Ingredients (Masala Mix 1) 6-7 whole red Kashmiri chillies ¼ tsp fenugreek seeds 1½ Tbsp coriander seeds ½ tsp of mustard seeds Ingredients (Masala Mix 2) ½ tsp cumin seeds 4-5 garlic cloves Ingredients (Dish) 2 Tbls vegetable oil 2-3 red onions, chopped 1 (1 kg) chicken, marinated with salt and turmeric 7-8 curry leaves 3 Tbsp tamarind water (the water left after washing tamarind paste) 3-4 Tbsp freshly grated coconut A small handful of chopped coriander leaves, to garnish 2 green bird’s eye chilies, slit, to garnish Instructions Heat a pan with the oil. Add the onions (leave a little bit for later). Cook for 8-9 minutes, until brown. Add Masala Mix 1 and the marinated chicken. Cook for 10-15 minutes until the chicken is almost cooked. Tear the curry leaves and add. Also add Masala mix 2. After a few minutes, add the tamarind water and remainder of the chopped onions. Cook for 5-6 minutes (add a little water if too dry) Add the freshly grated coconut and cook for 5-6 minutes. Garnish with the chopped coriander leaves and the green chillies.
