The high-end kitchen also features white quartz counters, top-of-

the-line appliances including a Sub-Zero panelled fridge and two cooktops

– and they added some warmth with a wood veneered backsplash encased

in five-mm glass. The result was a fresh take on an otherwise monochromatic

colour scheme.

Other custom touches include LED strip lighting in the flooring; a stunning

hardwood feature wall in one of the bathrooms; and glass walls throughout

the space, including one in the master bedroom. “The home sits on the ridge

with fabulous mountain views, so the homeowner can relax in the free-standing

tub while looking through the glass wall and out of the great room windows

to their incredible views,” Marie-Claire explains.

Connie DeSousa and Jack Johnson each have a CV that is a

recipe for mouth-watering results. They’ve worked internationally in some of the most highly acclaimed restaurants, including San Francisco’s exclusive St. Regis Hotel, which they launched, and for which they earned the Mobil 5-Star Award annually.

Connie may be known to many as the runner up of Top Chef Canada, Season 1, though her training at Paris’ Le Cordon Bleu, her term at Chef Jean Georges Vongerichten’s Michelin 3-star restaurant in New York City and her masterful butcher skills speak for themselves on the plate.

John’s accomplishments are equally impressive, having worked at top restaurants including London’s River Café, Le Jardin des Cygnesin in Paris and mentored with old masters in the art of butchering in Italy’s Marche region.

From the St. Regis Hotel, the two decided to return to Calgary and open up CHARCUT. They knew they were a highly effective team and they wanted to take their vision in dining to the next level.

CHARCUT is a departure from what Connie jokingly refers to as “tweezer food”. Their experience with elegant, refined, prestigious dining was a specific experience, “elite hospitality,” as Connie describes it, but they two felt they could bring this type of elegance to a diner looking for a more substantial meal - fine dining meets comfort food, with less pretention – and CHARCUT was born.

“Calgary had an amazing food culture that was just on the cusp,” she explains, and with great friends there, “we saw the growth in Calgary.”

Going local and being near the growing community made it all the more an ideal choice. “We saw 40 farms in 40 days,” explains John. “We met the families and broke bread.” These relationships flourished and became the source for much of the food brought into the restaurant. “We even found artichokes growing less than 30 km from the city,” says Connie.

With skill and ingredients, the final key is in the kitchen - the professional appliances. Walk into any top-notch restaurant and you’re likely to find some pretty impressive equipment, at CHARCUT you’ll find a 10-burner stove, a giant rotisserie, a smoker, two ovens. At CHARBAR they also added a less common piece of equipment – an Argentinian parrilla.

The parrilla isn’t a household word here – yet, but the

1. Pig’s head mortadella – This is a CHARCUT signature we have never take off our menu. It’s hand mixed ground pork studded with pistachios and truffles, cooked, cooled and sliced paper thin and served with our local Brassica mustard.

2. Tuna Conserva with lemon pickled potatoes – This appetizer is very light, refreshing, and well balanced.

3. Ceviche Mixto – we now feature this at our new restaurant, CHARBAR, made tableside. From the textures and crunch of toasted cancha Peruvian corn nuts, to the refreshing burst of acidity, this is one of my all time favourite dishes.

4. Raw Bar – Anything from the raw bar such as ice-cold, freshly shucked oysters, little neck clams, sea urchin and shucked scallops. The most memorable experience was from Newfoundland, where everything was just harvested a few hours earlier and we had an opportunity to devour it.

5. Trevelez Jamon Crudo. We had this amazing Spanish dry-cured ham at Bar Raval, owned by our friend Grant, in Toronto. We loved it so much we now feature it at CHARBAR, hand-sliced and served with sourdough bread from the local bakery, Sidewalk Citizen. Nothing better than the simplicity of meat and bread.

introduction of this cooking technique takes grilling meat to the next level. “The bars are V-shaped. That channel catches the dripping fats and juices, and we bast that back into the meat,” says John. “You don’t have flare-ups,” says Connie, “because the fat doesn’t drip into the flame.”

This wood-burning grill is designed for maximum flavour – which is the reason dining out is such a luxury – someone else does the cooking – and does it well!

Dining out is a luxury. It’s one of those accessible luxuries that can be added to any day – lunch, dinner, a light meal, a big indulgence. “People are pressed for time,” says John.

“Restaurants used to be the place you went before the entertainment. Now they are the entertainment. Not having to do dishes, bespoke service, having your needs anticipated, not having to think,” he explains, are many of the reasons that define the luxury of dining out.

From decor to menu to professional staff, John and Connie infuse themselves into this idea. They have customers contact them on social media when they’re coming in, adding a personal touch. They have an open kitchen and opportunities to interact with diners. John and Connie embrace it and focus on more than just the food, they create an experience.

1. Cast-iron Canellini and Kale - This is just a good hearty soup that we developed for local organization Soup Sisters and Broth Brothers, where we provided the recipe in support of their fundraiser to help local women in need. It’s a feel-good, good-for-you soup – on so many levels.

2. Tomato and Sausage Soup with Basil – For cold, wintery days – especially in Calgary – this soup warms you through. It’s hearty aspect gives you that cozy cabin feeling while the fresh basil has you dreaming of summers snipping fresh tops off of home-grown herbs.

CONNIE’S TOP 5 FAVOURITE SOUPS3. Anything ramen! I really do love freshly made and expertly

made noodles with full-flavour broths. There is an art to great ramen.

4. Canja – Portuguese chicken and rice with lemon soup.My all time favourite soup that brings me back to my childhood. I grew up eating this and I still use my grandmothers recipe. The soup is amazing and it is finished with a classic Liaison cream and egg yolk.

5. Chilled soup – With the right balance of fresh herbs and carefully chosen ingredients there are few more refreshing ways to start or accent a meal. Bring on the gazpacho.

10 Questions with Jason Palacsko,

Jason Palacsko is vice-president, Operations – Calgary Communities and has been with Brookfield

Residential for more than 19 years. Brookfield has been developing communities in Calgary for more than 50 years and has built more than 60 communities in the area. In fact, one in five Calgarians live in a Brookfield community. Currently, Brookfield is developing Auburn Bay, which is celebrating its 10th anniversary this year, Cranston, Riverstone and New Brighton in the south and its newest community Symons Gate in the north.

1) What do you love most about Calgary?It’s a great city with great people. There’s always something to do in the city, and living near the mountains is a big plus.

2) What community do you live in, and why did you choose it?I live in Auburn Bay. It has everything we want in a community. Living near the lake, with all it has to offer, allows me to feel like I’m on vacation when I get home from work and on weekends. The community is very family friendly, and offers lots of amenities such as playgrounds and parks for my kids. Nearby shopping and entertainment, with Seton immediately adjacent to Auburn Bay, is a bonus. The community has a great feel and it’s a great place to come home to just to relax.

3) Auburn Bay was built by Brookfield – where did the inspiration for the lake come from? Auburn Bay was inspired by Canada’s great tradition of cottage country lifestyles. People coming to Calgary from across Canada can relate to the memories that are created when you have an amenity like a private 43-acre lake close by. Our vision was to provide that quality of life, year-round, for Auburn Bay homeowners, and it’s great to see that has become a reality.

4) Can you tell us a little more about Auburn Bay?Auburn Bay is a 900-acre community featuring a 43-acre lake and a 13-acre beach and park. It has homes in all product segments that would suit any family’s needs. The most recent release of lake front homes includes some of the most premier lots in the city, with private docks that feature expansive south views of the private beach and park. Auburn Bay will have two new schools and, in the longer term, a Green Line LRT connection.

5) Auburn Bay is celebrating its 10th anniversary this year. Are you doing anything special to celebrate?There will be plenty of activities throughout the month of September. Our builder partners have opened eight new showhomes, and we’ve just released a new phase of premier lakefront lots. We just broke ground on Auburn Station this August, a new retail centre just off 52nd Street.

6) Can you tell us about the communities Brookfield Residential has developed in Calgary?The list is long so I can’t list them all, but some of my personal favourites are Tuscany, McKenzie Towne, Riverbend, Edgemont and Silver Springs.

7) What does Brookfield Residential see as the most important features to add to a community?The most important feature people tell us they want to see in a community is schools – we always plan for and hope that schools can be built early in the community’s development. Beyond that, its parks and pathways that rank highest for homeowners.

8) What was the most unique feature Brookfield Residential has created in a community?Residents’ Associations – they are private clubs dedicated to providing great amenities, services and programs to the community. They usually have a large facility with banquet space and gymnasiums and they operate four-season activities like toboggan shoots, skating, splash parks, tennis, green spaces, playgrounds you name it. They help build a sense of belonging and residents love them.

9) On the lighter side, what’s your favourite sport to watch live?NFL football is my sport of choice. I’ve been to Denver to watch my favourite team a few times. The ambiance is fantastic – especially when they win.

The interior work included cosmetic changes such as new paint and flooring,

but also the creation of a showpiece kitchen highlighted by a floor-to-ceiling linear

fireplace featuring decorative tin and Dolomite tile. Upgrades on the exterior included

new stone, paint, front door and concrete front steps that “we widened to present a more

welcoming feel.”

“The kitchen is uniquely different because we took aspects of the most trendy

designs such as white cabinets and grey tones and added 1900s curio-style moulding,

tin to the fireplace and blown-glass pendant lights above the quartzite-topped island to

create a very unique look,” Shannon notes. “We also added distinctive details such as

doing a custom glazing on glass fronts of the upper cabinets to mimic the pattern on

the tin; the kitchen is definitely above the average.”

A designer by trade, Shannon also added eye-catching orange accent pieces and

there are even bits of orange in the floor tile, for a splash of colour and to tie in the cozy,

rustic feel of the rest of the home. “So the inside

and outside go together with uniformity in colours

and materials,” she explains. “We’ve given it a modern

look, but included old world elements to create a

design that presented the right feel and ambience

for the family and works for their lifestyle.”

Another amazing project south of Calgary saw them create a space centred on the clients’ passion – helicopters. They modified a hangar and created an impressive garage space and entertaining area with a helicopter as a showpiece. Among the many features are: two sides of 16-gauge steel cabinets; four banks of toolbox drawers and deep storage; cold rolled 12-gauge steel countertops and bar equipped with a sink, TV and beverage cooler.

“These designs essentially move the party from the kitchen and living room to the garage,” Don explains. “It’s important to be close to the elements of your lifestyle that you love, and these garages do that.”

“Quite simply”, he adds, “homeowners are increasingly spending their disposable incomes on the pursuit of leisure time activities and on their most prized asset, their home. And where are we storing our leisure-time treasures? In the garage.”

This combination, leisure time and home improvement, is fuelling the fast growing need for home storage products like never before. For example, a homeowner who enjoys golf or fishing soon finds they have a lot of gear, which usually ends up strewn about the

garage, making it one of the most unorganized and unsightly spaces in the home.

The home decor store began as an offshoot to a thriving renovation business. Once the renovation was complete, homeowners quickly realized that although they loved their new space, they needed help furnishing it. Lori Lee, an interior designer by trade, realized the potential to help the renovation client create a space they loved. The issue for Lori was not being able to find products she liked – and as a result decided to start Red Door Home Living, where she could hand pick exactly the products her clients needed.

The Lees decided to focus on a few quality, exclusive lines, so what you see in their showroom is a mixture of unique and eclectic pieces with a transitional feel to the style. Unlike a lot of home furnishing stores that carry many of the same lines as every other store, the Lees have lines exclusive to Red Door Home Living. I like to think of it as a restaurant with an extensive menu list. When the menu is the size of a small novel, I hesitate because there it too much to choose from and chances are they don’t do everything well. With a simple, well thought out menu, everything is great, and Red Door Home Living has that same appeal. I do not know of a store in Calgary that can work with the homeowner from renovation through design. Who better to add to your space, than the person who helped create it?

Like a fine restaurant, Red Door Home Living is middle to high end in price because of the quality and the availability of customizing pieces. They carry art work, accessories, window treatments and furniture. They also have two qualified designers to assist you. It could be a new piece for your space or simply accessorizing an old space to freshen it up, the designers at Red Door Home Living assist in a friendly way and they are more concerned with the right fit for the individual then making a sale.

There is a fee for design work but it is within the average price in the design profession. There are stores that offer “free” design, but Red Door Home Living is not one of them because as we all know, there is no such thing as free! You either pay up

“I actually had five different window and door companies come into our home to

give us quotes,” says Stacey. “Rusco Industries wasn’t the cheapest, but we were so

Thinking of replacing your windows? You’re not alone. Many homeowners are

might cost more but in the long run, you will never have to replace them again), and

finally, ensure the warranty is transferable should you sell your home down the road.

Picture expansive, thick, manicured lawns, sweeping

flower beds overflowing with lush, colourful blooms and sculpted shrubs, edged gravel driveways flanked by opulent marble fountains. Does this define luxury?

By definition, luxurious is described as expensive, richly appealing, showing a desire for expensive things. Can luxury on a grand scale be created in a smaller space? Absolutely!

Many of the older, established communities in Calgary have wide – and often deep properties. The possibilities for an outdoor space are almost

endless, and suppliers of quality garden products are more than happy to accommodate your shopping needs.

The new varieties of patio materials, both natural and artificial, are exciting to see. The traditional tumbled look of pavers is now competing with sleek contemporary marble or stone effects, as well as timber-stamped concrete looks. Of course, these are all available in various colours to complement your home. Exciting additions of fire pits and cooking stations in these products are also becoming increasing popular, and provide a quality custom finished look to any garden. Consider making container or raised beds with built-in seating components out of these new materials instead of using the traditional cedar lumber.

Statuary is an often overlooked component of a garden design, and this is a shame. Traditional European gardens often display extravagant examples of mythical animals and deities, and are definitely worth considering as a focal point in your garden. Big and bold is the way to go with these – show them off proudly in a visually dominant location.

and develop a rich patina over the years to increase its visual appeal. The use of a wall-mounted fountain can turn a boring plain wall into a visually stunning focal point. There are a couple of companies from the U.S. that have been making very high quality products for many years. While more expensive, they are well worth the investment. The less expensive options coming from overseas do not have the same quality construction or durability.

Lighting is an often overlooked component of garden construction, yet has the capability of transforming all these key elements into visual highlights come nightfall. Again, this is an industry that has made huge improvements over the past few years, in both energy efficiency and aesthetically pleasing design. Seek a certified outdoor electrician once you have your key elements in place.

Furniture should be of sturdy quality construction, in a design that fits well with your overall garden theme. Buy big sumptuous pieces that provide comfort and support, make it a joy to relax in. Perhaps you want to surround yourself with

large colourful containers brimming full with lush greenery, to provide your garden with a focal point.

Lastly, consider using a re-purposed piece of architecture in your garden space. Imagine a large old pair of ornate wooden doors positioned at the end of a limestone patio, framing a beautiful stone water fountain at the back of your garden. There are several local companies who are happy to provide unique, old – often antique – accessories which can put that final touch to your luxurious outdoor space.

I often meet with clients who have a long wish list for creating their dream garden. They would like to see an area for cooking, trees for privacy, flower beds, vegetable beds, a space for the children and the family dog to play, and an entertaining area. Often this all has to be created in an area 25 feet wide and 30 feet long. I am also called to help fix homeowners gardens, to help explain why their garden, done in miniature proportions, isn’t working for them. Over in this corner is the flower bed, here is the play area, and tucked in the back is the sitting area with its miniature, uncomfortable furniture. Your eye just keeps wandering from spot to spot trying desperately to connect the pieces together. There is no flow or continuity, both of which are critical elements of a successful garden design. A busy, disconnected garden is neither soothing nor relaxing, which after all is the point of a garden isn’t it?

Not having a large garden space to work with does not mean you should purchase small accessories or create tiny unimpressive spaces throughout your garden. On the contrary, components should be big and bold and exaggerated, as should all the aspects of the garden. Nice wide inviting pathways and flower beds, and judicious use of plant material and colour will create a feeling of openness and opulence. Monochromatic colour schemes, contemporary, neutral furniture, fences and screens, combined with topiary trees and mounding type shrubs, all lend themselves to a visually luxurious feel. Exercise restraint in everything you purchase for your new garden and remember: colour, form, function and texture. These are the keys to a truly luxurious garden.

INGREDIENTS makes four servings

Preheat oven to 325°F. Grease four ramekins, about 23/4 in. diameter and dust with cocoa powder. Set aside.

Melt the chocolate in a small pan over medium heat. Once half melted, add butter and continue to heat until the chocolate and butter are completely melted and combined. Set aside for 10 minutes, or until needed.

Using a blender or hand whisk, whip the eggs, egg yolks and sugar in a medium bowl until pale and thickened, then add to the chocolate mixture. Gently fold in the flour with a metal spoon. Divide the mixture between the four ramekins and cook in the oven for 12 to 15 minutes, until the cakes are firm on top. Using oven gloves, remove the ramekins from the oven and turn them out onto serving plates. Garnish with raspberries and dust all with icing sugar. Serve immediately.
