Our grinder plates and knives are made to LEM’s stringent standards for hardness and

quality. Our stainless steel knives have been enhanced with a better fit, more balanced

weight and sharper blades. Regarding performance, our stainless steel plates and

knives last longer than carbon and are highly resistant to rust. Both types of plates are

hubless so they can be used on both sides. Change knife and plate at the same time for

Just grind and mix your surplus venison with some Backwoods™ Seasoning, load the Cannon barrel, and shoot yourstrips on to the dehydrator rack. Things to consider whenpurchasing a Stuffer:

Stuffers vary widely- Manual stuffers are low cost, low maintenance but

require additional effort and time tostuff each casing. Vertical and

Horizontal stuffers are typically geardriven, enabling you to stuff your

When you learn to make sausage, stuffcasings and use a smoker, there are no precise answers to every question. Like manyother things, there are basic guidelines to follow, but some things are learned onlythrough experience by trial and error.

If you want that great smoked flavor on your sausage without the hassle of the smoking process, here’s

your answer – Plastic casings with smoked flavor on the inside of the casings. Just stuff the casings as

usual, cook in the oven or smoker (without smoke) at 170°- 180° until the internal temperature of the

sausage reaches 165°. Casings are non-porous and inedible.

COLLAGEN ROUNDS—Non-EdibleUse these casings instead of natural casings to make ring bologna and liver sausage. Soak the

casings in cool water for 2-3 minutes before stuffing. As you stuff the casing it will automatically begin

to bend into a curve. Use the strings on the casings to tie the two ends together. Cook in

oven or smoker at 180° until the internal temperature of the bologna reaches 165°.

Place a pan of water in the oven or smoker to provide humidity during cooking. When

the internal temperature is reached, remove and place in cold water for 15 minutes to

prevent shriveling.
