CODE AND SUPPLY REQUIREMENTS: ThisBarbecue must be installed in accordance with local codesand ordinances, or in the absence of local codes, with thelatest National Fuel Gas Code, ANSI Z223.1. IN CANADA:The Barbecue must include the Canadian Certificationmark and bilingual marking with bilingual instructions tocomply with the Canadian Interprovincial Gas AdvisoryCouncil (IGAC) requirements.
This appliance and its individual shutoff valves must bedisconnected from the gas supply piping system whentesting the system at pressures in excess of ½ psig.
This appliance must be isolated from the gas supply pip-ing system by closing its individual manual shutoff valvesduring any pressure testing of the gas supply system atpressures up to and including ½ psig.

PLANNING THE LOCATION OF YOUR PORTABLE BARBECUE
EXHAUST REMOVAL
If installed or used under a patio roof, the Cooking grid areashould be fully covered by a chimney and exhaust hood. Anexhaust fan with a rating of 1000 CFM (cubic feet per minute)or more may be necessary to efficiently remove smoke andother cooking by-products from the covered area. THIS UNITSHOULD NOT BE LOCATED IN A FULLY ENCLOSED AREAOF ANY KIND.
The Face of the unit is removable for servicing and Air Shutteradjustment (See Parts List).
INSURING PROPER COMBUSTION AIR AND COOLING AIRFLOW
You must maintain proper air flow for your Fire Magic Barbecueto perform as it was designed (Figure 1). If airflow is blocked,overheating and poor combustion will result. Make sure not toblock the 1" front air inlet along the bottom of the Face or morethan 75% of the Cooking Grid surface with pans or griddles.Note: The 1" front air space allows access to the Drip Tray.
ELECTRICAL OUTLETS
All electrical outlets in the vinicity of the Barbecue must beproperly grounded.
Installer and User Note: Keep electrical supply cords awayfrom all heated surfaces.

Fire Magic Barbecues are designed FOR OUTDOOR USE ONLY.DO NOT use this unit under unprotected flammable surfaces. DO NOT use this appliance inside a building,
garage, or any other enclosed area. It must not be used in or on recreational vehicles or boats.
IMPORTANT: This unit is NOT insulated and therefore during use it must be located with a minimum of 18" of sideand back clearance from unprotected combustible materials such as wood, plastic, or stucco with wood framing.

GAS SUPPLY REQUIREMENTS
GAS SUPPLY PLUMBING REQUIREMENTS
For natural gas or a household propane system. Rigid 1/2" or3/4” black steel pipe, or local code approved pipe is required toconduct the gas supply to the unit. An outdoor approved flexibleconnector (see Figures 2A-E) can be used to connect yourhousehold gas supply to the Barbecue. DO NOT use a rubberhose within the enclosure for the Barbecue unit. Apply onlyjoint compounds that are resistant to all gasses on all male pipefittings. Make sure to tighten every joint securely.
NOTE: If 1/2” Pipe is used with Natural Gas, it should not belonger than 20 feet.
SAFETY NOTE: An external valve (with a removable key) inthe gas line is necessary for safety when the barbecue is not inuse. It also provides for convenient maintenance.Natural gas carts are supplied with a Quick Connect Hose seeFigure 2C (can also be used with household Propane).
Quick connect coupling must be installed after a Gas shutoffvalve. The coupling socket requires a1/2 male pipe nipple fromthe gas supply. The hose connection at the cart is made at therear (see Figures 2A and 2C). (The connection point inside thecart Figure 2B, is for L.P gas only).
To Connect your Natural Gas hose
1. Pull socket sleeve back (Figure 2B).
2. Insert Plug and release sleeve
3. Push plug into socket until sleeve snaps forward
4. Open Gas Valve
5. Test for leaks using soapy water solution.
To Disconnect
1. Close the shut off valve.
2. Pull sleeve back and pull out plug (Figure 2C).

QUICK COUPLER OPERATION
To connect the Regulator/hose assembly to the LP gascylinder valve fitting: Press the Hand Nut on the Regulatorover the Acme thread fitting on the cylinder valve. Turn theHand Nut clockwise to engage the threads and tighten untilsnug. The use of pliers or wrench should not be necessary.
To disconnect :- Turn the Hand Nut counter-clockwise untildetached. (Figure 3a).
Important: Before using the Barbecue and after each time thecylinder is removed and reattached, check all connections forleaks. Turn off the Barbecue valves and open the main cylindervalve, then check connections with soapy water. Repair anyleaks before lighting the Barbecue.
CAUTION: Always turn the Propane cylinder main valve offafter each use and before moving the Barbecue and cylinder ordisconnecting the coupling. This valve must remain closedwhile the appliance is not in use, even though the gas flow isstopped by a safety feature when the coupler is disconnected.
Carefully inspect the hose assembly each time before the gasis turned on. A cracked or frayed hose should be replacedimmediately.
If the appliance is stored indoors, the cylinder must bedisconnected and removed. Cylinders must be stored out ofthe reach of children and must not be stored in a building,garage or any other enclosed area.
FOR YOUR SAFETY
a. DO NOT store a spare Propane Gas cylinder underor near this appliance.
b. NEVER fill the cylinder beyond 80 percent full.
c. IF THE INFORMATION IN “A” AND “B” IS NOTFOLLOWED EXACTLY, A FIRE CAUSING DEATH ORSERIOUS INJURY MAY OCCUR.
SAFE USE & MAINTENANCE OF PROPANE GAS CYLINDERS
CYLINDER AND CONNECTOR REQUIREMENTS ANDSPECIFICATIONS
a. Propane gas cylinders and valves must be maintained ingood condition and must be relaced if there is visible damageto either the cylinder or valve.
b. This Barbecue, when used with a cylinder, should beconnected to a standard 5 gallon (20lb.) Propane gas cylinderequipped with an OPD (Overfill Prevention Device). The OPDhas been required on all cylinders sold since October 1,1998to prevent overfilling.
c. Cylinder dimensions should be approximately 12 inches indiameter and 18 inches high. Cylinders must be constructedand marked in accordance with the specifications for PropaneGas Cylinders of the U.S. Department of Transportation (D.O.T)or the National Standard of Canada,CAN/ CSA-B339, Cylinders,Spheres and Tubes for Transportation of Dangerous Goods.
d. The cylinder must include a collar to protect the cylindervalve and the cylinder supply system must be arranged forvapor withdrawal.
e. The pressure regulator and hose assembly (Figure 3A)supplied with this outdoor cooking gas appliance must be used.Original and replacement pressure regulator and hoseassemblies must be those specified by the Robert H. PetersonCo. for connection with a cylinder connecting device identifiedas Type I by the Harmonized Standard ANSI Z 21.58 and CGA1.6-M95-1995 with Addenda ANSI Z 21.58a -1998 and CGA1.6a - M98.
f. Propane gas cylinder valve must be equipped with a cylinderconnection coupling device, described as Type I in HarmonizedANSI standard defined in paragraph e. above. This device iscommonly described as an Acme Thread Quick Coupler.
g. Your Propane Gas Cylinder may be equipped with a Type IIQuick Disconnect (plug-in) Coupler (Figure 3B). An approvedregulator /hose assembly for this type of coupling is availablethrough your dealer from R.H. Peterson Co.

Monarch Gourmet Unibody Barbecues are equipped with fuelorifices for Natural gas, unless otherwise indicated. To usewith Propane gas, you must install smaller orifices to avoidhazardous overheating.
For Monarch 2B Barbecues , the proper orifice size for NaturalGas is #45 (drill size), for Propane (LP) Gas is #56 (drill size).
Hazardous overheating will occur if a Natural Gas orifice isused with Propane Gas. If you are not sure, or if an orificechange is necessary, refer to the instructions included with thereplacement orifice which is packed with the Barbecue.
IF YOU ARE NOT SURE YOU HAVE THE CORRECTBARBECUE BURNER ORIFICE SIZE, OR CONVERT YOURBARBECUE TO A DIFFERENT GAS .
a. Remove the Cooking Grids and Flavor Grids from theBarbecue.
b. If the gas supply has been connected, make sure the BurnerValves are in the “Off” position. Then pull the Valve knobs fromtheir stems. Use a Phillips screwdriver to turn the Face FastenerScrews counter clockwise to release the Face and remove itfrom the Barbecue. Retain the screws and finish washers forreattaching the Face.
NOTE: Carefully lift the face away from the frame. The SparkGenerator for the ignition system is attached to the inside ofthe face panel. The Spark generator Knob need not be de-tached, but the wires must be unplugged from the generatorbefore the face is removed.
c. Using a flat blade screwdriver, pry the burner retaining clipfrom rear wall of the barbecue frame (see Figure 4). Removethe burner by; A) Pulling it to the front of the barbecue, B) Liftthe far end out of the notch, C) Pull the burner away from themanifold, taking care not to lose air shutter and spring, whichmay become detached when the Burner is removed.
d. Using a 3/8" socket, remove orifice from the orifice holderon the burner manifold (see Parts List, Page 4) and check thenumber stamped on the face (see "Barbecue Orifice Size"above). Repeat for each burner as necessary.
e. If your barbecue is not orificed for the gas supply you planto use, replace them with the orifices supplied with the barbe-cue or orifices supplied by your local dealer.
IF YOU ARE NOT SURE YOU HAVE THE CORRECTBACKBURNER ORIFICE SIZE OR CONVERT YOURBARBECUE TO A DIFFERENT GAS .
1. Remove the Backburner assembly as follows (Figure 6);a. Remove the Backburner cover if in place.b. Unplug the Ignitor wire from the electrode.c. Remove the mounting screw from the mounting bracketat the left end of the Backburner assembly.d. Carefully pull the left end of the backburner assemblyforward, keeping it against the left side of the oven, untilthe right end of the burner clears the orifice.
2. Check the size stamped on the orifice;(#40 Nat.Gas or #53 L.P.Gas)
3. If an orifice change is necessary, use a 3/8" hex nutdriveror appropriate wrench or pliers to replace the orifice.
4. Replace the Backburner assembly, following step a.through d. above, inreverse order.
5. Re-check the airshutter instructionslocated on Page 9.

f. After checking orifice drill size or replacing the orifice, in-stall the Air Shutter Spring and the Air Shutter over the orificeholder fitting, between the Burner and the Burner Manifold, inthe order and position shown in Figure 5.
g. Replace the burners in the holding groove, ensuring thatthe brass orifice and orifice holder fittings project deeply intothe Burners. Replace the burner retaining clips.
BACKBURNER FUEL ORIFICE
If your Barbecue includes a Backburner it is equipped witha Natural Gas orifice unless otherwise indicated. To use PropaneGas, you must use a smaller orifice. The proper orifice forNatural Gas is #40 (drill size). The proper orifice for PropaneGas is #53(drill size)

The Barbecue Regulator, located behind the Front Panel (Face),must be set for the type of gas used to fuel the Barbecue. Tocheck the regulator setting remove the cap in the center of theregulator (Fig 7A). Holding the cap vertical (see Fig 7B), theletters at bottom of the plastic stalk should indicate the gastype that the reguator is currently set up for. If regulator is notset for your gas type, remove stalk from cap, invert and replaceinto center of cap. Replace cap on regulator, screwing downuntil snug. Figure 7A Figure 7B

INSTALL THE FLAVOR GRIDS
Place the Flavor Grid directly on the Burners, making sure thelegs (see Figure 10) rest on the burners. Center the Grids overthe Burners with the open side up. This allows heat from the
Burners to be evenly distributed throughout the cooking area.Fire Magic Flavor Grids are Stainless Steel and will heat andcool quickly, making your Barbecue very responsive to thechanges you specify in grill temperature. They are rustresistant and may be cleaned with standard oven cleaners.
ADJUSTING YOUR BARBECUE
IMPORTANT: This appliance may not light or heat evenlyor cook properly unless the Air Shutters are adjustedfollowing installation (See "Air Shutter Adjustment" below).
Burner Air Shutters are easily accessed by removing the FrontPanel (Face). The Air Shutters are located at the front of theBurners behind the Face (see Parts List). The Air Shutter hasa small dimple (see Figure 9), which allows it to lock intonotches in the burner face. This prevents the air shutter frommoving. Close the air shutters by turning the tabs to a verticalposition. (Figure 9). Light your Barbecue in accordance withthe lighting instructions (Page 10) and burn for 2 minutes withthe valves on high and the oven open.
AIR SHUTTER ADJUSTMENT
After burning for 2 minutes, open the Air Shutters until theflames lift off, or appear not to be touching the Burners. Thenbegin closing the Air Shutters until the flames appear to burnwhile touching the Burner Ports (Figure 9). You may then seeshort yellow tips on the flames. If flames are a lazy yellow,open the Air Shutters until the flame is blue with yellow tipping.
NOTE: Barbecues in some installations achieve a betterair/gas mixture and will ignite quicker if the valve is firstturned beyond High to Medium or Low for lighting.

ADJUSTING YOUR BARBECUE
REATTACHING THE FACE & IGNITOR WIRES
Pull the Drip Tray out far enough to support the Face in thevertical position. Lean the Face forward and plug the 2 wiresinto the terminals on the Spark Generator (Figure 10). Thewires can be plugged into either terminal.
IMPORTANT: Test the Electrodes for spark before securingthe Face to the frame (see Page 12 for Battery Replacement).Place the Face on the Frame so the Front Lip of the Facecovers the lip on the frame.
ADJUSTING THE FLAME HEIGHT
The large knobs on the Face of the Barbecue control the Valvesand adjust flame height. The first position is “High,” the second“Medium” and the final “Low.” Flame height can also be setanywhere between the High, Medium and Low settings for allcooking requirements and methods.
Height of the flame with a valve in low position may be furtherregulated by means of a small adjusting screw in the center ofthe valve stem. This screw is accessible by removing theplastic valve knob which pulls straight off the end of the valvestem.

NOTCHIMPORTANT: It is normal for the Backburner to smoke whenit is burned for the first time. Burning your Backburner on highfor approximately 15 minutes will eliminate the smoking.
BACKBURNER AIR SHUTTER ADJUSTMENT
a. The Air Shutter on your Backburner is preset at the factory.However, due to atmospheric conditions and different gaspressures, it may be necessary to adjust the Air Shutter toobtain a proper burn.
b. First remove the Backburner cover, then loosen the AirShutter screw (See Figure 11). It may be necessary to usepliers to turn the Air Shutter. Light the Backburner. With thecontrol knob on "HIGH" adjust the Air Shutter to have a blueflame that is not lifting off the Burner (It may also have slightlyyellow tips).
c. Tighten the Air Shutter adjustment screw.

FOR AUTOMATIC LIGHTING:
1. Open the lid.
2. Turn all Barbecue gas valves (including the Backburnervalve where fitted) to the “OFF” position.
3. Turn on the gas at the source outside of the Barbecueenclosure.
4. Remove the Backburner cover if you are lighting theBackburner.
NOTE: DO NOT turn on more than one valve at a time foreither automatic or manual lighting. Adjacent Barbecue Burnerswill cross-ignite.
5. Depress burner gas valve knob or the Backburner knoband turn to “HIGH” then immediately use the Spark Generatorto ignite the burners(see Figure 14). The Burner should light.NOTE: USE LEFT IGNITOR FOR LEFT OR CENTERBURNERS; USE THE RIGHT IGNITOR FOR RIGHT ORBACKBURNER
CAUTION: If the Burners do not light within 5 seconds, depressthe knob and turn the valve to “OFF”. WAIT 5 MINUTES beforerepeating step 5. If the Burners still do not light after severalattempts, refer to the instructions for manual lighting.
LIGHTING INSTRUCTIONS
FOR MANUAL LIGHTING:
CAUTION: Always wait 5 minutes for gas to clear afterany unsuccessful lighting attempt.
1. Follow steps 1 through 4 above.
2. Insert either a burning long-barrel butane lighter, a burninglong-stem match or a burning match held by the match holder,
attached to the drip tray (Figure 13) through the Cooking Gridsto the Burners below the Flavor Grid (Figure 14). ForBackburners, hold the flame against the perforated materialnear the Backburner.
3. While holding the match or lighter flame next to the Burner,depress the appropriate Valve knob and turn it counterclockwiseto the “HIGH” position. The Burner should light.
4. If the Burner does not light, IMMEDIATELY DEPRESSthe knob and turn the valve to “OFF”. WAIT 5 MINUTES beforerepeating steps 2 through 4 of the Manual lighting instructions.
NOTE: Barbecues in some installations achieve a betterair/gas mixture and will ignite more quickly if the valve isfirst turned beyond High to Medium or Low for lighting.
REMEMBER: FOR SAFE MANUAL LIGHTING, PLACE ABURNING MATCH OR BUTANE LIGHTER BESIDE THEBURNER - THEN TURN ON THE GAS (Figure 12).
Read entire instructions before lighting.Follow the instructions each time you light your Fire Magic Barbecue or Backburner.
IF YOU SMELL GAS
1. Shut off gas to the appliance.
2. Extinguish any open flame.
3. Open lid.
4. If the odor continues, immediately call your gassupplier or fire department.

Each time you use your Barbecue, make sure that:
1. The area around the Barbecue is clear of flammablesubstances such as gasoline, yard debris, wood, etc.
2. There is no blockage of the air flow through the vent spacelocated below the Face of the unit.
3. When using Propane gas:
a. The special ventilation openings in the enclosureare kept free and clear of debris.
b. If connected to a Propane cylinder, the rubber hoseattached to the Regulator is carefully inspected beforeeach use.
c. The Propane cylinder, Regulator and rubber hoseare installed in a location not subject to heating above125° F (51° C).
4. The Burner flames burn evenly along both sides of eachBurner with a steady flame (mostly blue with yellow tipping).See “Air Shutter Adjustment” below. If Burner flames are notnormal, check the orifice and Burner for insects or insectnests (see Page 8 for Burner removal and replacement).
5. The in-line gas valve or gas cylinder valve is always shutoff when the Barbecue is not in use.
6. The Drip Collector hole is clear and unobstructed. Excessivegrease deposits can result in a grease fire.
DRIP COLLECTION SYSTEM
The Drip Collector in this Fire Magic Barbecue is part of theunit’s main frame, and is located below the Burners. The DripCollector has one hole which allows excess drippings to fallthrough during cooking while separating the firebox from thedrip tray.
The Drip Collector allows you to brush or scrape residue fromthe Barbecue inner liner into the Drip Tray. Regular cleaning ofyour Barbecue interior with oven cleaner or Fire MagicFoaming Barbecue & Grill Cleaner*, following manufacturersinstructions, will prevent grease fires.

OPERATNG YOUR BARBECUE
To extend the life of your Fire Magic Barbecue, follow thesesteps prior to cooking:
1. Begin by heating the unit at a normal cooking temperaturefor several minutes.
2. Then open the Control Valves to the “High” setting to burnoff residue remaining from prior use.
3. When the Barbecue has heated sufficiently, set heat to thedesired cooking level.
4. When using a smoke oven, closing the cover during thepreheat period will accelerate the preparation process. DO NOToperate unattended at High Flame as cooking temperatureswill quickly be exceeded.
Using Your Optional Backburner
Rotisserie cooking with the Backburner is accomplished withoutuse of the main grill Burners. The cooking grids are removedand if large cuts are to be barbecued, the Flavor grids may beremoved to allow more clearance from the spit rod to the firebox. Aluminum Foil or a baking pan may be placed over themain Burners to catch excess drippings from your cooking.
a. Remove the Backburner cover. (Figure 18)
b. Place your meat on the rotisserie spit rod. Make sure it iscentered on the spit. Refer to the instructions provided withyour Fire Magic Rotisserie and counter balance.
c. Follow the lighting instructions on page10
d. Allow the Backburner to preheat for approximately 10minutes on "HIGH" setting.
e. Place the spit rod with the meat into the rotisserie and turnon the motor.
f. Use a standard roasting guide to estimate the length of timefor your meat. A meat thermometer may also be used to tellwhen your favorite cuts are cooked to your liking. When testingtemperatures with a thermometer, turn off the rotisserie motorand turn the Backburner on "Low". This will keep the meat fromover cooking on one side
g. Operate your Backburner with the oven closed. This willsimulate an oven effect and help your meat cook faster. Theconstant rotation of the spit assures even cooking and maximumretention of juices.
h. On large cuts of meat or whole turkeys, it may be necessaryto reduce the heat from your Backburner. Cooking your food atlower temperature for a longer period will keep the outer surfacefrom burning, while cooking the interior of your food thoroughly. `

SMOKER TRAY (WOODCHIP BOX)
Your optional Backburner is supplied with a woodchip box (seeParts list Page 5). The woodchip box is designed to sit on topof the Backburner assembly on the heat deflector. This box isdesigned to be used when the Backburner is in use. To use thebox, just fill it with your favorite woodchips and set it in place.If you wish to refill the woodchip box when it is hot, you maycarefully handle it using a pair of pliers. You must be verycautious not to get burned.
FLAVOR FROM WOOD CHIPS OR CHARCOAL
Convenient Grilling Chips* are sold in several different popularwood types. These chips are pre-moistened and sealed incans. To use follow the instructions on the side of the can.After use there is no mess to clean up, just discard the can ofashes after there is no longer any wood smoke aroma. GrillingChips* may be purchased through your local dealer.
You may also add wood chips, wood chunks or the naturalwood charcoal of your choice to the Flavor Grid. We recommendplacing wood outside the direct cooking zone or wrapping it inperforated aluminum foil. Soaking wood before use will slowburning and increase smoke flavor. Wood and charcoal ashwill remain in the Flavor Grid after use. The Grid can be easilyremoved and cleaned when the unit has fully cooled.
DROP SHELF OPERATION
A. To raise the shelf, grab the lower part of the shelf and raiseto the horizontal position. Allow the flange near the Barbecueto drop down and lock the shelf into position (Figure 17A).
B. To lower the shelf, grab the middle of the shelf. Lift andallow the end of the shelf to rotate down (Figure 17B).

USING THE COOKING GRILL LIFTER
Hold the Grill Lifter by gripping the center section with theprongs pointing down (Using oven mitt or heavy glove if thegrill is hot). Insert the notched end of the Grill Lifter into thegrill, in front of the midway point (front to back- Figure 18A)and central (left to right-Fig 18B). Twist the grill lifter (clockwiseor counter-clockwise) so the handle is parallel to the grill rods.This “seats” the spiked end of the Grill Lifter between two rodsenabling you to safely lift the grill out of the barbecue. Liftslowly and adjust the Grill Lifter if necessary to balance.

WARMING RACK (OPTIONAL)
Your warming rack (Figure 19) is packed separately with thebarbecue. It is assembled quickly and easily following theinstructions provided. When complete, just position it assuggested to enjoy the benefits this useful accessory affords.
REPLACING THE SPARK GENERATOR BATTERY
1. Remove the rubber cap by depressing and turning the capcounterclockwise and lifting away the cap.
2. The battery is now accessible for removal and replacement.Make sure that the battery spring is re-installed withthe new battery, and the battery is negative (-) end up.
3. Replace rubber cap by pressing in and turning it clockwiseuntil it locks into place
NOTE: DO NOT ATTEMPT TO TURNTHE PLASTIC BEZEL RING. DOINGTHIS MAY BREAK THE BEZEL RINGAND DAMAGE THE IGNITOR

1. Remove the cooking grids from your barbecue.
2. Place the rotisserie motor with the bracket into the slot onthe right side of your barbecue, making sure the knob andcord are facing away from the barbecue (Figure 21).
NOTE: The Elite Rotisserie Motor (No. 3600-05) has the motorbracket pre-installed at the factory.
3. Place the spit bracket into the slot on the left side of yourbarbecue with the offset out.
4. Place the pointed end of the spit rod into the motor. Thegroove in the handle end of the spit will rest on the spitbracket .
Note: The Counter Balance, which is included with yourRotisserie Kit, should be used to balance the load on yourrotisserie and prolong the life of your motor. Heavyunbalanced meats can stress the rotisserie motor and maycause motor failure.

1. Place meat on the spit in the normal manner. Center andbalance as carefully as possible.
2. Tighten the screws on the prongs, chicken holder or turkeyholder to secure the meat.
3. Hold the spit rod at each end and lift.Do not grip the rod. Let the rodrotate so the heavy side of the meathangs down naturally.
4. Turn the counterbalance on the spitso the counterbalance rod andweight point upward, or oppositefrom the heavy side of the meat.Tighten the counterbalance rod inthe hub against a flat surface of thespit rod to secure.(Figure 22)
5. Loosen the thumb screw and slidethe weight along the counterbalance rod to balance themeat. Since meats are not a uniform shape, it may not bepossible to achieve a perfect balance. Properly balancedmeat should not rotate when you hold the spit rod looselyby the ends.
6. Make sure the counterbalance does not strike thebarbecue frame when the rotisserie is started.

PROTECTING THE WHOLE BARBECUE FINISH
Barbecue covers* will protect the finish and extend the life and appearance ofFire Magic Barbecues . The covers are designed to protect the finish againstscratches, corrosion and oxidation. Each cover has been cut and sewn by handto fit a particular smoke oven model. Flaps extend from the sides and back.

CARE OF STAINLESS STEEL COMPONENTS
Your Barbecue may have a stainless steel oven and front panel.The following care instructions will keep your unit looking andworking like new. Stainless steel components are constructedof the finest prime grade type 304 stainless steel. Meticulousattention has been given to maintain the attractive finishthroughout the manufacturing process. Like the stainless steelused in commercial kitchens, your Barbecue requires regularcleaning and occasional buffing to maintain its bright, cleanappearance.
Deposits of dirt and grease can be removed easily with FireMagic Foaming Barbecue and Grill Cleaner* . Depositsshould be removed before they are allowed to bake onto thefinish. To remove more stubborn deposits, use a scouring padrecommended for stainless steel. Be sure to always rub in thedirection of the polishing lines (Figure 24). Oven cleaner maybe used, according to manufacture's instructions, to removecooked-on food deposits. Special cleaning agents and polishingpads recommended for stainless steel are available at yourlocal Barbecue dealer, hardware store or supermarket.
CAUTION: Never use ordinary steel wool or steel brushes onstainless steel. Tiny particles left behind may rust and stain thefinish. Abrasive pads recommended for restoring the grain instainless steel will, over a period of time, scratch or dull thesurface of glass or porcelain-coated products.
BURNER MAINTENANCE
Fire Magic Burners are constructed of heavy-duty cast stainlesssteel and have a lifetime warranty (cast brass and porcelainizedcast iron Burners are also available). Once a year inspect theBurners to insure that the ports are clear of debris. If necessarya drill with a 3/32" drill bit can be used to clean out the brunerports
COOKING GRIDS
Fire Magic Cooking Grids come in two types: Stainless Steeland Porcelain-Finished Cast-Iron Grids. Both are finished witha special matte (satin) finish. This matte-finish provides a morestick-resistant cooking surface that makes outdoor barbecuingeasy and enjoyable. The Stainless Steel Cooking Grids aremade of type 304 stainless steel, and the coating on thePorcelain-Finished Grids provides a cooking surface thatresists corrosion and increases cooking grid durability,providing years of cooking enjoyment. For best cookingperformance, the wide side of the grid bars should face up.Follow the simple Care and Maintenance steps after every use.
CARE AND MAINTENANCE
(Stainless Steel Grids)
To maintain your Stainless Steel Cooking Grids, werecommend lightly brushing the grids after use with a brass orstainless steel wire brush. Before use, brush again if necessaryand spray a light coat of vegetable oil over the cooking surface.Discoloration or stubborn food particles can be removed witha heavy-duty abrasive or stainless steel scouring pad. Grillscan also be washed in an automatic dishwasher or cleanedwith strong cleaning solutions, including oven cleansers. Wedo not recommend ordinary steel or wire brushes, which mayleave tiny metal particles on the grids which causediscoloration, but not permanent damage.

A spray coat of vegetable oil and light brushing with a brass gridbrush before and after use is all it takes to maintain cookingreadiness and ensure long life.

CRANBERRY SAUCE
5 cups cranberries - fresh or frozen 11/2 -2 cups sugar - adjust tartness to your liking 1 cup apricot jelly 1 cup orange juice
1. Combine all ingredients in a heavy gauge sauce pot. 2. Bring to a gentle boil for 10 - 20 minutes. 3. Adjust sweetness or tartness with sugar. 4. Remove from heat. Serve warm or cold.
