NARACOORTE HOTEL / MOTEL
JOB DESCRIPTION
Position : Duty Manager
Position objectives: To assist the Managing Director and Assistant Manager in the efficient
operation of the Naracoorte Hotel Motel at all times.
To specifically work in the operations of the Food & Beverage, Gaming, &
Administration departments helping ensure each department runs
efficiently, effectively and that the highest standards are maintained.
To further improve (specifically) the profitability of the Food & Beverage
Departments by driving sales.
Key responsibilities: Hands on and duty management of Food & Beverage, and Administration
departments. Specifically organisation and management of conferences &
functions. Support to the Managing Director & Assistant Manager in all
other hotel operations.
Bottle Shop
• Assist with ordering and stock control of product through the Bottle
shop
• Instigation of promotional ideas to drive Sales driving of sales
through the bottle shop
• Assist management of monies through the Bottle shop tavern
including daily balancing and reconciling of any over/unders
Billy Macs/Restaurant/Functions
• Assist with ordering of all beverage stock requirements through the
Food & Beverage outlets
• Assist rostering of all F&B staff to efficiently and effectively service
all requirements outlet requirements
• Assist with managing, motivating and mentoring all F&B staff to
ensure quality service is received by all Hotel guests at all times
• Ensure all employees work in a safe environment, and adhere to
OH&S policies outlined in the company policy document.
• Initiate in conjunction with the Assistant Manager & Managing
Director promotional ideas for the restaurant and tavern to drive
sales
• Assist in day to day management of monies through the outlets
including daily balancing and reconciling of any over/unders
• Ensuring all employees are informed of any changes to liquor
licensing or gaming legislation
• Maintaining adequate stock in Bistro Bar and communicating with
Assistant Manager when orders are required.
Gaming Room/ATM
• Assist in reporting of Gaming revenue as legislated and clearing of
monies daily.
• Assist in management of monies for the gaming room
• Assistance with daily balancing and maintenance of the ATM as
directed by the Managing Director or Assistant Manager.
Reporting
• Any reporting as requested by Managing Director, Assistant
Manager or Country Clubs Management
.
Organisational
Relationship: Reporting directly to the Managing Director and Assistant Manager, or
Country Clubs Hotels & Resorts Management as directed.
Assist in the management of all food & Beverage staff.
Working with the Kitchen, Housekeeping and maintenance staff
Extent of Authority : Responsible to help in the efficient management of the food & beverage
staff at the Hotel.
Authority and expectation to use your initiative in relation to resolving
guest issues and consulting the Managing Director for the authorisation to
issue refunds where appropriate.
Authority required prior to the booking or commitment for entertainment or
advertising in the Food & Beverage outlets.
