W ith 211 proba-ble or confir-med cases of

dengue, the epidemic ofthis disease that began inJanuary in Saint Barthé-lemy is close to reachingthe numbers of an epide-mic in 2009, according toepidemiologists at theFrench National Instituteof Health Surveillance(INVS), which has a peakof 70 cases per week. Withmore than 60 possiblecases of dengue reportedin Saint Barth during thethird week of July, thelevel is almost the same.“The epidemic this year isof consequence but is not

exceptional,”says Dr. Syl-vie Cassadou,an epidemio-logist fromthe regionaloffice of theI N V S .“Consideringall of the pos-sible cases,we are five times over thethreshold of an epidemic.And this epidemic has las-ted a long time, but it isnot rare for an epidemic ofdengue to last a year,” sheadds. “And if you look atthe number of people whocame to the emergencyroom, those that were hos-

pitalized, and the numberof severe cases, then theseverity is not exceptionaleither.” After a peak inApril, the number of caseshospitalized has been twoper week on average, witha total of 15 people hospi-talized since the month ofJanuary. In their mostrecent bulletin, the lNVSindicates “the epidemichas intensified in a regularand moderate fashionsince late June. “This aug-mentation has been pro-gressive since the begin-ning of the year,” addsCassadou. The principalcause (75%) is the DENV-4 virus, which has notbeen seen in quite sometime in Saint Barthélemy,according to the INVS.

How To Stop The EpidemicFor specialists in diseasecontrol, the best way tostop an epidemic ofdengue is to prevent itfrom starting. "Once it isunderway, all you can dois control its amplitude,"argues Dr. Sylvie Cassa-dou. Control methodsremain the same: destroyany breeding grounds formosquitoes and eliminateany stagnant wateraround the house. "Forthe Aedes mosquito, thecarrier of the virus, is adomestic mosquito. Itneeds man to live, "shesays. "But the mostimportant thing during anoutbreak is to take perso-nal protective measuresby using repellents andwearing long clothing asmuch as possible. Andespecially keepinganyone sick with dengueunder a mosquito net. Sothat they do not spreadthe virus themselves: Amosquito that bites themcan then contaminateeveryone around them,”reminds Cassadou.

W hen a turtlecomes out ofits shell, it is

not hatching but“emerging,” as wasobserved on July 16 forsea turtles in Anse desCayes. Since June, ithas been time forhawksbill and greensea turtles to lay theireggs, a period that laststhrough November. InSaint Barth, there is anobservation networkcomprising guardsfrom the RéserveNaturelle and volunteers, whichreports the emergence of baby tur-tles on the island’s beaches. “Theturtles lay their eggs at the highestpoints of the beach, but certainnests are found close to hotels, tothe surprise of the employees,”

says Julien Le Quellec, chiefguard of the Réserve. The observations allow a betterevaluation of the sea turtle popu-lation, which are endangered andprotected, and since “the rate ofsurvival is only one egg in a thou-

sand that reaches theage of an adult turtle,”Le Quellec adds.“Some die, but thereare also predators andhuman activities thatcause this low rate ofsurvival.” Amongpredators, there are“dogs that disturb thenests,” so the Réservereminds us that dogsare prohibited on theisland’s beaches andask everyone to respectthe law. The Réserve has a spe-

Twin cities since 1978, SaintBarth and the Swedish city ofPitea are celebrating the 30thanniversary of their association.On this occasion, and to moregenerally celebrate their ongoingfriendship, a delegation fromSaint Barth left for Sweden onMonday, August 5. First stopStockholm, then Pitea. The dele-gation comprises members of theSaint Barth Friends of SwedenAssociation (ASBAS), as well asrepresentatives of the Collectivity:Micheline Jacques, president ofthe territorial council’s culturalcommission, who is making herfirst trip to Scandinavia; NilsDufau, who wears two hats, aspresident of ASBAS and vicepresident of the Collectivity. This

is the first time in three years thatSaint Barthélemy has not sent adelegation to Sweden, and the lasttime a group from Pitea came toSaint Barth was in 2011. “Theseexchanges are important,” feelsDufau. “So that these relation-ships don’t weaken, you need tohave human contact, especiallythrough sports and culture.” In Stockholm, the representativesof Saint Barthélemy met withmembers of the Friends of SaintBarth in Sweden Association,Sallskappet, which played a majorrole in improving the linksbetween Saint Barthélemy and itsformer mother country. “Evenbefore the twinning with Pitea,”recalls Dufau. “This associationwill celebrate its 50th anniversary

in 2014. For that anniversary, weare expecting a large group fromSweden in Saint Barthélemy forPitea Day next year,” he adds.Another meeting planned inStockholm is with Per Tingbrand,author of several historic booksabout Saint Barthélemy during theSwedish era. After which the del-egation from Saint-Barth willhead north to Pitea, a small fish-ing port on the Baltic coast.Where, on August 17 & 18, theywill take part in the city’s celebra-tion of its twin city, Saint Barth,the equivalent of Pitea Day held inSaint Barth in November with theGustavialoppet. This event will becelebrated in Sweden as in SaintBarth with sailing regattas andother festivities.

A dramatic turn of events onthe hotel scene in SaintBarth! With the announce-

ment on Wednesday, July 31, fromthe Hotel Management division ofLVMH, confirming their purchaseof the Saint Barth Isle de France.Bernard Arnaud’s luxury group hasbought the totality of the shares ofthis hotel on Flamands Beach, themajority of which had been held byAJ Capital Partners. This purchasewas right under the nose of the Oet-ker Group, which became a minorityshareholder last August, and hadsigned 15-year management contractwith the other owners, AJ CapitalPartners and Charles and MandieVere Nicoll. Didier Le Calvez,representative of the Oetker Group,confirmed in an interview threeweeks ago with The Saint-BarthWeekly, to be “very satisfied to be inSaint Barthélemy.” Today, he isnaturally “very disappointed.”

Last December, LVMH had approa-ched AJ Capital Partners and theAnglican vicar/hotelier Charles VereNicoll. Yet it was just in June, justover a month or so ago, that the Oet-ker Group was made aware of the

offer made by LVMH. If the saleprice remains secret, Le Calveznotes that Oetker made an equiva-lent offer to AJ Capital Partners andVere Nicoll to buy the hotel. Threeweeks ago, Le Calvez still had hope,but it was apparently too late as theoffer from LVMH had advanced.Losing the management contract forthe hotel, Oetker also sold its sharesin the Isle de France to LVMH. “Wewere compensated financially forour contract that was to last 15years,” indicates encore Le Calvez.“We have no issues with LVMH,”he adds.

By adding the five-star Saint BarthIsle de France, with its 39 rooms,suites, and villas, LVMH, via itsHotel Management division,confirm its ambitions in the luxuryhotel sector (see inset). BernardArnault’s group had expressed inte-rest in a hotel in Saint Barthélemy,but the rumors pointed in otherdirections. Olivier Lefebvre, head ofhotel activities and Eric Boonstop-pel, director of operations forLVMH Hotel Management, areexpected in Saint Barth.

LVMH HOTEL MANAGEMENTA world leader in the luxurymarket, the LVMH empire ofFrench businessmen BernardArnault, comprises more than 60brands, among which some ofthe most prestigious are LouisVuitton and Moët Hennessy,which create the initials LVMH.Dom Pérignon and Veuve Clic-quot champagnes, and leadingwines from Bordeaux such asChâteaux Cheval Blanc (red,Saint-Emilion) or Yquem (white,Sauternes) are also part ofLVMH. And in the worlds offashion, leather goods, and per-fumes: Dior, Celine, Loewe,Marc Jacobs, to name but a few.The LVMH Hotel Managementdivision opened in 2009, with aneye to properties in key destina-tions and to showcase theirluxury brands, such as spas byGivenchy and Guerlain. Andwith Eres, and Vuitton, availablein boutiques, possible synergiesare almost endless. LVMH’s firsthotel project Maisons ChevalBlanc, inaugurated in Courche-vel in 2006, with a second readyto open in the Maldives, and twoothers in development in Omanand Assouan, Egypte. And bythe end of next year, LVMHplans to open its flagship inParis—a five-star hotel in theformer Samaritaine, along theedge of the Seine. LVMH HotelManagement also comprises theMaison Blanche in Saint-Tropez,now called White 1921. TheHotel Management division ofLVMH is run by Patrick Houel,with Olivier Lefebvre as head ofhotel activities.

The month of August kicks offwith an exhibit by Graham DayGuerra at Eden Rock Gallery,marking the young Americanartist’s third visit to Saint Barth’sEden Rock Hotel. A graduate ofthe Rhode Island School of Design(RISD) with an MFA from YaleUniversity School of Art, the NewYork City-based Guerra has col-laborated with such figures of con-temporary art as Tom Sachs andMatthew Barney on the film seriesThe Cremaster. As artist-in-resi-dence at the Eden Rock in July2012, Guerra presented a showtitled Pairidaeza “a Persian gar-den”—the Persian word that is thebasis for “paradise,” with a seriesof diptyches focusing on the natu-ral beauty of the island's land-

scapes with images printed on sil-ver plates based on postcards fromthe 70s and 80s. “In Saint Barththere was a true vision of para-dise,” quips the artist. This time the inspiration for hisexhibit, “You Gave Me Mud And IHave Turned It To Gold,” (aphrase taken from French poetBaudelaire) is based on the island’scelebrity culture with images takenby paparazzi and posted to celebri-ty gossip websites (TMZ, Gawker,OMG! and the like).“If someone goes online to look forimages of Saint Barth, these arewhat you find first,” says Guerra.You see rapper Jay-Z snapping aphoto of Beyoncé on the beach.Lindsay Lohan trying on a newswimsuit at Louis Vuitton, or

Jessica Alba adjusting the top ofher bikini. Images stolen with atelephoto lens that the artist hasblown up used a traditional por-trait medium (encaustic) to pre-serve them and give them anuanced and corporeal surface,with an eye to pop art.

Does a new chef mean anew menu? What are theinnovations on the menuat Le Gaïac ? Sylvain Révélant: Ofcourse I am here to sug-gest something new. As aresult I have redone almostthe entire menu. If some ofthe items are the same,then the presentation, thesauces, and the accompa-niments are different.Among the new items arean appetizer of beet gazpa-cho with mustard cream,or a terrine of foie gras andsmoked bonito withpineapple-passion fruitcondiment. For maincourses, turbot quinoawith candied fennel andcoconut sauce, or a backof suckling pig with roastchickpeas, broad beans,and stewed tomatoes. Itwill take some time tocreate a new menu withinteresting pairings ofappropriate ingredients.

How do you envision the

gastronomical style at Le Gaïac? Will it bebased on French cuisine,or an opportunity to workwith more local products? Le Toiny is a Relais &Châteaux hotel. This thereis a responsibility to offerhigh-quality cuisine.French cuisine definitely,but using local products asmuch as possible: fruitsuch as coconut, pineap-ple, mango, and locallimes; vegetables fromgiromon to cristophine;and herbs such as localthyme to bois d’Inde, andpurslane. Without forget-ting fish and seafood, suchas mahi-mahi, wahoo, and“gros yeux,” which I thinkdeserve to be on the menu,as well as colas, red snap-per, and whatever ourfisherman has to offer. I inthe fall I hope to also startusing shellfish such asconch.

What are the principles ofyour cuisine?

I think about it a lot. I amvery open but what is onyour plate has to makesense. I will not put tenflavors in one dish, as Ilike people to know whatthey are eating. In SaintBarth, you need freshnessand a sense of lightness tothe food. And I like thatwhich is crisp, I like toplay with acidity, and I amusing lettuces and herbsfrom the organic green-houses at the hotel.

How do you define yournew role and responsibi-lity as chef at Le Gaïac ? Of course a chef shouldknow how to do every-thing in the kitchen. I amalso aware that the chefmust know how to managethe staff and keep themdynamic. I learned that inthe role of sous-chef atHélène Darroze andEdouard Loubet. The chefmust serve as an example,be present in the kitchenbut also be able to stepback. The chef alsomanages the ordering, andlooks for new ingredientsto add to the menu, all ofwhich takes time. That iswhy the chef needs aserious team— one that isenergetic and works welltogether.

You came to the islandwith your girlfriend,Marie Hue, who alsoworked with you HélèneDarroze in London. Nowshe is the pastry chef atLe Gaïac…Marie as also had a “star-red” career, having wor-ked at two-star restaurants

in London and Lyon. Shehas carte blanche, eventhough we discuss thingstogether. She also hopes towork with as many localproducts as possible, yetputting an accent on light-ness. Among the newthings are a chocolate-coconut combination and apassion fruit tart with spicesauce. Marie also has aweakness for homemadedesserts such as cookies,cupcakes, and cheese-cakes, ideal for the Sundaybrunch.

“WHAT IS ON YOUR PLATE HAS TO MAKE SENSE” Sylvain Révélant is the new chef at Le Toiny Hotel’s Le Gaïac restaurant, with Marie Hue aspastry chef.

Meet Sylvain Révélant:At the age of 32, SylvainRévélant already has astar-spangled résumé,having spent the last fouryears as sous-chef at thetwo-star Michelin restau-rant, Hélène Darroze inLondon. Prior to that hewas sous-chef at EdouardLoubet’s gourmet restau-rant La Bastide de Cape-longue, in the heart of Pro-vence, also a two-star win-ner. He has also worked inthe kitchens at the Relais& Châteaux hotel, Mas desHerbes Blanches (one-star), in the Luberon, aswell as at La Cote St-Jacques, a Relais & Châ-teaux hotel near Paris(three stars in the Michelinguide). Révélant earned hisPro Cuisine diploma atLycée Jean Monnet in Puy-en-Velay, in Haute-Loire,and his BEP-CAP Cuisineat Lycée Abel Boisselier inCusset in Auvergne. At LeGaïac, Révélant has repla-ced chef StéphaneMazières, who has set sailfor other horizons.
