The renaissance of Limassol over the last 10 years has once again transformed a city that is bustling with an energy that our forefathers would have been proud of. This historic city has re-established its character by rebuilding around the old foundations with an exuberance of maintaining the traditional that belongs to the very people that graces its streets. The advancement of the old city has to be accredited to the vision of our Mayor Andreas Christou. The Medieval Square that once upon a time was a regal attraction with the wedding of Richard the Lion Heart to Berengaria of Navarro in 1191 and a fortress over many decades, became a poor, run down area. It started with the development that came about from the brilliant vision of the Lanitis family that made an investment twelve years ago into the old Carob Mill. The Carob Mill used to be an old warehouse that processed and exported Carobs, also known as black gold that was a huge importance to Cyprus’s economy. The old spirit and character of Limassol has once again been reborn, with many little cobbled streets running off the main square like arteries from the heart, providing a flow of life that is being enjoyed by locals and visitors alike. The one tradition that remains a great trait of the Cypriot way of life is the simple gathering of lots of people in a public area that have come to eat, drink, observe and greet one another. Like the tradition of the village square, the natural outdoors brings people together, to enjoy, to reminisce and to cultivate. With the New Marina getting readied to open next year, the old city is promising to be the hot spot of Cyprus and an attraction that proves that the foundations of our history is forever eternal. The Butcher Boys are Two brothers, Giorgos and Dimidres, from a conveyor of second generation butchers, having been bought up through the business by their father.

The range of meats are broad and tradionally cut and includes naturally reared beef, pork and lamb as well as gourmet delicacies and game.

Giorgos is also a professional chef at Five Star Hotel and understands the importance

of quality meat, that is prepared and cooked correctly that guarantees the best in taste.

The Butcher Boys also provides meat that is to order, prepared, cut and ready for cooking.

You may also select your very own sausage and burger recipes or recipes that have been specially created by Chef Giorgos.

Our food would be without a good partner if it wasn’t for the great wines that we have selected at Ousia. We have a great range of local, new world and of course the classic wines from Europe. The understanding of wines is essential to the enjoyment of drinking a good wine. Wine has been with us since the dawn of civilization, some 7000 years and has followed the progress of human and agriculture development with a more scientific advancement over the last 90 years providing us with a more reliable and available pleasure.

The PRocess of makinG wineAfter the harvest, the grapes are taken into a winery and prepared for primary ferment. At this stage red wine making diverges from white wine making. Red wine is made from the must (pulp) of red or black grapes and fermentation occurs together with the grape skins, which give the wine its color. White wine is made by fermenting juice which is made by pressing crushed grapes to extract a juice; the skins are removed and play no further role. Occasionally white wine is made from red grapes; this is done by extracting their juice with minimal contact with the grapes’ skins. Rosé wines are either made from red grapes where the juice is allowed to stay in contact with the dark skins long enough to pick up a pinkish color.

To start primary fermentation yeast may be added to the must for red wine or may occur naturally as ambient yeast on the grapes or in the air. During this fermentation, which often takes between one and two weeks, the yeast converts most of the sugars in the grape juice into ethanol (alcohol).

There is a secondary process decreases the acid in the wine and softens the taste of the wine. Red wine is sometimes transferred to oak barrels to mature for a period of weeks or months; this practice imparts oak aromas to the wine. The wine must be settled or clarified and adjustments made prior to filtration and bottling.

ouR feaTuRed winesOur featured wines are amongst the finest that Cyprus has to offer with the production originating from 3 wineries; Tsiakkas Winery in Pelendri, Vasa Winery in Vasa Koilaniou and Vlassides Winery in Koilani.

The wines selected are to give our guests the opportunity to enjoy the wide range of characters from Cyprus.

Tsiakkas Winery is located in Pelendri village in Limassol region. Mr Costas Tsiakkas establised the winery in 1988 which he is running together with his wife Mrs Maria Tsiakkas. It owns 5 hectares of vineyards which are located at an altitude of 1000-1400m. The winery produces around ten wines and has a capacity of 170 000 bottles annually.

Vasa Winery is a family-owned traditional estate situated in the village of Vasa Koilaniou, on the slopes of the Troodos mountains, 25km from Lemesos. The 200 year old winery has been home to four generations of traditional winemaking and is run by the Argyrides family. The building also houses a wine museum.

Vlassides Winery is α family-owned winery with a tradition of excellence in red wine. They produce high quality wines from grape varieties Shiraz, Cabernet Sauvignon, Cabernet Franc, and Merlot. Τhe wines are produced from their own vineyards, in the area around Kilani village, south of Troodos, at an altitude of 700 – 1,100 meters. The Vlassides family first planted vines in the Kilani region in the 1800s.
