25th annual South of the Border, Fun in the Sun chili cookoff proved to be just what it adver-tised – Fun in the Sun! It was perfect weather for cooking chili at Rocky Point, as the cooks began with a Bloody Mary competition during registration and set-up. Jose Flores, owner of the Boo Bar and sponsor of the cookoff, pro-vided each cook with a cookoff t-shirt. And of course there might have been a little tequila tasting throughout the day.

Approximately 200 tasters came to the beach, including the Director of the Esquela Regular #12, Diana Vega Flores, and three members of her staff who helped out with the raffle and passed out the ironwood chili pepper trophies. Esquela Regular #12 is a school for Special Needs children, and every dollar we donate to them is greatly appreciated and used wisely.

Anticipation...Happy March, chiliheads! Where has the time gone? The CASI membership is

now headed toward our busy time of year. The weather is cooperating a little more and the number of cookoffs are too numerous to mention.

The Rule Change proposal forms have been sent to the GPs and, during the next few months, there should be discussions in all the Pods as to which, if any, rules need to be looked at, refreshed or rewritten. I would like to caution everyone to please take the time to thoroughly review the rules you are considering changing. Proposing a change just for the sake of change doesn’t serve anyone in the long run. When we

get into semantics, nine times out of ten, a word change here or there doesn’t really affect the intent of the rule. I am asking that when you propose a change, make sure that it is a clarification or an expansion of an existing rule, or it is something that pertains to an issue that has arisen that wasn’t clearly addressed when you consulted the Rule book. May 15 is the deadline for the Great Peppers to submit proposed changes.

Also as we look forward, the 2107 Great Pepper’s Meeting will be held in Tyson’s Corner, Virginia, this year. This is the first time in many years that the meeting will not be held in Texas. The dates are September 8-9. This is going to be a very important year for us, and we need as many of the Great Peppers in attendance as possible. Please make every effort to attend. Not only will we be electing new board members, but we also have the above-mentioned Rule Changes.

We need the GPs there so they can attend the Friday rule change meeting. At this meeting, all the voting delegates will review every change that has been proposed so they can understand your intent and make an informed decision when it comes up for a vote. If your Pod submits a change, it is even more important that you are there to explain and answer questions about your proposed rule change. The Friday meeting is extremely important to the process, and discussions with other GPs will help you to decide whether to move the proposal for a vote in the meeting Saturday or to withdraw your proposed change.

We will advise you as we receive more details on accommodations, so you can stay as up-to-date as possible.

While we are on the subject of important business, I would like to take this time to speak about our Pod officers and the important roles they fill in our organization. When you make the decision to lead one of the CASI pods, you also accept the responsibility of becoming a CASI Official. As an official, you are our local representative for the city, state, or region. You are the face of CASI. Pod structure closely aligns with the Board structure. On the Board, the President, ED, Vice President, Secretary and Treasurer form CASI’s Executive Committee; the Great Pepper, Pepper Popper, Chili Scribe and Chili Penny form the Executive Committee of the Pod. These four officers are recognized by CASI as your Executive Committee. On the Pod level, the Regional and Area referees are also recognized as CASI officials.

It is the responsibility of each of these officials to carry out CASI business on the local level. Without your dedication, support and passion, we can’t exist. I understand that this is our hobby. I understand that this is for fun. I understand that we gather for fellowship and to help charitable causes.

But you must also understand that we are a national charitable organization, subject to all the rules and regulations of the federal authorities. On this side of the coin, CASI is a business staffed completely by vol-unteers. From the Board of Directors to the Pod Great Peppers and officers, we are all non-paid volunteers who believe we have something to contribute outside of cookoffs.

You serve on our committees, you chair our special events, volunteer your time and specific talents and share your thoughts and opinions. For this, we are truly grateful.

Members of the Houston, Pasadena, Piney Woods and Space City Pods gathered on Saturday, January 28 to provide meals to first responders work-ing the Super Bowl festivities in Houston. Spearheaded by Piney Woods GP Nancy Netardus, 15 members prepared and served over 1,000 Frito® pies that day.

It began the night before at the Stafford Elks Lodge #151, where they began all the prep work for the next day. They prepared eight gallons of broth, 1,100 two-ounce servings of grated cheese and 1,100 two-ounce servings of onions. On hand were 1,200 bags of Fritos® generously donated by Lays, 1,100 freshly baked chocolate chip cookies donated by Fuddruckers, 60 gal-lons of chili and financial contributions from the local Pods and members.

Saturday morning dawned bright and early with the group leaving in three trucks and a 15-passenger van at 5:30 am to make the trip to downtown Houston. After setting up for work, the volunteers began to bring the chili to temperature and assemble to-go containers for two meal times – 11 am and 6 pm. It was an amazing day, with an amazing number of first responders. If they had a badge and carried a weapon, we fed them.

During the morning meal, one of the HPD captains picked up 70 meals for her officers. While the team was setting up more containers, she came back with a man who talked to us and watched for about 45 minutes. Turns out this gentleman was the Director of Strategic Planning for the city of Houston. Part of his job is organizing volunteers to help feed the first re-sponders for large events in the city and when there are natural disasters. He asked if we would be interested in helping in the future. Proudly, CASI is now part of the volunteer groups for the city of Houston.

It was a long day but it was also very rewarding. The group headed back to the Stafford Elks Lodge to get off their feet and enjoy some well-deserved adult beverages. All told, the group prepared and served 1,000 meals.

The Events Committee is asking for applications to host the CASI National Open Championship, which may be held anywhere in the Continental United States. Thank you so much for the generous donation to our scholarship fund at the Regional Cookoff at the High Sierra. We have 14 seniors this year, and your generosity will help ensure that each student with a plan has the opportunity to continue their education. We have more students able to pursue a post-secondary education.

One of our former students graduated from the University of Texas at the Permian Basin in December. Two more are scheduled to graduate in May, and two more are in the second and third years of their gradu-ation plan. We have two students attending Sul Ross State University, one at Sam Houston State, one at Midland College, one at culinary school in New York City, and one at cosmetology school in Houston.

Your organization is definitely making a positive difference in the lives of our students.

Christopher Watkins is “King of (Adroit) Beers” Again

What goes great with beer? Just about anything of course, but how about 20 CASI cooks, plus their friends, supporters and patrons at the Third Annual Adroit Theory Brewing Company Midwinter Chili Classic? Cooks from North Carolina, Virginia, Mary-land and even a few Yankees from Pennsylvania came together to enjoy a great day of chili, charity and, well, beer!

Reigning champ Christopher Watkins of Yorktown VA returned to defend his title, but the field was not going to let the top spot go home with him so easily. As the results were announced, cook after cook was called, and many of the Mid-Atlantic’s heavy hitters came forward to claim their places. Yet when the final ticket was read, Watkins again reigned supreme, retained his title as the “King of Adroit,” and accepted tributes from fellow cooks as he sat atop a huge barrel of Adroit ale.

People’s Choice and beans winners also claimed ribbons and half growlers of Adroit Theory’s finest ales for their efforts. Congrats to first time cook Maria Dampman of Purcellville VA for her 3rd place People’s Choice with Mammoth Jack’s Kick-Ass Chili. In what has become an epic battle of the Mid-Atlantic PC heavyweights, Brian Michelle and Karen Ott of Chili Chili Bang Bang took the 2nd place PC spot. And in a convincing win, Mark McDowell of MacDaddy Conti-nental Chili took 1st place.

Thanks largely to these cooks, $724 was raised for our charity, the Lustgarten Foundation for pancreatic cancer research.

In the first Mid-Atlantic beans competition of 2017, Kit Rudd of Warrenton VA took a few of the lessons he learned back home in Texas and parlayed them into a 1st place finish. Big congrats to 2nd place finisher Christii Watkins of Gaithersburg MD and 3rd place Rob Spitler of Berryville VA.

Next up for Chili MAC is the Third Annual Mid-Atlantic Chiliheads Pod CCO at the Tin Cannon Brew-ing Company in Gainesville VA. And of course we are looking forward to seeing everyone in September at the 2017 GPM!

Tri-State Open and TiT Cookoffs Raise$20,000+ for Make-a-Wish North Texas

AMARILLO, TX – On Saturday, Janu-ary 14, the Tri-State Open Chili Championship raised over $20,000 to benefit Make-a-Wish North Texas.

This is the largest chili cookoff in the Texas Panhandle with 105 cooks from Arkansas, Oklahoma, and Texas. The community of Ama-rillo and the surrounding areas really got in-volved in the cookoff. The weather was a great day for chili – cold and misty – which brought out around 2,000 spectators for the event.

She Ebeling of Dimming TX won 1st, first-time cook Ashlyn Fisher of Bushland TX (granddaughter of Vickie Childers) placed 2nd, and Shannon Carrick of Amarillo TX took 3rd; all three are qualified for TICC 2017.

Rounding out the top ten on Saturday were Steve Lopez, Pampa TX, 4th; Tom Noe, Wichita Falls TX, 5th; Blake Carrick, Amarillo TX, 6th;

Russell Williams, Amarillo TX, 7th; Danisse Garcia, Amarillo TX, 8th; Clint Wooster, Wich-ita Falls TX, 9th; and Tiffany Messer, Amarillo TX, 10th.

New Mexico Men and Ladies Vie for State Honors

The New Mexico Men’s & Women’s State Championships were held on Saturday, February 4 in Hobbs, NM. After a little research by Dave Hewlett, we learned that there has not been a Men’s Championship since 1993, and there is no record of a Women’s Championship. We had 36 women and 31 men who attended.

The top winner for the men was Matt Jones from Lubbock, Texas. Taking first place for the Women was Carol Knight, Elgin, Texas. The New Mexico Men’s Champ was Marshall Filler (first time cook) from Hobbs, NM and for the Ladies Brandy Reid also from Hobbs. We were very honored and excited that Lisa Stone, the current TICC Champion, was in attendance and brought her crew with her. We cannot thank our Pod members, sponsors, judges, chili family and the Moose Lodge enough. We had a great turn out and everything ran smoothly. Thanks again and see you down the chili trail!

“Cookin’ for CASI” (CFC) was conceived more than three years ago as a way for cookoffs to raise funds to help cover CASI operating expenses and help reduce the likelihood of ever-increasing dues and assessments. Originally, we pictured one day out of the year when all CASI Pods could hold simultaneous CFC cookoffs to benefit our 501(c)3 organization; it was envisioned as a CASI-wide special event, not rooted in state sponsorship, jurisdiction or governance, so that CFC cookoffs did not count against state point totals.

However, two problems immediately became apparent. First, the sheer magnitude of identifying one day for multiple events around the country quickly proved to be impractical. And the rules do not provide an exemption allowing CFC events to be excluded from states’ total cookoff amounts, as determined by the Rules Committee when requested.

Their ruling was appropriate, in keeping with Rule VI. CASI OPEN CHAMPIONSHIPS, but it was clear to a majority of the Board of Direc-tors that keeping it “as is” would penalize states holding CFC events and actually discourage them from doing so.

However, the Great Peppers have approved an exemption, and no CFC event will apply to state totals, and all proceeds from CFC events will help cover CASI operating costs.

Cookoffs during the program’s first two years raised over $11,000, and our goal for 2016-17 is to raise $7,000 more. I hope that more Pods will take advantage of the rule change and promote “Cookin’ for CASI” soon.

GPs Approve Rule Change to Aid CFC

The New Mexico State Cookoffs in-volved three days of chili cooking, which required many judges.

As an incentive to increase judges' participation, the cookoff organizers packed a cooler full of goodies. Every time someone judged a round of chili, they got another chance to win the cooler and all its contents.

To help you advertise your pod cookoff we allow each pod to place one quarter-page ad in the Terlingua Trails each year, free of charge. This ad should run the month before your cookoff occurs.
