Raicilla comes from the state of Jalisco. The agave are cooked in

above ground ovens.

Produced similarly to mezcal, but made from a plant that is a “cousin” of agave.

Bacanora comes from the state of Sonora. It can be made only from Agave Angustifolia, and is roasted

in underground earthen pits.
