    Sustainability isn’t the work of one

    person or group—it is the responsibility

    of every student, faculty and staff

    member on campus. The Housing, Dining

    and Hospitality (HDH) Sustainability

    division at UC San Diego helps educate

    and inspire students and the campus

    community to think, work and live

    sustainably.

    Each year, HDH’s sustainability programs

    grow and change. We continue to push

    the envelope and develop initiatives that

    contribute to our campus sustainability

    mission.

    The HDH EcoNautsTheEcoNautsareHDH’steamofstudentsustainabilityadvocates.They

    helpeducatestudentsandthecampuscommunityonenvironmental

    impacttopics,includingwaterconservation,sustainableeating,eco-

    friendlytransportationandproperwastesorting.Additionally,theyassist

    withsustainabilityprojectswithinHDHandoncampus.

    The2018/2019EcoNautsteamconsistedofDanteWebster,ShannonLee,

    ChristySchlutius,RoxyMontalvo,McKennaThompsonandStevenBolton.

    Educational Programs and Student OutreachTheEcoNautsconducted95educationalprogramsandevents

    throughoutcampusandreachedmorethan3,100residentsandstudents.

    Topicsincludewaterconservation,fair-tradeproducts,andzero-waste

    andsustainableliving.Residentshadtheopportunitytosamplefair-trade

    coffeeofferedinHDHrestaurantsandmarketsthroughapartnershipwith

    coffeeprovider,ecogrounds.

    InAcademicYear2018/2019,theEcoNautspilotedaGreenLiving

    Certificationprogram.Theysurveyedresidentsontheirsustainableliving

    habitsandsharedeasywaystolivemoresustainablyoncampus.Fifteen

    residencehallsuitesreceivedGreenLivingCertificationforproperwaste

    sorting,energyandwaterconservation,sustainablecleaning,andmore.

    TheEcoNautsalsostartedavlogseriesthisyear,highlightingtipsonhow

    tobesustainableoncampus,keypartnerships,livingzero-waste,and

    sustainablemove-outs.Thesevlogsreachedalmost2,000uniqueviewers.

    Donation Programs: Throughouttheyear,HDHdonatedmore

    than18,000poundsoffoodtotheFood

    RecoveryNetwork,TritonFoodPantryand

    SanDiegoRescueMission.Thesedonations

    preventedediblefoodsfromendingup

    inthelandfillandhelpedcombatissues

    offoodsecurityamongUCSanDiego

    studentsandtheSanDiegocommunity.

    HDHSustainabilityandtheEcoNauts

    revampedtheDisabledAmericanVeterans

    donationprogramheldduringthe

    move-outperiodforundergraduate

    residents.Byhostingawareness

    eventsineachcollege,strategically

    relocatingdonationbins,andincreasing

    marketingefforts,donationsincreased

    bymorethan5tons.Goodsdonated

    totaled49tons,equivalentto$86,000

    towardservicesandprogramsthat

    supportlocalSanDiegoveterans.

    Waste Reduction in Dining ServicesHDHDiningServicesservedalleat-inmeals

    bydefaultandshiftedtoreusablecutlery

    inallrestaurantsandmarkets.Theyalso

    expandedreusableoptionsandswitchedto

    paperstrawsandstrawlesslids.Theseefforts

    resultedina36%reductionofsingle-use

    products,equivalentto2.5millionitems.

    Back-of-House Food Scrap RecyclingHDHcomposted205tonsof

    pre-consumerfoodscrapsfromthe

    kitchensinitsrestaurants,bringingthe

    totaltonearly2,000tonssincethe

    program’slaunchin2010.Thecarbon

    emissionsavoidedbycompostingthese

    foodscrapsisequivalenttoremoving31

    carsfromtheroadforanentireyear.

    Zero-Waste Events HDHWellnessandEngagementsuccessfully

    hostedtwolarge-scale,zero-waste

    events,thefirstoftheirkindatUCSan

    Diego.WellFestandtheWellnessFair

    hadmorethan1,600attendeescombined

    andachieved99.6%and90.5%waste

    diversion,respectively.Thissuccesswas

    madepossiblebyclosecollaborationwith

    vendorsandcampuspartners,including

    UCSanDiegoCatering,theStudent

    SustainabilityCollectiveandRoger’s

    CommunityGarden.Additionally,select

    productvendorsandsupplierswere

    designatedas“Zero-WasteCertified”for

    theiradherencetoHDH’svendorzero-

    wasteguidelines,andaretaggedinour

    systemforotherstoeasilydetermine

    sustainableoptionswhenhostingevents.

    Post-Consumer Composting TheTinyBinTim(TBT)post-consumer

    compostingprogramcontinuedatRoots.

    Nearly600poundsoffoodwastewas

    compostedatEllie’sCommunityGarden.

    Inwinterquarter,theUCSDStudentSustainability

    CollectiveinitiatedanexpansionpilotoftheTBT

    programat64Degrees.Morethan195poundsof

    foodwastewascollectedinthefirsttwoweeks

    withlessthan1%contamination.Thewastewas

    compostedatRoger’sCommunityGarden.

    Thetheprogramwascontinuedthroughoutthe

    year,resultinginnearly1,000poundsoffood

    wastecomposted.Bypreventingthisfoodwaste

    fromenteringthelandfill,theTBTprogram

    avoidedtheproductionofcarbonemissions

    equivalenttodrivingmorethan1,300miles.

    HDHplanstocontinueandexpandtheTBT

    programintoadditionalrestaurantsaswe

    cometounderstandandovercomethe

    challengesofpost-consumercomposting.

    UC San Diego Catering Zero-Waste EventsExpandingonthesuccessofWellFest,the

    WellnessFairandTinyBinTim,UCSanDiego

    Cateringbeganofferingzero-wasteeventsona

    pilotbasis.Morethan35zero-wasteeventswere

    heldinAcademicYear2018/2019,divertingnearly

    450poundsoffoodwastefromthelandfill.

    EcoContainer Program Duringwinterandspringquarters,HDHpiloteda

    programatPinesandRootsthatallowedstudents

    totaketheirfoodtogoinreusablecontainers.

    Morethan500uniqueusersparticipatedin

    theprogram,withover300repeatuses.

    Residential Life Incentive ProgramEarlWarrenCollegereceivedtheHDH

    SustainabilityAwardforholdingthemost

    educationalprogramswiththeEcoNauts

    throughouttheyear.Thankstothiscollaboration,

    theEcoNautsreachedmorethan600residents.

    HDH Sustainability CommitteeRepresentativesfrommultipleHDHdivisions

    meetonamonthlybasistopromotesustainability

    efforts,discussandcollaborateongreenprojects,

    andincreasetransparencyandcommunicationof

    sustainabilityissuesacrossthedepartment.Inthe

    pastyear,theSustainabilityCommitteecompleted

    anenergyconservationproject,identified

    opportunitiesandrecommendedsolutionstosave

    energythroughbuildingLEDretrofits,workplace

    practices,andincreasedenergymetering.

    Green Office Certification TheLaJollaDelSol,MesaNueva,RitaAtkinsonand

    OneMiramarStreetleasingofficesreceivedGreen

    OfficeCertifications(GOC)fromtheUCSanDiego

    SustainableResourceCenter.TheGOCprogram

    encouragescampusofficestoconserveresources

    byrecognizingdepartmentsthatimplementand

    improvetheirsustainablepractices.Theoffices

    receivedcertificationsbasedoncategoriessuch

    asenergyconservation,sustainableengagement,

    eco-friendlypurchasingandwastediversion.

  • Our on-campus and community partnerships are instrumental in the work we do. These support

    and foster vibrant, sustainable communities, both on campus and in the greater San Diego area.

    Ã Campus Sustainability HDHpartnerscloselywiththeuniversity'sSustainabilityofficethroughouttheyearoninitiativessuchasthecampuszero-wasteplan,greenbuildingpolicies,andreportingontheUCOPSustainablePracticesPolicygoals.

    Ã Triton Food Pantry HDHhostedtheannualmove-outfooddonationdrivetocollectnon-perishablefoods.Thesedonationsbenefittedtheon-campusTritonFoodPantry,servingstudentswhofacefoodinsecurity.Approximately6,000poundsoffooditemsweredonatedbyon-campusresidents,whichprovidedmealstomorethan2,100studentsthroughoutthesummer.

    Ã Food Recovery Network ThroughourpartnershipwithUCSanDiego’sFoodRecoveryNetwork(FRN),morethan3,600poundsofedible(butnotsellable)foodwasrecoveredfromHDHrestaurants,providingover3,000mealstothoseinneed.Todate,HDHhasdonatednearly12,000poundsoffoodtoFRN.

    Ã Inter-Sustainability Council TheEcoNautsrepresentHDHSustainabilityontheuniversity’sInter-SustainabilityCouncil,whichbringstogetherthevarioussustainabilityorganizations,groupsanddepartmentsoncampusinbi-weeklymeetingsforincreasedcommunicationandcollaboration.

    Ã College Residential Life TheEcoNautsandHDHSustainabilitycontinuetopartnerwithResidentialLifeofficesonmultipleinitiativestoeducateresidentsandspreadawarenessforsustainability.TheEcoNautscollaboratewithresidentassistantsandhouseadvisorstobringfun,engagingandeducationalactivitiesandprogramstoresidents.

    Ã HDH Green Grants GreenGrantsarefundsavailabletosupportsustainabilityprojects,efforts,andideasoncampus.Fornearly10years,HDHhasbeenawardingGreenGrantstoon-campusresidentsandHDHstaff.Thisyear,HDHawardedaGreenGranttoJohnMuirCollegetopurchasereusableutensilkitsaseducationalgiveawaysattheMuirstockconcertfestival.Theutensilkitsencouragestudentstoavoidsingle-useplasticutensils,andsupportedtheEcoContainerProgram.

  • Ã Student Sustainability Collective TheStudentSustainabilityCollective(SSC)isanorganizationofstudentleadersdedicatedtopromotingsustainabilityandsocialjusticeoncampus.Thisyear,HDHcollaboratedwithSSCdirectorstoexpandtheTinyBinTimcompostingpilotprogram,hostthezero-wasteWellFestandtheWellnessFair,andstudywaterbottlepurchasesinHDHmarkets.

    Ã Roger’s Community Garden HDHpartneredwithRoger’sCommunityGardentocompostpost-consumerfoodscrapsrecoveredfromTinyBinTiminitsrestaurantsandselectzero-wastecateringevents.ThepartnershiphasallowedHDHtodivertpost-consumerfoodscrapsfromthelandfill,contributinggreatlytothecampus’zero-wastegoal.

    Ã The Zone TheEcoNautscollaboratedwithTheZonetohostanEarthMontheventtoeducatestudentsonfair-tradecoffeeandrepurposingcoffeegroundsintoaneco-friendlyfacescrub.

    Ã Disabled American Veterans HDH’spartnershipwiththeDisabledAmericanVeteransresultedinthedonationof43tonsofitemsbyundergraduateresidentsduringmoveouts,anincreaseofmorethan5tonsfromlastyear.Donationsincludedclothing,furniture,electronicsandappliances.Graduateandfamilyhousingcommunitiesdonatedanadditional6tonsofitems.

    Ã San Diego Rescue Mission HDHcontinueditspartnershipwiththeSanDiegoRescueMissiontocollectedible,freshfooddonations.Nearly8,500poundsoffoodwasdonatedtotheorganization,providingmorethan7,000mealstothoseinneed.

    Ã The City of San Diego – Miramar Greenery HDHhasanongoingpartnershipwiththeCityofSanDiego’sMiramarGreeneryforitsBack-of-HouseFoodScrapcompostingprogram.
