Halibut has been an important food source to the original
Restaurant (located in the Riverstone Marketplace in Camas) or
meal with a local Yakima Valley wine followed by a seasonal fruit
ROOTS SEARED HALIBUT WITH WALLA WALLA SPRINGONIONS, FAVA BEANS AND SHIITAKE MUSHROOMS
Ingredients:4 pieces of fresh Alaskan Halibut Salt/Pepper to taste 2 T grape seed oil 2 Walla Walla spring onions/chopped (reserve green tops) 1 cup Fava Beans/blanched and peeled2 Shiitake mushrooms/chopped 3⁄4 cup chicken stock 1 t garlic/�nely chopped 2 T butter1 T tarragon 1 t lemon juice White rice - cooked
In a good sauté pan, add grape seed oil over high heat. Season halibut with salt/pepper and add to hot pan. Sear each side approximately 3-4 minutes, depending on thickness.
In a separate sauté pan, sauté garlic, chopped Walla Walla onions, fava beans and chopped shiitake mushrooms. Add chicken stock and reduce by half. Add butter, tarragon, lemon juice and season with salt and pepper.
To serve: Place rice in the middle of plate; place halibut on top of rice; spoon the onion/fava bean sauce evenly over the halibut. Chop the onion green tops �nely and sprinkle over the entire dish. Serve and enjoy!
