is serum. Then use a sifter to separate the serum from the cottage cheese and then pour the serum into one container because you can use it for lots of thing like crepes, but once you got the cottage place it into a container in the fridge once it gets cold you can put jam or sugar on it and eat.

● 3 tablespoon soy sauce● 1 tablespoon maple syrup● 1/2 teaspoon garlic powder● 1 tablespoon oil

Instructions Peel of the bananasUse a spoon to get the white parts (the little things that the banana peel has when you open it) of the banana to make the banana bacon crispy. Then let it soak in a marinade made of garlic powder, soy sauce and maple syrup. Let it soak in there for about 2 hours and then put it in the oven and for about 30 minutes and you’re done

Review: I mean it looks like bacon but it does not taste like it. It was good to experiment but I would definitely not eat this as a everyday meal. Normal bacon is juicy but this peel bacon is dry so there is not taste. It's like eating crisps.

Polish potato Pancakes, Chef Mimi

Ingredients MethodPlace chopped potatoes and onion into a food processor for 30 seconds until the lumps are gonePut in a strainer over a bowl and let it strain for 5 minsCarefully pour away the liquid in the bowl but keep the starch on the bottomTo the starch add Drained potato and onion, egg, flour, salt, and pepperGet your mixture and shape them in to patty shapes (Make sure they are even!)Put your oil on the pan on medium heat and cook for about 3 mins on each side Enjoy!

First I cooked the mushrooms and the garlic in the olive oil, and then I slowly added the pasta after that I added a tablespoon of leftover pesto sauce and then I mixed it up for a few minutes and served it on the plate.

( the quantities you can choose yourself because it matters how much garlic you want and how much leftovers you have.

Instructions 1. Get your vegetables of your choice and cut them into slices

or sticks whichever you prefer.2. Get your cloves of garlic and cut them up in pieces as small

as possible.3. Put your garlic into a bowl and mix in some mayonnaise.4. Get a plate to put everything on and you are done.

Leftover tuna sandwich - Chef Zuri

Latkes with bacon and cheese- Chef MegInstructions

Part 1: The latkes1. Grate the potatoes and onion2. In a large bowl, mix the potatoes,

onion, eggs, salt and pepper.3. Add the flour.4. Pour the vegetable oil into a pan.5. Put spoonfuls of the potato

mixture into the pan and fry until brown

6. Flip it and fry until golden brown.7. If there are any leftover

pancakes the next day…8. Cut as much bacon as you need

and grate as much cheese as you need. Sprinkle both over the latkes.

9. Put in the oven until the cheese is melted.

10. Enjoy!

● Leftover cream broccoli soup

● Flour● Yeast.

Ingredients Method

● Put and mix 400-450 grams of flour into 350 cream soup. ● Mix two teaspoons of yeast with warm water.● Leave the mixture of yeast and water for 20 minutes until it rises.● After 20 minutes, mix the yeast and cream soup.● When the dough stops sticking to your hand let it rest in a warm place

and wait for 40 minutes.● Put it in the oven with the temperature of 230 degrees turn on the top

and bottom heaters in the oven 45-55.

French Pancakes- Chef scarlett

Instructions 1. I cracked the 2 eggs into the machine2. I put in some flour3. Then, I added some rum ( only 2 oz )4. I also put in some oil ( 2 oz )5. I then added the spoiled milk6. And I pressed the “mix” button - using

a food mixer7. After I had the “sauce”, I got out a

frying pan and slowly put in the liquid.8. Finally, when my pancake was ready, I

added some sugar and my pancake was ready!

Pineapple & Carrot Pulp CakeIngredients235 ml vegetable oil, plus extra for the tin100g natural yogurt4 large eggs1½ tsp vanilla extract½ an orange zested265g self-raising flour335g light muscovado sugar2½ tsp ground cinnamon¼ tsp fresh nutmeg300g of carrot and pineapple pulp100g sultanas or raisins

This is a fabulous way to use the pulp that is left over from making juice

Pineapple & Carrot PUlp Cake

MethodHeat oven to 180C/160C fan/gas 4. Oil and line the base and sides of two 20cm cake tins with baking parchment. Whisk the oil, yogurt, eggs, vanilla and zest in a jug. Mix the flour, sugar, cinnamon and nutmeg with a good pinch of salt in a bowl. Squeeze any lumps of sugar through your fingers, shaking the bowl a few times to bring the lumps to the surface.

Add the wet ingredients to the dry, along with the pulp, raisins and half the nuts, if using. Mix well to combine, then divide between the tins. Bake for 25-30 mins or until a skewer inserted into the centre of the cake comes out clean. If any wet mixture clings to the skewer, return to the oven for 5 mins, then check again. Leave to cool in the tins.

To make the icing, beat the butter and sugar together until smooth. Add half the cream cheese and beat again, then add the rest (adding it bit by bit prevents the icing from splitting). Remove the cakes from the tins and sandwich together with half the icing. Top with the remaining icing and scatter with the remaining walnuts. Will keep in the fridge for up to five days. Best eaten at room temperature.
