FOR FIDELITY IN A MOTHER'S VOCATION

Dear God, give me the grace to appreciate the dignity of motherhood, which Thou hast been pleased to

bestow upon me, and to fulfill its duties according to Thy Will. By my prayers and good example, may I lead

my husband and my children closer to Thy Sacred Heart. Make me a devoted wife to my husband and a good

mother to my children after the example of the Blessed Virgin Mary.

Almighty God, I thank Thee for the blessed care and protection with which Thou hast embraced my family. I

humbly submit to Thy decrees and resign myself to Thy Pivine Providence. I grasp Thy guiding hand, and I shall

never follow my own ways lest they lead me astray. Thy good pleasure shall be my happiness; Thy

commandments shall be my only rule of conduct. Thy Will shall be my will, and Thy service shall be the object

of all my desires.

Lord, grant me peace of mind because of my trust in Thy Providence, an unwavering and cheerful courage

founded on my faith in Thy tremendous love, faithfulness to duty resulting from a constant awareness of Thy

presence, and a firm hope of eternal reward.

Through the intercession of the Blessed Virgin Mary, I implore Thy blessing upon my family that we all may

serve Thee faithfully in this life and deserve to be reunited in the eternal happiness of Thy heavenly Kingdom.

Wonderful Carrot Cake

Ingredients:

2 cups lour (I use whole wheat) 3/4 cup buttermilk

2 teaspoons baking soda 2 teaspoons vanilla extract

1/2 teaspoon salt 2 cups grated carrot

2 teaspoons cinnamon 1 (8-oz.) can crushed pineapple, drained

3 eggs 4 oz. laked coconut

2 cups sugar 1 cup chopped pecans

3/4 cup oil

Buttermilk Glaze:

1 cup sugar 1/2 cup butter

1-1/2 teaspoons baking soda 1 tablespoon light corn syrup

1/2 cup buttermilk 1 teaspoon vanilla

Cream Cheese Icing Ingredients:

11 oz. cream cheese, softened 1 (16-oz.) box powdered sugar

3/4 cup butter, softened 1-1/2 teaspoons vanilla extract

Directions:

Mix flour, baking soda, salt, and cinnamon together. Beat eggs, sugar, oil, buttermilk, and vanilla together until

smooth. Add flour mixture, beating Until blended. Stir in carrot, pineapple, coconut, and pecans. Pour batter into

three 9-inch round pans (greased and lined with waxed paper).Bake at 350 for 30 minutes or until a toothpick

comes out clean. Prepare buttermilk glaze to drizzle over cake layers when baked: Bring first 5 ingredients to a

Boil over medium heat. Boil 4 minutes, stirring constantly until glaze is golden. Remove from heat, and stir in

vanilla. Cool slightly. Cool cakes in pan for 10-15 minutes, and then remove from pans. Cool with glazed side up

on wire racks. Frost with Cream Cheese Icing: Beat cream cheese and butter together at medium speed until

smooth. Gradually add powdered sugar at a low speed until icing is light and fluffy. Stir in vanilla.

GF Brownies

Ingredients:

1 cup melted GF butter

3 tablespoons potato starch

1-1/2 to 2 cups sugar 1-1/2 teaspoons xanthan gum

4 eggs, beaten 1 cup cocoa powder (ensure it is GF)

1/2 cup rice lour 2 teaspoons vanilla extract

3 tablespoons sorghum lour

Directions:

B Mix all the ingredients together.

B For thick brownies, grease an 8x8 pan and dust it with 2 teaspoons cocoa powder. For thin

brownies, grease a 9x13 pan and dust it with 2 tablespoons cocoa powder.

B Pour batter into the chosen pan and level it with a spoon or spatula. Bake at 350 for 25-35

minutes (for 9x13) or 35-45 minutes (for 8x8), until a toothpick inserted in the middle

comes out clean.

B Cool before cutting, if you can wait. These are also good warm.

GF Peanut Butter Cookies

Ingredients:

2 eggs

1 cup chunky peanut butter (may use creamy if you prefer)

1 cup sugar

*There is NO FLOUR in this recipe.

Directions:

B Beat the eggs. Stir in the peanut butter and sugar. Drop by small spoonfuls on ungreased

cookie sheets. Bake in preheated 350 oven for 10 to 12 minutes. Makes about 2-1/2 dozen

2-inch cookies.

Prayer for Homeschoolers

Dear Lord, bless me in my decision to home school my children. Grant me the grace of peace and

determination in this awesome endeavor. Lead me to the proper materials for the instruction each

of my children, so that their individual talents and skills will be nurtured and they will grow in

intelligence to the fullness of their abilities.

Give me the strength to persevere when the weight of being teacher, mother, wife, and

housekeeper seems too much to bear. Help me to maintain my household and family school,

knowing that there will be times when one or both may seem to suffer, but confident that you will

assist me in restoring harmony to both in good time. Allow me the contentment of heart and

knowledge that the proper formation of my children's minds holds importance far above many of

the callings of this world. Bestow on me courage to overcome the criticisms of those who disagree

with me in this effort, keeping ever mindful that the growing of my children in knowledge and

grace will be for your glory, and the trials I must endure are for my personal sanctification. Amen
