The kebabs are marinated in yoghurt, cream, mint and coriander. The name Hariyali is a clever pun on the name of the Maharaja and on the colour of the kebab as “hari” also means green. Patiala Lamb Chops $18.95 The Royal house of Patiala (a royal family of Punjab) is famous for their game meat recipes. This is one of their specialties. The lamb chops are marinated overnight in yoghurt and some fine Indian spices and cooked over a slow fire. Lamb Khaibari Biriyani $18.95 This biriyani belongs to the Pathans, who were the most fierce mercenary warriors of the Pakhtun region of erstwhile India and has found its way to us through the Khaibar Pass. This rice preparation has the aroma of saffron. Bharatpur Duck Curry $22.00 The Maharaja of Bharatpur took great delight in his duck shoots at his private lake. This great curry is cooked with fresh coriander and spices. Sailana Jungli Mans $22.00 As the name suggests this is a recipe for the stranded big game hunter in the jungle. His Highness Raja Sir Dilip Singh ji of Sailana made this dish on one of his shoots. It has the bare spices such as salt, ghee and whole red chillies; only that which would have been easily available in the jungle. Kasmanda Raan $22.00 The royal Kasmanda State of Avadh was famous for its ‘Raan’ (whole leg of tender lamb). It is cooked with finely powdered spices and a hint of coconut. Jaisalmer Murg Mussallam (24 hour prior notice) $40.00 A whole chicken made with Indian spices, which has spiced cashew nut stuffing. The cooks of the royal family of Jaisalmer have been famous for the complex flavours in their cooking. This chicken is also called “Do Rukha” which means two tastes. The chicken tastes different from the stuffing, yet both combine to make an excellent whole chicken recipe. Appealing to the eye and palate. Banarasi Gobhi Mussallum $20.00 This preparation of cauliflower is famous of Banaras (Varanasi), the most holy and religious town of the Hindus. It is a whole cauliflower cooked in some special spices.
