Dear Members,Spring is coming to a close and it’s almost time for summer at Innisbrook. Let me start by wishing all of the moms a very happy Mother’s Day. May brings us lots of exciting and fun family activities. We’re offering plenty of ways to celebrate mom at Innisbrook – from a Mother’s Day brunch buffet in Inverness Hall to dinner at Packard’s. Don’t forget to pamper mom with the Mother’s Day Take 5 Ritual package at the Indaba Spa.

Innisbrook will have lots of other exciting activities happening in May. Celebrate Cinco de Mayo at the Loch Ness pool with fun activities that include a dance party and a swing at the piñata. Make a splash for Memorial Day with lots of fun activities for the family, from a game of capture the flag to a sand castle contest.

We’ve officially started enhancements to our Copperhead Course. The six-month restoration process ends in October. Our three other courses will remain open while Copperhead undergoes its enhancements.

From the Desk of the Director:I’d like to wish all our seasonal members a safe return to their summer homes and look forward to their return in the fall. It’s been an exciting winter with the announcement of the Copperhead restoration project (set to begin on Monday, May 4) and the crowning of Jordan Spieth as our 2015 Valspar Champion. Jordan continues to be a force on the PGA Tour, winning his first green jacket, and we couldn’t be prouder to call him our Champion!

Phase 2 on the driving range will begin on Monday, May 4 as we will have a full time range attendant stationed at the range shed. This will allow us to better service and manage the driving range experience. Responsibilities will include, but limited to, enforcing our Innisbrook dress code, ensuring only members are hitting in the members’ section and upholding the presentation of the driving range and hitting stations. I’m very excited about this presence on the driving range and look forward to your feedback.

I will be providing pictures and updates on the Copperhead restoration project as the summer progresses. Other exciting projects in the coming months will be resurfacing the green on #14 of the North and #3 & #18 of the South golf course. The project will see half of the green being done at a time, to avoid the use of temporary greens. Member satisfaction and improving course conditions will continue to be our top priority now and into the future.

The Pro Shoot OutPerfect weather and a great Member turnout made for a successful Pro Shoot Out on Monday, April 6. The event raised $6,000 for the Innisbrook Associate Scholarship Fund thanks to the generous donations made by Innisbrook Members and matching funds from Dr. Ron Avis and Dick Ferreira.

Seven of Innisbrook’s Golf Professionals participated in the Shoot out, Bobby Barnes, Dawn Mercer, Kyaw Htet, Josh Trapp, Don Porter, Rhett Simpson and James Pittman. In the end, teams James & Josh, Kyaw & (Member) Nic Wahl and Don & Rhett each won 2 skins.

Due to the success and popularity of the Pro Shoot Out, another is being planned for spring of 2016.

3. Men will play from the Green tee boxes at each course. If your age plus handicap is 80 or higher you can play from the White tees.

4. USGA Section 3-5 will apply. Quotas will be adjusted for players competing from different sets of tees.

5. 100% of prize money will be paid out each week.

6. There will be an optional $10 GROSS skins game each week.

Mojo Marinade and Yellow RiceLiving in the Tampa Bay Region, we are lucky to have some great flavors from other parts of the world that we are known for. My favorite food item from Tampa Bay is Mojo. It is a versatile marinade that can be used on almost anything, but works best with pork and chicken. Nothing goes better as a side dish with Mojo than Yellow Rice, so you get two for one this month.

These recipes will be used on May 3 when I cook for Celebrity Chef Robert Ervine for a charity event in Orlando called the Gourmet Soiree that he will be judging. Because I am the only Chef representing this area, I wanted to share our local flavor.

Mojo Marinade • Lemon Juice – 2 Ounces• Lime Juice – 2 Ounces• Fresh Oranges (Squeezed) – 2 Each• Olive Oil – 12 Ounces

• Fresh Garlic (Chopped) – 6 Cloves• Fresh Cilantro (Chopped) – ½ Bunch• Cumin – 1 Teaspoon• White Sugar– ¼ Cup

• Red Vinegar – 6 Ounces• Granulated Garlic – 2 Tablespoons• Red Chili Flakes – ½ Teaspoon• Salt & Black Pepper – To Taste

Cooking Method1. Mix all ingredients except Oil, Salt and Black Pepper with wire whip2. After ingredients are incorporated slowly add Oil while whipping3. After marinade has been mixed, check seasoning and add Salt and Pepper as desired4. Refrigerate after use and can be held for up to 4 weeks

Yellow Rice

Cooking Method1. Sauté Shallots in Butter with Bay Leaf (do not brown)2. Add Saffron, Turmeric, Rice and coat with Butter3. Add Chicken Stock4. Stir to incorporate all ingredients, cover and cook at medium heat 5. Cook for 20-25 minutes, until rice is tender 6. Garnish with Green Onions

Certified in CPR and First Aid, we provide a safe yet exciting and educational camp experience while you remain confident in their safety and well-being.

Camp Nessie headquartersCamp is located on the second level of the Tennis and Recreation Center, but that is just the beginning! We utilize a variety of venues throughout the resort including educational nature trails, miniature golf course, basketball courts, playground, volleyball courts and more, including the legendary Loch Ness Pool and its 2 winding waterslides*.*Must be a minimum 42” tall to ride waterslides with signed waiver

What To bring To CampTo make sure campers get the most out of their day, please send children with swimwear and proper sunscreen (30+spf recommended). Towels are provided. Active shoes are recommended for playtime activities and a change of shoes or sandals can be brought for pool time.

Typical Camp Session**

We begin each day with morning welcome icebreaker games, getting to know counselors and campers. It’s always a full and fun schedule of crafts, games and learning. Then it’s time to head outdoors for adventure on our nature trail, mini golf course and playground. After getting cleaned up, we enjoy a fresh and delicious lunch as a group. After lunch, we begin the afternoon with a tram ride to the Loch Ness Pool for pool games, activities, sliding and swimming. Back at camp, it’s time for some indoor active games, including racquetball, wallyball and more.

** Activities may vary depending on age, abilities and skill levels of all participants. Indoor programs are always available to keep children active and engaged in case of inclement weather.

allergies and asthma Please be sure to note ANY allergies, asthma, or special conditions on the camp forms when registering. Note: no peanut products are used in the Camp Nessie facility.

Weather In the case of inclement weather, options to move indoors will be arranged. We reserve the right to close the slide pool and/or the main pool for safety during a thunderstorm or lightning storm, which will remain closed for 30 minutes minimum from the last audible thunder or last lightning strike within a 5-mile radius.

Written and photographed by Golf Operations Dave NoelSince last December Sandhill cranes have decided to take up residence at Innisbrook. The voice of the sandhill crane is one of the most distinctive bird sounds in Florida. This “call of the wild” has been described as a bugling or trumpeting sound, and can be heard for several miles. Florida sandhill cranes stay with the same mate for several years and young sandhills stay with their parents until they are about ten months old. Like their endangered relatives the whooping cranes, sandhills live to be older than most birds. In fact, some sandhill cranes live up to twenty years. Sandhill cranes are omnivorous, meaning they eat a variety of plant and animal matter. Some of their favorite meal items include seeds, plant tubers, grains, berries, insects, earthworms, mice, snakes, lizards, frogs and crayfish. Unlike other wading birds, such as herons, sandhill cranes do not “fish.” These cranes stand at almost four feet high and have a wingspan of seven feet, which earns them the name “Big Bird”.
