Banana & Carrot M uffinsIngredients1 cup self-raising flour1 banana, mashed1 egg1/3 cup full cream milk2 tbs honey1 carrot, grated1 carrot, grated

M ethod1. Preheat oven to 180ºc, line a 6-hole, 1/3-cup 1. Preheat oven to 180ºc, line a 6-hole, 1/3-cup capacity muffin tin with paper cases. Place 1 cup self-raising flour in a large bowl. Combine 1 banana, mashed with 1 egg, 1/3 cup milk and 2 tbs honey. Add to flour mixture with 1 grated carrot and stir to combine. Divide between cases. Bake for 15 minutes or until golden. Cool. Pack 1 mumuffin into lunch box.

Tip: grated veg is easily hidden in these muffins. M ake a batch on the weekend and freeze.
