Rehab Hackney offre une belle sélection de plats mais aussi de boissons à base uniquement de produits sans gluten, sans sucre et sans matière animale. Idéal pour bruncher, ce petit havre de veganisme occupe les anciens locaux de Machine Numero 3, un bar à cocktails qui avait réhabilité cet ancien Lavomatic en un endroit branché de l’Est londonien.Au programme de Rehab, on trouve tout ce qu’il faut pour se refaire une santé après les excès des fêtes de fin d’année. Côté bar, on vous propose des Tonics – boissons médicinales à base d’herbes, de vitamines et de minéraux, idéales pour booster la vitalité – The Flu Fighter à base de curcuma, vinaigre de cidre, citron et sirop d’érable mais aussi des smoothies, des jus de fruits pressés, sans oublier les cocktails 100% vegan comme le Bloody Mary à base de vodka de quinoa, kimchi, jus de tomate et poivre noir.Côté cuisine, on trouve des bols pleins de bonnes choses comme les Mexican Bowls ou les Turkish bowls, des soupes maison, des pancakes à base de bananes et des tartines de tofu brouillé ou à l’avocat. Ingrédients pour 4 personnes :

Socca (crêpe à base de farine de pois chiches)• 150g de farine de pois

chiches• 450g d’eau• 1 c. à s. d’huile d’olive• 5 g de sel

Garniture :• 1 salade romaine

• 1 poivron rouge• 30g de tomates cerise• 1 fenouil• 1 concombre• 10g d’olives noires

dénoyautées• ½ botte de persil• ½ botte de basilic• 2 c.à s. d’huile d’olive• 1 jus de citron

Préparation de l’appareil à soccaMettre la farine de pois chiches dans un bol. Ajouter l’eau, le sel et l’huile d’olive. Mélanger. Laisser reposer à température ambiante pendant 1 heure.

Préparation de la garnitureDétailler la laitue en lanières de 1 cm. Couper le poivron rouge, le concombre et le fenouil en bâtonnets et les tomates en quar-tiers. Hacher le basilic et le persil. Porter les œufs à ébullition pendant 10 minutes, les refroidir sous l’eau froide et les écaler. Les couper en tranches de 1/2 cm. Égoutter les olives, le thon et les anchois et hacher grossièrement. Mélanger dans un bol.
