It’s offi cially summer, and a good cause for celebration with the Fruit and Veggie Fest Fruit and Veggie Fest coming to Fillmore this month! The Nutrition Education and Obesity Prevention Program (NEOP) collaborates with retail markets all year long to promote fruits and vegetables. On Saturday, July 21st, Super A Foods in Fillmore will host this year’s Fruit and Veggie Fest!Also this month, the Chronic Disease Prevention Program (CDPP) is proud to recognize Ms. Rosalva Bolaños as the Champion in the Kitchen, acknowledged for cooking culturally authentic, tasty and healthy meals from scratch to groups of seniors at the Fillmore Active Adult Center.At the center meals are made from scratch every day. Ms. Bolaños says she is inspired from her own “mama’s” cooking. The fl avors are reminiscent of her native hometown near the neighboring states of Zacatecas and Jalisco in Mexico. Healthier, home-style cooked meals have attracted more customers to the senior meal program. An average of 35 meals are served at the center and an additional 20 meals are delivered to seniors at their homes. This is a fi fty percent increase from eight months ago. Abel Duque, the center’s Parks and Recreation Coordinator, says the reason the program is working so well is because Ms. Bolaños “puts a lot of love into each meal she makes!” Each recipe is approved by the Ventura County Area Agency on Agency (VCAAA). The collaboration with VCAAA nutritionists has been successful. As a result, many of Ms. Bolaños’ own recipes are part of the menu every day. Fresh ingredients such as vegetables and herbs are used in place of salt to make meals more appealing, taste better and healthier for you. For example, Ms. Bolaños sautés tomato and onion with olive oil, lightly tossed with a fresh herb such as oregano or cilantro leaves, to add fl avor and to encourage good nutrition.Here are some more ideas, to keep you eating and cooking healthy this summer:- Use fruits and vegetables in-season: They cost less and taste at their best- Grow a summer garden: It keeps you active and provides fresh, healthy foods- Grill your favorite vegetables on the BBQ- Make “veggie pizza” with the kids- Let your children pick out vegetables and fruit at the store- Visit a local Farmers’ Market And remember, come out to meet Ms. Rosalva Bolaños and the Public Health teams on Sat, July 21st at Fruit & Veggie Fest 2018 at Super A Foods in Fillmore. ¡Es tiempo de verano y una buena razón para celebrar con el Festival de Frutas y Verduras 2018 Festival de Frutas y Verduras 2018 que llega a Fillmore este mes! El Programa de Educación Nutricional y Prevención de la Obesidad (NEOP) colabora con los comerciantes de mercados durante todo el año para promover las frutas y verduras.¡El sábado 21 de julio, Super A Foods en Fillmore será el anfi trión del Festival de Frutas y Verduras de este año!También este mes, el Programa de Prevención de Enfermedades Crónicas (CDPP) se enorgullece de reconocer a la Sra. Rosalva Bolaños como la Campeona en la Cocina, por las comidas auténticas, sabrosas y saludables que cocina para los miembros del Centro de Adultos Activos en Fillmore.En el centro, las comidas se preparan frescas todos los días. La Sra. Bolaños dice que la inspiran las enseñanzas de cocina de su propia “mamá”. Los sabores son como los de su tierra natal, un municipio que se avecina a los estados de Zacatecas y Jalisco, en México.Las comidas frescas, sanas y caseras han atraído a más clientes al Programa de Nutrición para Seniors (SNP). Al día se sirve un promedio de 35 comidas en el centro y 20 para hogares. En ocho meses el número de comidas preparadas aumento un cincuenta por ciento. Ingredients• 1 1/4 pounds zucchini (about 3 medium zucchini) • 1/2 teaspoon of olive oil • 1 tablespoon dried oregano • 2 cloves garlic, fi nely chopped • teaspoon grated lemon peel• 1 tablespoon grated Parmesan• 1/4 teaspoon ground black pepper
Preparation1. Cut zucchini in half crosswise, then cut each
half into 4 lengthwise sticks.2. Heat oil in a heavy nonstick skillet over me-
dium-high heat.3. Add oregano and garlic, and sauté for about
2 minutes.4. Add zucchini and lemon peel, and sauté
for about 3 minutes until zucchini is lightly browned.
5. Mix in Parmesan cheese and pepper. Serve warm.
