A Victorian ChristmasCanadian Style
A Victorian Christmas conjures up images from Dickens’s A Christmas Carol. As the spirits whisk us through the scenes we get
glimpses of the feasts and festivities of that era and when new Scrooge shouts at the shop keeper to hand him down the fattest goose, it ends up siz-zling and cracking on the Cratchit Christmas table.
The season of the Winter Solstice was a time of celebration in many of the old world religions and sacrifi ces meant a prosperous New Year. Many of the Christmas feasts or festivals evolved from those early ceremonies.
The harsh Canadian winters didn’t leave much for the immigrants and settlers to celebrate but the strong ties to their old roots and traditions in Europe or England brought the families together at Christmas time. Those early Canadian Christmas dinners were nothing like the gay parties they had experienced in their homeland.
Regardless of our nationality, our Christmas cel-ebrations have their roots in our family history. We take for granted the ease with which we prepare our Christmas dinner. One trip to the store can produce the turkey, the foil pan, boxes of stuffi ng and the cans of cranberry. No need to butcher the calf or pluck the bird and hang it to drain.
The meals were prepared from what was on hand and the food that adorned the Prairie Christmas table in no way resembled the fare that was served
in their homeland. Though we don’t see these delicacies any more, old timers tell us that fi sh fried in buffalo marrow, buffalo veal and beaver tail may have been a large part of the main course and the desserts would be pastries made from eggs fresh from the henhouse, honey from the bee hives, and wild berries preserved from the summer.
Early settlers in the 19th century prepared for the winter cold by slaughtering pigs, cattle and poultry so they didn’t have to be fed and cared for over the long harsh winters. As Christmas approached, the pioneers reminisce about bringing in meat stored in the ice house or the smoke house and vegetables or fruit being carried up from the root cellar where they had been stored since the autumn harvest.
When asked about their childhood Christmas, the old farmers start with a smile then begin to tell of family recipes that produced spicy sausages, head cheese or blood pudding. They would wash this feast down with homemade wines, started in the fall and just fermenting in time for the New Year. Most of these spirits were made from grains or fruits and there are interesting stories shared about parties on cold winter evenings where the guests were warmed with a fi ne blackberry or dandelion wine accompanied by a lively fi ddle.
Out on the 19th century west coast, there was a much greater infl uence from ‘the auld country.’ The Hudson’s Bay Company had lured many settlers from England, Scotland, Ireland and Wales. Many
of these folk brought their British traditions with them and some of these customs had been passed down from Roman times and refi ned or altered over the years.
The Victorian Vancouver Christmas was more likely to see a goose or turkey rather than a roast of beef or pork. The stuffi ng recipe would have been passed on from previous generations and include apples, spices, plums, raisins and other secret family ingredients.
No English Christmas dinner would be complete without a Christmas pudding or a plum pud-ding placed as a centerpiece on the large wooden family table. Dickens’s description says it all: “In half a minute, Mrs. Cratchit entered, fl ushed but smiling proudly, with the pudding, like a speckled cannon ball, so hard and fi rm and blazing in half a quartern of ignited brandy, and decorated with a Christmas holly stuck to the top.”
From those words the stage was set and many a wife’s Christmas dinner, then since, is judged by the glaze on the bird and fi rmness of the pudding.
Many of our current Christmas traditions had their beginnings in the Victorian era. Queen Victoria’s husband Prince Albert had grown up decorating Christmas trees in his German home. When he mar-ried Victoria he convinced her to continue the tra-dition. His fi rst Christmas tree was placed in Wind-sor Castle and decorated with hand blown glass balls, fruits, nuts, gingerbread, dolls, and candles
that were lit on Christmas Eve and Christmas day.
In Canada, the availability of fi r and pine trees meant that the early settlers could cut a tree of any size and decorate it with and ‘anything goes’ style combining old and new world decorations. Com-monly a mix of family heirlooms and ornaments carved by the family children would appear side by side.
One lady shares her childhood memory of listening to Christmas music on the radio as the signal faded in and out while they strung popcorn with a needle and thread and placed the strings on the branches. Cutting strips of coloured paper and pasting them into loops with a paste made from fl our and water made strings of homemade garland and kept kids busy on long winter evenings, while mince tarts cooled on the window sill.
Sit back with a mug of eggnog or a warm cup of wassail and do some research on your family tradi-tions and thank your ancestors for passing them along. Raise your glass in toast and in the words of Tiny Tim,
‘God bless us, everyone.’

L ong before 3D TVs, Iphones and virtual game machines, books were the most common form of household entertain-
ment. Jump back in time 100 years and it was the latest novel, not the Ipad, that everyone was clamoring to get their hands on. Books written during Victorian times and at the beginning of the 20th century were so imaginative and poignant, they still resonate today. Some of the most impor-tant authors in history like Mark Twain and Charles Dickens emerged out of this amazing literary era.
More than 100 years ago was a time of peace and prosperity throughout the Western World. While Gilbert and Sullivan was just breaking new enter-tainment ground in the theatre -- literature was still the most popular form of evening entertain-ment for the common family.
Where we gather around the TV for the evening, families in the early 1900s would gather around the table to read. Boys and men would pick up the latest Sherlock Holmes (1892) while such magical stories like Charles Dickens’ Christmas Carol (1843) were shared out loud.
It was a wonderful time to be a child as some of our best children’s stories came out of this era from Peter Pan (1901) and the Tale of Peter Rabbit (1902) to The Wonderful World of Oz by L Frank Branm (1900).
Here is a list of fi ve books that defi ned these times. Literature was at its fi nest hour and these timeless novels should be on everybody`s must-read list. Any of these classics make wonderful Christmas gifts for the avid reader. I have also listed three books (one on the current bestseller list) that are historical novels that let us time travel back to England and Canada circa 1900.
1(Can-Lit) Anne of Green Gables by Lucy Maud Montgomery became an overnight sensation
in 1908. Set in picturesque PEI , the story tells of orphan Anne’s misadventures in proper Avonlea. Loved by millions, this book has turned into several TV series and has brought tourists to PEI to visit Anne’s lush town of green gables.
2(U.S. – Lit) Adventures of Huckleberry Finn by Mark Twain is said to be `the Great American
novel. ` Published in 1885, it is a sequel to Twain’s hugely popular book, The Adventures of Tom Sawyer. Told through the voice of Huck, this novel takes you on the adventures of a simple boy, and his friend journeying the Mississippi. This seem-ingly simple tale ended up being a complex look at American society in the late 19th century.
3(British-Lit) Charles Dickens was the most im-portant author of Victorian times and arguably
still today, with millions of people bringing his clas-sic tale A Christmas Carol (1843) into their holiday
traditions every year. The most prolifi c author of the 19th century, Dickens is famous for his works of Oliver Twist, A Tale of Two Cities and Great Ex-pectations, to name a few. His work is an imagina-tive look at England’s rich and poor in his time.
4H G Wells is the founding father of science fi ction novels from his novel Time Machine,
which launched his career, to the Invisible Man and War of the Worlds. The Time Machine (1895) is the classic tale of time travel, propelling one man into a future world that follows Darwin`s `survival of the fi ttest` theory to a horrible conclusion. Interest-ingly, the future world he writes about is one where man favours technology over intellect.
5Dracula by Bram Stoker, fi rst published in 1897, was the world`s fi rst real introduction to
vampires. If only Stoker knew that his vampire from Transylvania would create a cult like obsession that has reached fever levels today. Currently, the Twilight series (now on big screen) has a massive following as does other blood sucking books made into TV series like True Blood and Vampire Diaries to name a few.
Travel back to Victorian times and the beginning of the 20th century with these more recent bestsellers that are already classics in their own right:
1Fall on Your Knees by Ann- Marie MacDonald is set in Cape Breton, Nova Scotia in the late
1800 to the early 1900s. This epic novel follows
the stories of four generations of a family and their often tragic and tormented attempts at love. Poetic prose and an addictive and tumultuous plot put this novel in a category of its own. You won`t be able to put this book down.
2The Forgotten Garden by Kate Morton is a fan-tastic journey back to Victorian times of castles
and gentlemen and women living in England`s grand manors with servants and secrets. The story develops when an American woman inherits a cot-tage set on the grounds of a great castle in Eng-land. Attached to this cottage is a forgotten garden which holds the secrets to the life and times of one of England`s greatest fairytale writers. This is great story telling. Morton followed up this bestseller with the Distant Hours, which has a similar plot design. The Distant Hours is a hit in book clubs and is on the current bestseller list.
3The Blind Assassin by Margaret Atwood follows the boom and bust of one Ontario family. The
plot follows the story of one woman‘s life pre-First World War to her sister‘s suicide in the 1930s. Now poor and 82, the old woman telling this story is living in the town her family‘s button business once dominated. Now the big factories that were thriving in the 1900s are empty shells, much like her life.

A Heritage Recipe
Trudy’s special honey spice Christmas cake is more than your average fl our, egg and water mix – this recipe has been in her husband’s
family for nearly 300 years.
“It’s not a very sweet cake,” Trudy said. “A lot of Canadians wouldn’t like it, but a lot of Europeans would.”
The recipe was fi rst started in Southern Germany, and travelled with the family to Russia during the reign of Catherine the Great in the late 1700’s. It was brought back to Germany during the Second World War and then to Canada shortly after.
“I’m not sure who originated it, but my mother-in-law learned it from her mother who learned it from her mother and so on,” Trudy said.
This recipe, which has been passed down from generation to generation by word of mouth, has survived two World Wars, the abolition of a Russian monarchy, a Communist revolution, a Great Depres-sion and even more. Sadly, Trudy is not sure how much longer its tradition will last.
“I’m probably the last one in the family who has that recipe who actually bakes it,” she said. “No one else seems to be interested.”
Trudy has been making this recipe for 50 years and has mastered it to perfection. In its essence, the dessert is a honey spice cake and a white cake put together.
The bottom layer is white dough with a teaspoon of lemon extract, the middle consists of fruit or
jam, and the top is a layer of dark cake. During the fi nal step the entire cake is then decorated again with the white dough.
Trudy says there are many things that make this cake very different from any contemporary recipes.
“Number one it’s not as sweet,” she said. “It’s dif-ferent because you have to boil the honey and put the spices in and then stir in the fl our. It has butter, sour cream, and the spice star anise, which was very hard to get when we fi rst came to Canada.”
The recipe is also not made with baking powder or yeast – it’s made with baking ammonia, which was a popular ingredient in German baking at the time when the recipe began.
“I bet you never smelt that before. You have a cold and you take a good sniff of that and you’ll be good,” Trudy joked.
She recommends that the cake is not eaten right away and instead left to sit for a week or too. This allows the strong taste of the baking ammonia to begin to dissipate and makes the cake taste much better to modern tongues.
It also freezes well and can be preserved until the next holiday season.
This Christmas try out a “new” old-fashioned recipe and experience the tastes of European Christmases of the past.

Honey Spice Christmas CakeThis recipe makes several cakesSpice Dough1 ½ cups honey - or 1 lb honey2 tbsp star anise or 1 tbsp each cinammon & clovesBring honey & spices to boil. Add about 1 cup fl our. Stir well and take off stove, add:½ lb butter1 tsp. lemon extract1 cup sugar1 cup sour cream6 eggs2 tbsp baking ammonia or 2 tbsp Hirschhorn salz (can be ordered at London Drugs or available at some delis)Mix with about 7 cups of fl our To make soft dough: Cover and place in fridge overnight or 2-3 daysWhite Dough½ lb butter1 cup sour cream
1 ½ cups sugar6 eggs2 tbsp baking ammonia mixed with 6 cups fl ourPlace in fridgeOther ingredientsJam (pectin/certo free) - apricot or plum - or your favouriteInstructionsRoll out white dough about ½” thick. Save some white dough for decorating*. Put in bottom of pan and make a bit of a rim. Mix jam with a bit of fl our to prevent it from becoming runny. Spread on white dough - not too much! Roll out the spice dough about ½” thick and place on top of jam layer seal sides - working quickly.To Decorate*Roll out white dough into rolls like double thick-ness of a pencil. Cut little bits to use or use long strings. Use your imagination. Before baking brush top with 2 egg whites beaten.Bake at 350° about 45 min. Instructions
In a bowl; take 2 dozen dried fi gs, a cup of warm water, and ½ cup of brandy.
Let them soak for an hour or so.
In a separate bowl; mix ½ cup of brandy and 1 cup of mascarpone cheese .Cream together.
Take fi gs out of bowl and pat dry.
Ever so gently roll between fi ngers so they are a little more pliable.
Fill pastry bag with small hole tip
and the mascarpone brandy mixture.
With a bamboo skewer or toothpick make a small hole in bottom of each fi g.
Push tip of piping bag into hole and gently squeeze mixture in till the fi gs look like little plump pears.
While fi gs are still moist on the out-side, dip fi gs into granulated sugar.
Chill in refrigerator.
Enjoy.

8th Annual Magic of
Christmas Parade& Langley’s Country Christmas
T here will be magic in the air in Langley this coming Saturday. On December 3rd the eighth annual Magic of Christmas
parade will make its way along the one-way street in Downtown Langley.
The call for participants went out early in Novem-ber and organizers report that there has been an almost overwhelming response. As a result the pa-rade will have lots of festive fl oats, marching bands, dance troupes, community groups and of course, it wouldn’t be a parade without horses. This year in celebration of the 8th annual parade all registrants received a brightly coloured commemorative Christ-mas ornament as an expression of thanks.
Again this year, the guests of honour will be Santa and Mrs. Claus. This popular pair will once more arrive in style. Last year, having heard about their plight of being without transportation, John & Ann Bowles of Rocking Horse Carriage and Wagon Rides stepped up to help. Santa and his Mrs will arrive once again nestled in the back of a 14 foot decorated carriage pulled by two sleek black and while draft horses.
Following the parade make it your plan to take in Country Christmas in Douglas Park. Langley City Parks and Recreation staff have outdone them-selves this year. Following the annual Christmas
Tree lighting in Douglas Park the park will come alive with the sounds of Christmas. Lots of outdoor entertainment has been planned and it will be a perfect way to get in the spirit of the holiday season.
Santa and Mrs. Claus have put this date on their calendar and so should you! The parade begins at

The excitement started on November 14th with the launch of the contest. The prize packages can be seen at Forever Yours Lingerie (20460 Fraser High-way) and will run until December 24th. The three
lucky winners will be drawn on January 2, 2012.
It’s easy to enter and the more often you shop the better your chances are to win. There’s no minimum purchase and you can enter as often as you like, but you do have to be 18 or older to qualify. Simply write your name, telephone number and the prize package of your choice on the back of your re-ceipt. There are 60 participating merchants this year and each
