DEVELOPMENT OF A FAST AND RELIABLE FRYING OIL/FAT SENSOR FOR

THE FOOD SERVICE INDUSTRY

(OILFAT)

During frying, the frying oil undergoes hundreds of

chemical reactions giving rise to about 400 various

chemical compounds. Many of the degradation products

formed are toxic to human health. Therefore, frying oils

should be discarded when they have been used for a

certain period of time.

This project developed an on-line frying oil/fat sensor

which measures the quality of frying oils/fats and

determines the time to discard the oil/fat.

Viscosity proved to be an adequate method of differentiating between

acceptable and unacceptable frying media. A sensor was developed based

on viscosity.

DEVELOPMENT OF AN ULTRASONIC RHEOLOGICAL SENSOR FOR NON-

INVASIVE AND NON-DESTRUCTIVE EVALUATION OF DOUGH

(RHEODOUGH)

The objective of this project was to provide SME millers with

a rapid means of detecting major flour defects and poor

dough quality.

A non-invasive, non-destructive sensor was developed using

ultrasound technology.

Dough waste was reduced by at least 80% and the

requirement for skilled operators for manual assessment of

dough was minimised.

EPISOS

Objectives:

Epilepsy affects about 50 million people worldwide and 6 million in Europe.

In order to reduce the number of deaths caused by absence of aid during

tonic-clonic epileptic seizures, it is very important to continuously monitor

the epileptic patient’s state.

FP7– Research for the Benefit of SMEs

EPISOS

The EpiSOS system is an intelligent bracelet that will allow detection of tonic-

clonic epilectic seizures.

The system integrates the following devices:

1. a monitoring device to evaluate an epileptic event;

2. a sensor for detecting patient falls and seizures;

3. a Bluetooth module to communicate with a mobile phone.

In the event of a seizure, the device will send a signal to a smartphone

that will notify a patient’s relative or caretaker with the coordinates of

the patient by SMS.

To determine the patient’s location, both the GPS and GSM modules of

the smartphone could be used.
