We are collecting stories and photos which will be organised into a keepsake document. How have you spent your time during this period? Gardening, learning a new skill, or cooking? Hello from MNCC staff

We’re starting to hear some positive news about the spread of COVID-19 slowing, however we need to continue to be mindful of restrictions and social distancing requirements until advised otherwise by Federal and State Governments.

Did you know?

Mother’s Day in Australia started in 1924 when Sydney woman Janet Heyden became concerned for lonely, forgotten aged mothers after the end of World War I. She successfully campaigned for local schools and businesses to donate gifts to the ladies.

We will celebrate Mother’s Day on Sunday 10 May, 2020. Colour in the picture and cut out for your mum.

Make a special treat for Mum

Hummingbird Cupcakes

You will need:

2 cups plain flour 1 cup self-raising flour 1/2 teaspoon mixed spice 1 teaspoon bicarbonate soda 1 cup firmly packed brown sugar 1/2 cup desiccated coconut 3 eggs, lightly beaten 1 cup vegetable oil 1 teaspoon vanilla essence 450g can crushed pineapple, drained 1/2 cup mashed banana Icing sugar mixture, for dusting. Method:

Preheat oven to 180c/160c fan forced. Line 12 hole, 1/3 cup-capacity muffin pan with paper cases. Sift flours, mixed spice and bicarbonate of soda into a bowl. Stir in sugar and coconut. Combine eggs, oil, vanilla, pineapple and banana in a bowl. Add egg mixture to flour mixture. Stir to combine. Spoon mixture into prepared paper cases. Bake for 20 - 25 minutes or until a skewer inserted in the centre of a cake comes out clean. Stand in pan for 5 minutes. Turn out onto a wire rack to cool. Serve dusted with icing sugar.
