TREND ALERT: PRINTS ON GLASSPreviously popular in the commercial market, printed glass is making its way into homes with a huge range of applications — from outdoor showers to kitchen splashbacks. Printed glass is a truly unique way to personalise your kitchen or bathroom, as well as being durable and easy to clean.

IN THE KITCHEN WITH KATE BRACKS MasterChef 2011 winner Kate Bracks wowed the judges with her response to the “worst nightmare” challenge — a moist caramelised pumpkin cake with cinnamon mousse, maple bacon and candied walnuts

1 To make cinnamon mousse, put milk, cream, quills and ground cinnamon

in a saucepan and bring almost to the boil. Remove from heat and leave for 15 minutes to infuse. Discard quills.

2 Place egg yolks and half the sugar in a heatproof bowl over a pan of

simmering water (don’t let the bowl touch the water). Whisk for !ive minutes or until mixture holds a !igure-of-eight trail.

3 Soften gelatine in cold water for three minutes, then squeeze

out excess water. Stir into infused milk until dissolved. Whisk into egg mixture, then fold in crème fraîche.

4 Whisk egg whites to soft peaks, gradually beat in remaining

sugar and gently fold into egg mixture. Cover with plastic wrap and refrigerate for one hour or until set.

5 Meanwhile, to make cake, preheat oven to 180°C. Put pumpkin on paper-

lined oven tray, drizzle with combined butter and brown sugar and toss to coat. Bake for 30 minutes or until tender and caramelised. Cool, then purée until smooth.

6 Grease a 16"26cm slice pan and line with baking paper, overhanging the

long sides. Beat butter and 55g sugar with electric beaters until pale and !lu#y. Add eggs, one at a time, beating after each addition. Fold in pumpkin purée. Fold in !lour and walnuts until just incorporated. Spoon into pan; smooth surface. Bake for 30 minutes or until springy to touch.

7 Put remaining caster sugar and 250ml (1 cup) water in a saucepan over

medium heat. Stir until sugar has dissolved. Bring to the boil and cook for !ive minutes until syrupy. Combine 80ml (1/3 cup) sugar syrup with maple syrup and spoon over hot cake when removed from the oven.

8 To make spiced syrup, dry-fry spices over medium heat for two minutes or

until fragrant, then grind to a powder. Put in a saucepan with 80ml (1⁄3 cup) of the remaining sugar syrup and maple syrup and leave for !ive minutes to infuse. Strain.

9 To make maple bacon, preheat oven to 180°C. Brush prosciutto with maple

syrup and bake for !ive minutes between two sheets of baking paper, weighted down with an oven tray to keep it !lat.

10 To make candied walnuts, place a saucepan of remaining sugar

syrup over medium heat and cook for two minutes or until lightly golden. Remove from heat, add walnuts and toss to coat. Separate nuts on a sheet of baking paper and leave to cool and set.

11 Serve cake with maple bacon, mousse, candied walnuts

and a jug of spiced syrup.

PUMPKIN CAKE280g butternut pumpkin, peeled, seeded, cut into 3cm chunks50g butter, melted2 tbsp brown sugar125g unsalted butter275g (11/4 cups) caster sugar2 eggs225g (1" cups) self-raising #our50g (" cup) walnut halves1 tbsp maple syrup

SPICED SYRUP1 cinnamon quill1 star anise" tsp cumin seeds1 tbsp maple syrup

MAPLE BACON6 slices prosciutto, thinly sliced60ml (! cup) maple syrup

KAMBROOK RECIPERosewater Meringues With Fairy Floss

MethodPreheat oven to 120°C. Spray two oven trays with cooking oil. Use baking paper to line the oven trays.

Place the egg whites in a small bowl and beat with an electric mixer on

high speed until soft peaks form. Use a tablespoon to gradually add the sugar, one spoonful at a time, waiting for each spoonful of sugar to dissolve before adding the next. Fold in the rosewater.

Use a tablespoon to drop heaped spoonfuls of meringue mixture onto the trays, about 5cm apart. Put the trays into the oven and bake for about one hour.

Turn o! the oven. Leave the meringues in the oven to cool down with the oven door slightly open.

Meanwhile, beat the cream in a small bowl with an electric mixer until soft peaks form.

When the meringues are cool, top with the cream and fairy "loss.

How will your product design change the industry?I try to give my designs an extra touch of beauty, as I think designers should. Also, I enjoy developing innovative products and helping make the industrial world a bit more attractive.

I made this table seamless with rounded edges that are not only friendly on the eye but also to the touch, which is what most people do when they see the table — they want to pet it!

Plus it’s easy to clean, with no seams for breadcrumbs to get stuck in.

What inspires your design concepts?Nature, of course. There’s no man-made product as well designed and manufactured as you’ll !ind in nature.

Is your design sustainable in any way?My design is sustainable because it’s locally produced from a material that is long-lasting, repairable and can be reused and recreated into a new product to avoid waste. Staron has the ISO 14001 tick and is recognised by EcoSpeci!ier.

What do you see as the key colours and materials for kitchen design in 2012?I think all shades of white are good as a base for a kitchen, which can be dressed with any happy colour, from apple green to vibrant orange. I prefer natural materials, such as local hardwoods, and natural textiles, like hemp and linen, combined with the strong modern lines of stainless steel and Staron.

Wilma grew up on a small farm in the Netherlands where, with little else to occupy her, she submerged herself in a passion for drawing. She later studied at The Design Academy, a highly prestigious design school in Eindhoven, and moved to Australia in 2003 to start her own business, Deseos Design. Wilma has consistently won awards for her outstanding work and if her latest creation is any indication, she will undoubtedly continue to do so.

When the owners of this gorgeous Sydney home embarked on a total house renovation, they began with a blank canvas for the kitchen. The brief to designer Sue Terley from A-

Plan Kitchens was to create a simple but elegant kitchen that would !it seamlessly into a large living/dining space while accommodating a pantry and laundry behind.

The !inished result exceeded the brief — it’s a stunning example of Australia’s indoor/outdoor lifestyle.

The new kitchen is the perfect space to entertain family and friends; it has every amenity for the preparation of daily meals or the demands of the most extravagant dinner party and it draws the eye to an inviting outdoor area featuring a sparkling pool, patio with barbecue and beautiful landscaped garden.

In keeping with the brief, the L-shaped design with island bench provides ample space for food preparation and a breakfast bar to seat three. A striking feature is the 70mm Calacatta marble benchtop on all surface areas while the

use of Laminex veneer in Allure Oak on the sides and back of the island provides a stylish contrast. Three elegant ZTwo lighting pendants above the island add a masterful !inishing touch.

The storage demands of the household are more than met by 1200mm-wide underbench drawers, !loor-to-ceiling cupboards in the kitchen and adjoining laundry and open shelves in the walk-in pantry. All appliances are fully integrated with easy access to the dishwasher, cooktop, microwave and fridge.

Far from a blank canvas, the new kitchen has become the focal point of the house. It’s a place to share breakfast with the family, to rustle up a snack on the way to the pool and to entertain in style throughout the year. KBQ

When you’re staying in a sumptuous !ive-star retreat, there’s a certain level of comfort and style you expect to enjoy. That’s why designer Rick Bzowy of Bzowy Architecture went all out

to create a private oasis when designing and building The Lair, new luxurious self-contained accommodation overlooking Great Oyster Bay along Tasmania’s east coast.

This coastal getaway features two identical bedroom suites, each with its own spacious bathroom where guests can rest, relax and take in the wonderful views. Consisting of two rooms — one with a freestanding Apaiser stone bathtub, walk-in shower, bidet and toilet; the other a powder room with twin vanities, a makeup bench and wardrobes — the spacious bathing areas !low out to a large deck that o"ers ocean views. Elevated automated awning windows have also been incorporated into the design to provide views of the lush forest surroundings, bringing the outside in.

With a desire to create a haven from the outside world, selecting the perfect bathware for this space was of the utmost importance. The

Elegant and opulent, this tub instantly catches the eye when entering the room. Although the space is ultra-modern in style, the bath’s smooth, !lowing lines, oval curves and neutral tones soften the bathroom’s sleek style. The organic look of the stone composite bath also complements the natural beauty of the surrounding environment.A generous walk-in shower with a frameless shower screen, grey porcelain tiling and a custom-made vanity add to this bathroom’s luxurious feel. Keeping in mind the comfort and wellbeing of guests, under!loor and in-ceiling heating was incorporated into the bathrooms, while lighting solutions, including vanity lights and LED feature lighting, softly illuminate the space when the sun goes down.
