Karuta’s Ichiban DashiDashi broth is an essential component in Japanese cuisine. It is used in most dishes and soups to give them the base of the flavor. Ichiban Dashi is the Dashi broth of the best quality. Kombu, dried kelp, and Katsuobushi (dried bonito flakes) are the usualingredients but instead of bonito, we lavishly use dried young tuna flakes along withRishiri Kombu of the highest quality to create the best Ichiban Dashi that is mildbut yet rich in flavor and aroma.
