What are the “Dog Days of Summer” and how did they get that name? These days span from July 3 to August 11 every year and tend to have the hottest temperatures of the summer in the northern hemisphere . However, the “dog” reference has less to do with canines and more to do with Astronomy, ancient Rome and their perception of what they saw in the skies above . This span of weeks finds the sun rising and setting with the star called Sirius (sometimes called the Dog Star) which is a part of the constellation

known as Canis Major or the Greater Dog . Sirius perfectly aligns with the sun on July 23 and is so bright during this time that ancient Romans thought that it added to the sun’s warmth, making the longer days hotter . They called these days, “dies caniculares” or “dog days,” in reference to the Dog Star’s supposed part in the summer heat and they run 20 days before and 20 days after the perfect alignment of Sirius with the Sun . Of course, Sirius is nowhere near as close to the Earth as the sun is, so the heat that fills these days isn’t related to the star’s positioning in the sky, but because the tilt of the Earth during this time period brings the northern hemisphere in more direct contact with the sun’s rays . While the Dog Days of Summer don’t really belong to them, dogs, and humans, might welcome the warmer weather after the colder and cooler temps of Winter and Spring . However, by the time Sirius and the sun start hanging out in the sky, everyone is ready for them to stop playing fetch .

Rosemary Ranch Chicken Kabobs

Prep: 50 m • Cook: 10 m • Ready In 1 hour“This rosemary ranch chicken recipe is so delicious, tender, and juicy the chicken will melt in your mouth. Even the most picky eater will be begging for the last piece.”

Ingredients:• 1/2 cup olive oil• 1/2 cup ranch dressing• 3 tablespoons Worcestershire sauce• 1 tablespoon minced fresh rosemary• 2 teaspoons salt• 1 teaspoon lemon juice• 1 teaspoon white vinegar• 1/4 teaspoon ground black pepper, or to taste

• 1 tablespoon white sugar, or to taste (optional)

• 5 skinless, boneless chicken breast halves - cut into 1 inch cubes Directions: In a medium bowl, stir together the olive oil, ranch dressing, Worcestershire sauce, rosemary, salt, lemon juice, white vinegar, pepper, and sugar . Let stand for 5 minutes . Place chicken in the bowl, and stir to coat with the marinade . Cover and refrigerate for 30 minutes .

Preheat the grill for medium-high heat . Thread chicken onto skewers and discard marinade .

Lightly oil the grill grate . Grill skewers for 8 to 12 minutes, or until the chicken is no longer pink in the center, and the juices run clear .

Chef John’s Blueberry ClafoutisPrep: Prep10 m • Cook: 25 m • Ready In: 35 m

“This recipe is a great way to enjoy fresh, summer fruit and this technique really lets it play the starring role. I hope you give it a try soon.”

Ingredients:• 1 pint fresh blueberries• 1 1/4 cups milk• 2/3 cup white sugar• 1/2 cup all-purpose flour• 3 large eggs• 1 tablespoon vanilla extract• 1 pinch salt

Directions: Preheat oven to 425 degrees F (220 degrees C) . Generously butter a 2 1/2-quart baking dish .

Pour blueberries into prepared baking dish .

Blend milk, sugar, flour, eggs, vanilla extract, and salt in a blender until batter is smooth . Pour batter over blueberries and gently shake to remove any air bubbles .

Bake in the preheated oven until puffed and center is set, 25 to 30 minutes . Cool until clafoutis deflates and is just warm .

Tax planning in its simplest form is estimating the amount of tax due for the current year and making estimated payments throughout the year, either through payroll withholding, or by paying quarterly estimated taxes for the self-employed . The next level of tax planning involves having a tax professional suggest methods to help possibly reduce a tax bill at the end of the year . In it’s advanced form, tax planning involves estimating a tax bill, making suggestions on how to reduce the bill, providing guidance through the process or connecting their client with the right people to reduce the bill and then acting as an accountability coach to ensure that the suggestions are being followed . Tax professionals should be re-evaluating their client’s situation at various times throughout the year .; no one likes surprises during tax season .

As a reminder, the Tax Cuts and Jobs Act (TCJA) was passed in December 2017 with the intent to simplify the tax code . It has been said that taxes can be filed on a postcard,; however, many tax professionals don’t believe it will be as simple as advertised because of the forms that may be required to enter data onto the IRS Form 1040 postcard .

Given the uncertainties, tax planning should be more of a priority than ever before, and not just for business owners . Changes to the tax return and the tax withholding tables mean that individuals should be evaluating withholdings from their paychecks to ensure that the proper amounts are withheld . Changes to the tax code may affect deductions taken in the past that may not be available now or in the future . There aren’t too many things in life that are more devastating to a family budget than being hit with a substantial tax bill in the beginning of the year and right after the holidays . Furthermore, small businesses should be aware that the laws have changed for all entities . Certain pass through entities may now be eligible for the new Section 199A deduction that was added to the tax code . It could potentially be a very valuable deduction to business owners, but it is very complicated and has many nuances built into it . Choosing the right business entity will also certainly need to be evaluated with the new laws .

Tax planning is a vital part of a business strategy and individual budget . If not done correctly, it could end up being very costly during tax season . The last half of the year is an important time of year to implement planning strategies . Business owners should be making appointments with a tax professional to find out how to legally reduce a tax bill to the lowest possible amount . There are many legal strategies available, and it is possible to reduce a tax bill to $1.00.

JULY DINOSAUR MAZEWhat dinosaur was, for many years, mistakenly called a Brontosaurus?In 1877, a paleontologist named Othniel Charles Marsh (1831-1899) discovered a new species of dinosaur which he named Apatosaurus, meaning “deceptive lizard.” Two years later, he discovered what he believed to be another species of dinosaur. He named this one Brontosaurus, meaning “thunder lizard.” When later paleontologists examined the two fossils, however, they determined that both skeletons belonged to the same animal class, one being an adult and one being a juvenile. Since the Apatosaurus was discovered and named first, it became the official name.

Compared to a lot of countries around the world, the United States is still young at 242 years old this July 4th . Our freedom and independence were secured through a hard-fought victory against the British Empire . Born from that fight and from the evolution of our independence years and years after were symbols that still represent American freedom and inspire the fight for freedom around the world .

INDEPENDENCE HALL – The birthplace of America, Independence Hall has a storied history that began in 1753 when it was completed and stretched well into the twentieth century before it became a World Heritage Site . It started out as the colonial legislature before it became the Pennsylvania State House for the Province of Pennsylvania . This is where the Second Continental Congress met, the Declaration of Independence was signed and the site of the Constitutional Convention . In the twentieth Century, it was the site of the League to Enforce Peace that became the League of Nations which was the predecessor of the United Nations . DECLARATION OF INDEPENDENCE – One of the most important documents, if not THE most important document in American history, the the life of the Declaration of Independence actually began in June of 1776 when, on June 7, Richard Henry Lee made decreed that, “these united colonies are and of right ought to be free and independent states,” during a meeting of the Continental Congress . A committee was appointed to create a document that would explain why independence was being sought from Britain . Thomas Jefferson began the arduous task on June 11 of the same year . Not even a month later, the Continental Congress voted to declare independence on July 2 and two days later the Declaration of Independence was ratified . 200 copies were made by John Dunlap, the official printer of Congress and these copies, called the Dunlap Broadsides, were sent throughout the

LIBERTY BELL – With the inscription, “Proclaim LIBERTY throughout all the Land unto all the Inhabitants thereof Lev . XXV X,” the Liberty Bell has stood as a symbol of the United States for over 200 years . It was ordered to be made for the Pennsylvania State House by Isaac Norris . It was believed that he chose this inscription to symbolize the 50th anniversary of Pennsylvanians being granted religious freedom and self-government by William Penn . Ironically; this was not an inspiration to those who fought during the war for independence, but to abolitionists decades later seeking an end to slavery . The bell actually cracked on the first test ring and was melted down and recast by John Pass and John Stowe . For nine decades, it rang out to call people to assemble until it cracked again where a narrow split had appeared around 1840 . A repair

was made but was ineffective and the crack that runs through “Liberty” was what finally silenced it . The use of it as a national symbol began in the 1800s when the states were headed for a civil war over state rights and in the subsequent years after the Civil War, it was used to remind Americans of a time when they were united as one people to show that it could return to that . DON’T TREAD ON ME FLAG – The “Gadsden Flag” was designed in 1775 by Christopher Gadsden, a politician and American general and was used by the Continental Marines as one of their earliest motto flags . As colonists began to think of themselves more as members of their own communities over colonists of the British Empire, symbols expressing their connection to the lands they lived in such as the rattlesnake (the timber rattlesnake called the footprint of the colonies home) and the bald eagle, became more and more popular . Gadsden created the flag on a yellow background with the words “DON’T TREAD ON ME” inscribed below a coiled rattlesnake because it had become the symbol of the colonies . Colonel Gadsden, a member of the Continental Congress on behalf of South Carolina, was on the Marine committee . THE EVOLUTION OF THE STARS AND STRIPES – The first official flag of the United States of America actually contained the British flag . The Grand Union Flag has also been called the Continental Colors, the Congress Flag, the Cambridge Flag and the First Navy Ensign . Like the current flag, the Grand Union flag has 13 red and white stripes, but unlike the current flag, the British Union Flag stood in place of the white stars with the blue background . It was the colonist’s way of asserting their place as united colonies while showing allegiance to Britain . It was used during the Revolutionary War by American Continental Forces from 1776-1777 . The Flag Act of 1777, passed by the Second Continental Congress on June 14 (which is why Flag Day is this date), called for, “an American Flag” resolving that “the flag of the thirteen United States be thirteen stripes, alternate red and white; that the union be thirteen stars, white in a blue field, representing a new constellation .” The Flag Act of 1794 was signed into law on January 13, 1794 by President George Washington changed the flag to have 15 red and white stripes and 15 stars to include Vermont and Kentucky statehood . It was the Flag Act of 1818 that paved the way for the flag as it is known today .
