extra easy buttery biscuits

INGREDIENTS:

250g SOFTENED BUTTER

140g CASTER SUGAR

1 EGG YOLK

2tsp VANILLA ESSENCE

300g PLAIN FLOUR

Preheat oven to 180C / fan 160C / gas 4

Mix all of the butter and sugar together with a wooden

spoon, and when it’s not too lumpy break in one egg yolk

and add the vanilla essence. Beat the mixture together, then

sift your fl our in , stirring so it’s all nicely combined. When

the dough is smooth and a pale creamy yellow, fl atten with

a rolling pin, and cut out your favourite shapes. Bake on a

greased sheet for 12 minutes.

Once you’ve taken your biscuits out of the oven and left

them to cool, you can decorate them however you like. Use

sprinkles, icing (just blend icing sugar with a little hot water,

and a drop or two of colour), or fl akes of nuts and chocolate.

If you have a steady hand and good sugarcraft skills, you can

even write your name.
