Old South’s Social Events

December 4th - Ladies Shopping with Nordstrom & Dickinson Jewelers

Our Ladies Holiday Shopping Event with Nordstrom and Dickinson Jewelers was an event to remem-ber. The room was filled with 89 excited, cheerful ladies who enjoyed an evening of choosing be-tween holiday gift sets, fragrances, clothing and beautiful jewelry, while being serenaded by an organ-ist. Many took advantage of the expert makeovers by Smashbox and Trish McEvoy. They finished the evening with a buffet and some sweet treats!

December 7th - Brunch with Santa Santa visited Old South to hear the little children’s wish list. They were delighted with the gift bags he gave out and one could even hear them joyfully singing Christmas Carols to him. The face painter and balloon artist turned well dressed children into super heroes and magical fairies and candy canes into swords. Fresh waffles and custom made omelets were served with Champagne Mimosas in the Founders Room.

The Staff at Old South Country Club wishes to thank the Members for their generous gifts to the employee fund. Because of your kindness, spirits were lifted, smiles were big, and the pressures of the holiday that is so often felt, was a whole lot easier.

Did You Know?

When you make a reservation, they often come through multiple sources and multiple staff, which leaves room

for error. To eliminate confusion, the best way to make a reservation for events is by sending an email to

[email protected]. This email is dedicated solely for that purpose. Phone calls are great, but we can track

an email if something goes wrong. Tracking an error helps us to determine what went wrong and how we can

improve so it doesn ’t happen again. We don ’t like disappointing you! Liz Dunlop manages the

[email protected] email account, from there she diligently logs your request in the registration book and

keeps the Chef and the Banquet Manager informed so they can properly prepare for the event.

If you have a simple dinner reservation for the Founders Room that is not a special event, you may call them

directly at 410.741.6043.

Fernando Montesinos

Chef Fernando creates Old South’s New Winter Menu Old South’s Winter Menu will begin January 21st. Many of the specials you raved about in November have become a regular entre e on our new menu, such as the Chilean Sea Bass and the Parmesan Crusted Salmon. While many of the traditional favorites remain, our new menu offers more fine dining, plus healthier choices that you may not expect and definitely won’t find elsewhere. Each created with a taste that is amazing! Chef Fernando’s excitement and passion for his food is evident. He is inspired by the challenge to move away from the norm of Americanized Mexican food and to bring a new twist to his entrée using fresh ingredients in perfected recipes. His phenomenal kitchen team knows exactly how to execute his every detail. If you could slip behind the doors with the portal peep holes leading to the kitchen, you would see this team working in unison like a synchronized dance. As the Chef says, “It’s magical.” His hope is that everyone enjoys eating our food as much as he and his team have enjoyed creating it.

Migdalia Redhage

Restaurant Manager

Born and raised in Puerto Rico, Migdalia Redhage moved to the United States in 1990. She is married to her husband of 15 years, Brady, who is a United States, Air Force Officer. They have lived overseas and have two boys, ages 7 and 11. Migdalia was an airline stewardess for World Airways, she has a degree in Culinary Arts and is continuing her education in Business Management at UMUC. She joined Old South in September of 2014, shortly after learning that the airline she dedicated 18 years to have been dissolved. Her job at World Airways was more than just a job to her, it was her passion. After pursuing other airline opportunities, she came to the realization that no other airline would be quite the same, so she made a decision to pursue a more grounded work environment that offered the same professional service atmosphere. There were several job offers from various companies, but it wasn’t until she walked through the doors of Old South Country Club that she knew she had found the place her heart had been searching for. She thoroughly enjoys serving the Members with diverse personalities and back-grounds, getting to know each by name, and being a part of the great team at Old South. Migdalia is a happy, joyful, hard worker who is well liked among the Members of Old South. She has an intuitive attentiveness to service that is rare to find. She feels it is an honor to be serving the Members of Old South and looks forward to many years of providing them the kind of excellent customer service she has built her career upon.

MARLIN’S TURF TALK

With the onset of winter, the maintenance

staff has been busy accomplishing some of

the many tasks that are difficult to complete

during the season. One of the projects

completed late this fall was re-grading and

installing a drainage catch basin on the right

hand side of #12 approach. Following heavy

rainfall events, it is not uncommon to have

standing water on the surface of the green

because we do not have positive surface

drainage through the front of the green and

approach. We have had drainage issues on

the front of #12 green for years; which has

compromised our ability to grow healthy

turf. To insure the drain leaving the green

is working properly, we installed a drain

pipe to the surface of the approach; which

we will use as an access point to pump

water from our irrigation system in the

spring.

Once we located the drain exiting the 12th

green, we installed a drain pipe to the

surface of the approach.

To improve the surface drainage on the

front of #12 green, we created a small

swale in the approach to allow more surface

water to run freely off the front of the green.

Antonio Jaramillo works to install a new

drainage catch basin on the right side of

#12 approach.

#12 approach completed

To improve the aesthetic value of the pool

area, the maintenance staff installed a row

of Osmanthus Fortunei along the perimeter

of the pool fence. The Osmanthus will

provide year-long cover and produce small

white flowers in the spring and fall that are

very fragrant. While the hedge row looks

sparse right now, the Osmanthus has the

potential to grow 15’-20’ high and 15’-20’

wide. Once the plants start maturing, it will

be necessary to prune them to the height of

the fence row to provide a more uniform

hedge row around the fence. I want to take

the opportunity to thank Kevin McHale for

his expertise in selecting the plant material

and Mrs. Byrnes and Dawn Piekarski for

conducting the raffles that generated the

financial resources to purchase the plant

material. Thank you all so much!

The completed planting of Osmanthus

Fortunei around the pool fence.

The maintenance staff has completed

a few additional projects so far this fall

and early winter. The projects included:

Trimmed the trees on the right

front corner of the rear tee on hole

#11 and on the right side of #12

black tee.

Mowed all native areas on the golf

course.

Repaired split rail fencing through-

out the property.

Cleared brush in front of #8 tees

and the right side of #12 tees.

Trimmed low hanging limbs left of

#14 green and behind #17 green

to improve air flow across the

green.

Removed three trees on the left

side of hole #10 to improve playa-

bility from the black tee.

The completed tree trimming in front of

the rear tee on hole #11.

Now that the maintenance staff has

completed the above mentioned work,

we will start working on the following

projects:

Continue to raise and level irriga-

tion heads around all greens

Replace the isolation valves at #4

green, #15 tee and the drain

valve in front of #16 tees

Trim low hanging limbs throughout

the golf course

Re-furbish all course accessories

and ball washers, tee markers,

benches, cart signs, posts, stakes.

Service all equipment and replace

bearing, seals, sharpen blades,

change oil, filters.

Install supplemental drainage

behind the house right of #9 green

to eliminate the erosion on the

hillside right of #9 approach.

Even though the maintenance staff is

not actively grooming the golf course,

the winter time really provides us a

good opportunity to accomplish many

tasks that we are not able to accom-

plish during the growing season. If you

have any questions about the topics

covered in this article or any other

topic, please feel free to contact me at

[email protected]

See you at the club, Marlin Ewing Golf Course Superintendent

Did You Know? The majority of the putting greens constructed today are constructed from a mixture of sand and peat moss; often referred to as con-struction mix. A common mixture used is 85% sand and 15% peat moss. The reason for using sand in the construction is for drainage and the resistance for compaction. The purpose of the peat moss in the mixture is for water and nutri-ent retention. USGA specifications require a sand profile that is 12” deep and one that meets a certain particle size. The average number of tri-axle loads of construction mix to build an average putting green is between 15-20 loads. To build an entire golf course with twenty average size greens, it will take approximately 300-350 tri-axle loads of construction mix.

ecember was a busy month filled with business meetings and holiday parties at Old South Country Club.

The meeting for Chaney Enterprises was a well planned and executed meeting! The Oak Room was the perfect size for a meeting of 20 people with plenty of natural light filtering in from the windows, yet not interfering with the slide presentation. The meeting space was setup with a large conference style table so that everyone could easily see the screen and presenter. The attendees enjoyed a choice of beef tenderloin salad, crab cakes, or chicken piccata. Crab cakes are always the most popular; Chef Fernando makes his fabulous baseball sized crab cakes from fresh lump crab meat. The Oak Room was an elegant setting for a dinner party as well!

The Marlboro Hunt Club Ball and Police Federal Credit Union Holiday Parties were exciting holiday celebra-tions! Both evenings began with passed hors d'oeuvres and delicious cocktails. Chef Fernando’s mini crab cakes were a favorite! After dinner, the dance floor was filled and not an empty space was available. Every-one danced the night away and raved about the dj and band. If you have a party or meeting planned on your horizon in 2015, don’t forget Old South has the perfect room for you.

OSCC’s Fitness For Everyone

New Yoga Instructor, Megan Byrnes, joins the fitness team at Old South.

Megan received her 200 hour yoga certification from Frog Lotus Yoga in Villamartin, Spain. She offers Hatha, Vinyasa and restorative yoga, at all levels. Classes will combine Hatha and Vinyasa techniques to create a gentle, flowing class; suita-ble for beginners including optional modifications for more advanced students. We'll also explore some simple breathing and meditation techniques

to soothe and de-stress the body and mind. Yoga comes from the word 'yoke', meaning union. Practicing yoga is about uniting the body and mind. This is the perfect time of year to reconnect with your body and yourself. Classes are Mondays at 6:30 PM and Wednesdays at 10:30 AM. Come try it out, your first class is free. If you have questions for Megan or would like to register, email her at [email protected]

YOGA - What’s your reason to roll out the

mat? Here’s health reasons 5 & 6!

Spinal Rap

5 Spinal disks, the shock absorbers between the vertebrae that can herniate and compress nerves - crave movement. That's the only way they get their nutrients. If you've got a well-balanced yoga practice with plenty of backbends, forward bends, and twists, you'll help keep your disks supple.

Bone Zone

6 It is well documented that weight-bearing exercise strength-ens bones and helps ward off osteoporosis. Many postures in yoga require that you lift your own weight. And some, like Downward and Upward-Facing Dog, help strengthen the arm bones, which are particularly vulnerable to osteoporotic fractures. In an unpublished study conducted at California State University, Los Angeles, yoga practice increased bone density in the vertebrae. Yoga's ability to lower levels of the stress hormone cortisol may help keep calcium in the bones.

Weights Work

This class is limited to 10 participants per day. It’s the fastest way to shape up and lose body fat. This is a toning and condi-tioning class with weights, for everybody who wants to add strength training into their aerobic workout. The simplicity of this class makes “Weights Work” a great starting point to develop strength and confidence. Beginners start with light weights, after a few classes, muscles strengthen and weights are slowly increased. Burn up to 600 calories, improve your strength, general fitness, tone muscles, and bone density; and leave feeling with a sense of achievement. Tuesday and Thursday mornings at 7:00 AM. Cost is $10.00 per session, pay as you go.

Not the Hardcore, Yell in Your Face Kind!

This class is designed to teach how to warm up properly, improve posture, stabilize and strengthen core, increase flexibility, improve balance, and loosen constant areas of tight-ness. You will become stronger, more flexible, and stable. My training with the Callaway Fitness Institute for golfers taught me the latest moves to help improve your core, arm, and shoulder strength. Strengthening these areas will impact your overall golf game. This class has a dedicate trainer who focuses on your specific needs and goals. The small class environment allows for individualized training geared towards your specific needs. Tuesday, Wednesday, and Thursday mornings at 6:00 AM. Cost is $100.00/6-weeks or $5.00 pay as you go.
