only Bimbo, Sabritas and PEMEX have entered the country so completely. With a conservative estimate of three employees on average Michoacanas shops could be giving about 30,000 Mexicans work.

Some controversy in part of the process...All thanks to the tenacity of a group of men without much education or business experience farmers or ranchers who became men of ice cream. The origin of the Michoacan is shrouded in controversy. The first names that stand out in the history of La Michoacana Popsicles are Mr. Rafael Malfavon, Agustín Andrade and Ignacio Alcazar claim to be the first to open ice cream outlets in the capital.Their premises were small and humble only offered some palettes of flavors, soft and sweet, but it was the only means of subsistence for themselves and their families because it allowed them to succeed, soon new branches were opened in Mexico City. Agustin Andrade got to add 177 storesSoon they were joined in the City of Mexico the brothers Luis and Ignacio Alcazar who became the biggest promoters of this business since returned to Tocumbo and offered to lend money to people interested in the ice cream business to an interest rate 2% per month, in a couple of years, the debt was liquidated with profits of the business and the new trader would have his own business. The financing model of the Alcázar brothers allowed them to have their own business many tocumbences, always manages its own shop, each in their own way, there is no central accounting or marketing or strategic plans and ice cream is produce manually at each shop. By the mid-50s some men from Tocumbo, liked the idea of owning a shop in the city of Mexico rather to travel to the US to work. This is how a long chain was formed as men and women were leaving to the capital from Tocumbo.

In the early years the shops were simple and dirty places, and was manufactured in molds prone to rusting, sheet metal that often produced deformed popsicles.

Until 1959 Mr. Rafael Abarca rodeo native farming community near Tocumbo put his own premises in the new colony Santa Maria in the city of Mexico, previously he worked in the United StatesMr. Rafael Abarca became ice cream man and the concept of the Paleterias La Michoacana entered its second phase. Gradually introduced a higher level of quality which is then copied by others, Mr. Valdovinos who work in one of the shops Mr. Rafael Abarca was the first to use stainless steel molds, the first cooling exhibitors were also introduced for people could see and choose what they wanted to buy.New flavors of ice cream were introduced and began to experiment with a wide range of tropical fruits like guava, mango, papaya, coconut, banana and other new flavors of each region. Besides selling soft drinks was replaced by "Aguas Frescas", natural juice water which offered a higher profit margin bottled drinks could well

control the quality and life of the product.

In the late 60s and during the 70s hundreds of shops were opened, unable to give an exact figure, The Michoacan Ice Cream business grew steadily strengthened and settled.

In part this was due to the habit of tocumbenses financed each other and with the help of the Alcázar brothers. The banks had foreclosed on defaulted loans, but if the credit is based on close friendships, family ties and trust, during economic depressions, the loans were forgiven or postponed, and rarely debts took ages to be paid .Finally in the 80s it grew exponentially, tocumbences groups formed societies and peoples sought a corner or attractive place to install more and more shops. While thousands of food businesses struggled and disappeared during the crisis this time.In addition to teaching people wanting to work elsewhere like from El Rodeo Tamazuchale Michoacan and San Luis Potosi."La Feria de la Paleta"The Popsicle Fair, began in 1989 as a way to raise money a church which was completed in 1991 and later for the celebrations of the Virgin of Guadalupe and at the end of the year to celebrate the achievements of the year and then return to a meeting each year in Tocumbo to be present at the Mass celebrated in honor of all paleteros, shop owners. In l990 Alejandro Andrade designed a logo for the Michoacan which is a little Indian with an ice cream and slogan that says "La Michoacana is natural" today his firm sells all paleteros, the prepared popsicles and other items need to run the firm with distinctive logo including the freezer, cans, cups, napkins, etc.

Since its inception, it brought the strength of the Michoacan product and is the production method that allows you to maintain the lowest costs of industry .Make ice cream and popsicles when you need it to ensure freshness and quality. In addition there is no need large of large fleets of freezer trucks to make deliveries because everything is produced and sold in the same place.Another strength is the unlimited flexibility of the concept of La Michoacana while ice cream franchises are constrained to sell what corporate orders, the paleteros of Michoacan can respond to local tastes, so franchises like Bing sell only certain Michoacanas many kinds of ice cream, also sell popcorn, nachos and pizzas desserts.Historically each owner manages and controls the business in their own way. There is no central accounting or marketing or strategic plans.Currently each franchise as Bing, Netherlands, Dolphin, Haagen Dazs, Baskin Robbins sells ice cream only certain types of ice cream. Michoacanas Ice Cream have diversified their market and now also sell popcorn dessert nachos, fries, and nachos flags and more. That's why there is no franchise or home business there is no central accounting, or marketing or strategic plans. That was how the Michoacanas were growing in number throughout Mexico and some parts of the EU. Although today have different names as the delights of Michoacan, Flor de Tocumbo , The Original Michoacana, New Michoacana La Michoacana and the gate etc.La Paleteria Michoacana now must change to continue to prosper, increase production and sales and the administration should be optimized if there is a general agreement among paleteros to maintain a certain quality corporate image and no longer independent and disunited. For this purpose it has tried to form an association of paleteros. One of the biggest challenges today is how La Michoacana modernize without losing the provincial character they value, their customers and keeping their prices low.La Michoacana succeeded by attracting the working class coming to the capital from other parts of the country, to that extent reflect the flourishing business process transformation of Mexico from a rural society to an urban society.Michoacan has retained its essence and traditional 100% natural flavors besides not being influenced by fashions or temporary flavors. credit to 2002 Revista Expansion.
