We have established extensive on‐campus training that specifically focuses on the skills, methods, procedures and
services demanded by University-based operations. Attended by our wait staff, managers, event coordinators,
sales office personnel and culinary team members, instruction ensures that each employee understands his or her
role in every event and fulfill it with grace and professionalism. The curriculum is designed to make sure no step in
the chain of events is missed and no detail is overlooked.
We also engage our staff in monthly conference calls that cover a range of catering topics including food trends,

constitute a significant source of environmental
waste and negative impact to the campus
community. We at Smurti pride ourselves on being an
environmentally-friendly organization. We have
established extensive practices that support
sustainable solutions for every phase of the catering
process: from food procurement to preparation to
table settings. We can make these solutions available
to our clients with respect to budget, preferences and
ideology. Smurti sustainability solutions include:
Commitment to Sustainability in Catering
Going local: Minimizing travel miles typically results in a smaller carbon footprint. By buying local produce,
Smurti supports local farmers and thereby helps maintain regional agricultural production that in turn
connects urban areas to nearby farming communities. Smurti procurement standards meet or exceed
USDA and FDA guidelines.
Buying organic and fair-trade produce: Chemical products used in conventional farming are a major source of
pollutants in our waterways and have been proven to diminish soil quality over time. Organic farmers
deliver healthier, tastier food that does not harm our vulnerable environment.
Buying fresh: The nutrients in fresh, recently harvested food contains more nutrients in forms that are more
bio-available than nutrients in processed foods. And a lack of processing reduces the environmental
impact of food delivery.
Minimal waste, minimal footprint: We use reusable, compostable and recyclable dinnerware whenever
possible. While china dinnerware is preferred by most diners, it is not always practical or available for use
in a campus setting. We use reusable, recyclable or even compostable alternatives that handle well when
facilities are available in the area.
Including vegetarian choices: We recommend providing attractive, nutritious vegetarian and vegan options to
better serve the more diverse, health-aware populations on campus these days. Reduced meat
consumption also reduces the carbon footprint of the eating population.

Compostable dinnerware,
Unless you are planning to cook yourself, your choice of caterer will largely dictate whether or not you
can meet the above principles.
For this reason, we have compiled a list of questions to ask in order to understand the degree of our
alignment with the sustainability principles.
We encourage our customers and clients to inquire into our sustainability practices to ensure that we – or any
food service provider they work with – truly lives up to our promises.
Can U catering can offer a seasonal menu featuring locally grown ingredients?
Do U catering has local suppliers you could source these ingredients from?
Which ingredients can you procure locally, and how would you define ‘local’?
Can U catering can cater a meal using all or mostly certified organic ingredients?
Which ingredients are or are you not able to procure organically?
Do U catering have the means to confirm their certification?
Will you prepare all of the items you serve?
What will be frozen or purchased fresh?
Are you able to provide dietary information on the menu you serve?
Are you able to offer a healthier menu (e.g. lower in calories), either exclusively or as one option for an event?
What types of vegetarian menus can you offer?
Are the coffee, bananas, and/or chocolate you offer Fair Trade certified?
We offer the following suggestions to expand the reach of effective sustainability practices for your campus and university: Dinnerware Countless plastic plates and paper cups are disposed of at most college caterings every day. While
many students carry their own mugs and water bottles, which can be further encouraged via raffles
and other incentives at your events, it is not likely that the majority will begin carrying their own
plates and cutlery. Catering on china is a great option but is not always possible because either the
caterer cannot accommodate the need or the added expense is too great. Finger foods can reduce
the amount of dinnerware required but are not always suitable. This reality leaves compostable and recyclable dinnerware as the most feasible options. While
neither is comparable to reusable dinnerware, they are better options than conventional plastic
ware. Unfortunately, however, diners often dispose of recyclable and compostable dinnerware in
incorrect receptacles. So, to capitalize on the use of compostable and recyclable dinnerware, we
offer the following suggestions to our university campuses:
• If composting facilities are available, use only compostable dinnerware. If you are composting your
dinnerware, try to provide all dining accessories in compostable form, such as drinking cups and
utensils, to simplify the composting process for everyone.
• Properly label your receptacles to educate users and avoid confusion.
• Clearly announce your waste management plans so that diners will use it properly and gain
awareness of the issue and the methods to support it.
• Consider using ‘garbage monitors’ initially to assist in the success of this regimen to ensure
compliance and educate users.
• Make sure that those handling the waste after the event are aware of your regimen and
accommodate it.
Partnering With You to Expand Sustainability
Attending to the trail of food waste helps us reduce carbon footprint and sustain our environment. The first
step in eliminating food waste is planning carefully to avoid excess. For example, you can request RSVPs for
more accurate estimates of food to be consumed. Then, break down the food waste into two categories:
Pre and post-consumer.
Pre-consumer food waste (i.e. food that has not been on someone’s plate) may be a treasure to others, be
they busy grad students trying to save a buck or the less fortunate trying to make ends meet. Social media
outlets are a great way to attract a hungry crowd to your leftovers quickly. If you have large volumes of
leftovers, and especially if they are non-perishable, you may consider contacting a food bank to see if they
will accept your donation.
Post-consumer food leftovers constitute a major portion of waste stream. Composting is the best
alternative for their disposal but it may not be a practical or supported campus- wide. If you plan ahead, you
may access the compost receptacles on your campus. Contamination is a key issue in composting, so you
must make sure that your guests are aware of the parameters.
• Serve local apple cider instead of Individual cans of soda
• Use a refillable pitcher (one-time price of $5) instead of Individual water bottles
• Veggie and cold-cut platters instead of Boxed lunches
• Serve local, seasonal fruit instead of Dessert trays
• Plan menus with finger foods that require less waste (cut veggies with hummus, bread and cheese,
whole fruit) instead of Serving meals on disposable plates and cutlery
• Serve vegetarian meals with favorites like lasagna, Mediterranean food, and veggie sushi rolls instead
of Centering a meal around meat
• Choose chicken, sustainably-harvested fish, or vegetarian meals instead of Beef
Food Waste
A Few More Practical/Cheap Tips for Our Campuses
As the primary provider of food and nutrition on campus, we believe in exceeding regional and national health
and safety standards whenever possible.
• Exceeding Specifications: Foods purchased meet or exceed the purchasing specifications. Minimum
food specifications are listed in blue boxes below.
• Meat Specifications: Smurti Corporation meets or exceeds the minimum standards of U.S.D.A. I.M.P.
specifications.
• Government Regulations/Grading: Purchase of food, supplies and equipment meet requirements of
the United States Department of Agriculture (USDA), Food and Drug Administration (FDA) and National
Sanitation Foundation (NSF). In the absence of grade labeling, Smurti corporation will provide package
labeling codes or industry accepted grade equivalent standard to verify the minimum grades specified
are being provided.
• Right to Inspect: The University may periodically inspect the inventory of food and supplies or review
invoices to ensure that purchase standards are maintained.
• Product and Brand Preferences: We will attend to your university’s preferences regarding products
and brands, use of state products, organic and local (in-state) vendors when costs are not significantly
impacted.
• Local Preference: We value engagement in the community and region and we purchase from area
vendors whenever possible.

Excellence begins with freshness and but is sustained through precise and thorough attention to every detail.
Catering Service Standards
• Temperature:
Hot foods are served above 140º F and cold foods are served below 40º F.
• Garnish/Merchandising:
Plates are garnished for attractive presentation. Serving stations, salad bars and food display areas are
decorated with seasonal displays, flowers, etc. Items presented at service stations and salad bars are readily
identifiable with attractive and individual labels.
• Food Freshness:
No food that is discolored, unappealing or lacking freshness is served.
• Product Availability:
Serving stations are kept well stocked throughout serving times; the last dining customer has access to the
same range of food choices as the first. Food will remain available 15 minutes after closing so that even late
students can be served.
• Accompaniments/Condiments:
Condiments and popular food accompaniments are available, such as applesauce with pork, cranberry
sauce with turkey, and tartar sauce and lemons with fish. Sauces, sugar, cream, ice, and butter will be
placed close to the food or beverage they accompany.
• Display and Serving Area Appearance:
Display and serving areas are clean, sanitary, orderly, and attractive at all times. Accidents are attended to
immediately at counters, steam table pans, general serving and dining areas and floors.

Dear Campuscafe Administration and Staff:
On Friday evening, April 15, 2011, you catered an event, the High School Literary Arts Award Ceremony and Reception on the Clarkston Campus of Georgia Perimeter College. This was the first time we had worked together, and I was impressed by your help preparing the menu, working out the costs based on funds available, and your follow through on all the details as promised.
The food was abundant and delicious and cost us almost half of what we had paid to other caterers in the past. In addition, linen tablecloths and centerpieces that you provided added an elegant touch to the buffet.
The service staff for the evening was consistently helpful and pleasant and made certain that refills were readily available.
The quality of the food, the presentation, and the reasonable cost all urge me to recommend Campuscafe to others looking for a catering service that is customer focused and delivers what is promised.
Kudos to Campuscafe for making our celebration special since all attendees agreed the food was “great,” and the selection impressive.

Ordering Instructions
The Life U Eagles Catering Program is a low cost, no-frills segment of Life U Dining Services; and is ONLY available to Life University Student Gov-ernment and Registered Student Groups. Items ordered outside of this menu will be charged at regular catering prices. Final orders must be placed with the Coordinator of Clubs and Organizations at least one week in advance of your scheduled event. It is a good idea to draft out your order ahead of time before submitting the final order.
Special Ordering: If The Life U Eagles Catering Program does not fit your needs, We will gladly work with your group to accommodate your food and budget requirements.
Additional Information: Life U Dining Services will not Setup, Deliver, or Clean Up. Event Sponsors will be responsible for coordinating Setup, Delivery, Pick Up, and Clean-ing of the catered area. Paper products and disposable tablecloths that accompany orders will be based on the amount of food requested. There are additional charges for linen, skirting, and any extra labor need for your event.
Policies and Procedures: 1.Orders should be placed at least ONE Week prior to the event. 2.A signed requisition or other form of payment must be received Three business days prior to the event. 3.Order placed within 48 Hrs of event will not be eligible for The Life U Eagles Catering Program. 4.All Student Government Groups will be mandatorily required to get a written approval from the Student Life Director and their Club Supervisor or Assigned Supervi-sor in order to place catering order. (Use Catering Order Form)
Co-Sponsorships: Life U Dining Services will provide clubs and organizations that are trying to make a positive change in the community and campus with sponsorships. To see if your club is eligible please speak with catering manager.

Styles Of Service Life U Catering offers a range of services from a quick pick-up at our four campus locations to formal dining; from
economical to highly distinctive.
Grab and Go
Selections geared for economy and ease include a wide variety of beverages, sandwiches, fruit trays, vegetable trays, and
more that can be picked up. Orders require 48-hour notice.
Casual Service
Casual service orders are delivered right to your meeting room and are served with disposable ware and tablecloths. We
will return after your event to pick up any leftover foods and catering supplies. An attendant can be provided upon re-
quest. Service of hot foods may require an attendant at a charge of $0.00/hour, minimum of three hours.
Formal Service
Formal service orders are served with china, glassware,
linen and table skirting. Fully customized receptions
with special menus, floral arrangements and table
displays can be arranged with our Catering
Coordinator.
Life U Catering appreciates the opportunity to work with
you to plan a successful event. These menus represent
our traditional offerings, but our skilled staff and chefs
can also create custom menus and environments for your
special occasions.
Meals
For served meals and buffets, we offer three distinctive levels of service:
Standard Service: This service includes a linen tablecloth on each table and linen napkins. With advance notice, special
linen colors are available (additional charges may apply). Events with more than 120 guests will be served with beverage
carafes on the tables. Floral arrangements may be available for use during the event (check with catering coordinator for
prices).
Grand Service: This service includes a linen tablecloth with a second overlay cloth and linen napkins. A floral display on
the buffet or entry table is also included. With advance notice, special linen colors are available (additional charges may
apply). This service costs an additional $0.00 per person.
Custom Service: Custom service involves original approaches to your special event. We are happy to work with you to
provide unique touches, and our Executive Chef is available to create an original dining experience.

Guidelines
Guaranteed Number Of Guests To insure appropriate service preparation, we require the final guaranteed number of guests by noon three business days
prior to your event. You will be charged for this number of guests unless you exceed the guaranteed number at which
point you will be charged for the actual number served. Increases in the number of guests within 48 hours of the event
will be subject to an additional 50% of meal price per added person. We will prepare for a 5% overage up to a maximum
of 25 plates. If we do not receive your final guarantee, we will use the last estimate on record. If the Monday prior to the
event is an observed holiday, guarantees for Tuesday and Wednesday events will be due by noon on the Thursday prior.

Guidelines For Planning Events We are the exclusive caterers and will work with you to make your event a success. For reasons of public safety and
institutional liability, external vendors and donated goods are not permitted without an approved Food Policy Exception
Form. All leftover perishable foods and beverages are the property of Life U Catering and will be disposed of according
to health regulations. To allow ample time for the planning and preparation of your event, we recommend that final meal
selections be made two weeks prior to the event. All orders must be placed by noon on the Friday one week prior to
the event. Any requests made after noon on the Friday one week prior to the event may be assessed a 20% late fee and
limited dining options may apply. The client is responsible for ordering and setting up all tables and chairs. There may be
an additional charge when a meeting and a meal are held in the same room.
Guidelines
Wedding Receptions Life U Catering is happy to assist you in the planning of this special day. You are welcome to use the bakery of your
choice to provide the cake. Life U Catering must supply all other food and beverages. A table for your wedding cake with
plates, forks, cocktail napkins and serving utensils is provided and the charge is $0.00 per person. An attendant to cut and
serve the cake can be provided for an additional charge of $0.00. A deposit of 50% of the total estimated costs is due six
weeks prior to the event. The remaining balance is due one week before the event.
Wine And Bar Service Alcoholic beverage service is available only at events related to authorized University functions held at designated sites
on campus. The Chancellor’s Office must approve the serving of alcoholic beverages at such events. Requests must be
made in writing and submitted to the Provost no less than two weeks before the event using a form supplied by our
Catering Coordinator.
Life U Catering is not licensed for the purchase of alcoholic beverages for the purpose of reselling. The client is responsi-
ble for purchasing the alcoholic beverages and having them delivered at the proper temperature to the approved site for
service. The customer must remove any alcohol remaining at the end of the event; any alcohol not taken will result in a
$25.00 fee. After five business days, the alcohol will be discarded. Life U Catering is responsible for maintaining the bev-
erages at the temperature at which they were delivered, providing bartenders, glassware, linen and other items usually
associated with bar service.
The client is responsible for identifying any underage attendees. Life U Catering can provide stickers to any client re-
questing them for identification purposes. Life U Catering reserves the right to refuse alcoholic beverage service to any
individual under the age of 21 or who appears to be intoxicated. Staff members in charge shall have this authority.
The bartending fee for beer and wine service is $0.00 per bartender. We suggest one bartender per 100 guests for beer
and wine service. The bartending fee for bars with mixed drinks is $0.00 per bartender plus $0.00 per person for mixers
and garnishes. We suggest one bartender per 50-75 guests for full bar service. If wine is to be served with dinner, there
will be an additional $0.00/person charge. A handling fee of $ 0/keg will be charged for keg beer. Additional charges may
apply for special handling of deliveries.

Guidelines
Additional Charges Off-site Fees:
An off-site event is defined as any event not held in the Life University Dining
Service Location. Off-site meals have a minimum charge of $200, not including
tax.
Catered meals served with china: Add $4.50 per guest (minimum 25 guest)
Catered meals served with disposable products: Add $2.75 per guest
(minimum 25 guest)
Formal service orders: Add $1.25 per guest ($35.00 minimum) (minimum 25
guest)
Deliveries:
A $15.00 delivery fee is added to all campus casual service orders totaling less
than $225, which includes one pickup. An additional pickup will be $5.00. De-
liveries made off campus will be charged $1.50 per mile for both delivery and
pickup with a minimum charge of $15.00.
Cancellations:
In the event you must cancel your catered event, please notify us as soon as
possible. We require at least 72-hours notice or you will be charged for the
expenses incurred on your behalf. On days with extreme weather conditions
that may result in campus closures, our office will contact you with a deadline
cancellation time. Orders cancelled within the designated time frame will incur
no charges. All other cancellations may be charged at full price.
Service Hours:
Any events starting before 7:00am or after 7:30pm will incur additional labor
charges of $15.00 per hour per attendant and necessary kitchen staff.
Miscellaneous Fees:
Meals and receptions requiring more than 90 minutes to serve will be subject
to an additional charge of $15.00 per attendant per hour. Tablecloths for non-
food events are available for $2.50 each. A 5% catering service fee is added to
all catering events. Any events that incur additional labor fees will be charged
an hourly fee of $15.00 per employee per hour. Fees may be charged for any
event with greater than usual service or equipment requirements. Prices do
not include applicable taxes and are subject to change. Please call our Catering
