Spirit Hills cra s the highest quality of food pairing wines with
local ingredients and a Alberta Rocky Mountain iden ty. Unlike
tradi onal meads, a good quality food‐pairing honey wine has
a similar acidity and PH than grape wine. It also has body, com‐
plexity, structure and length. The Spirit Hills honey wines offer
all that in a well balanced way with a lingering velvety smooth
finish. They are served in fine dining restaurants in Canada,
Japan and Europe. The winemakers at Spirit Hills layer the different flavour elements into the wine by choosing local ingredients
like rosehips or black currants for acidity, wildflower honey for structure and oak or flowers in the finish. Spirit Hills honey wines
are simply: One of a Kind!
"The way Spirit Hills manages to cra such structure and balance with flowers, honey and berries is impressive.”
