Oven-Baked Reuben Casserole

When it comes to classics, a good ol’ Reuben sandwich never fails to hit the spot. Seriously, there isn’t much that grilled-to-perfection,

gooey sandwich can’t cure, but it can be rather a hassle to make ourselves, so we decided to come up with an easier way to whip up a big batch that’ll feed a crowd: a reuben casserole!

Filled with rye bread cubes, your choice of pastrami or corned beef, sauerkraut, pickles and Thousand Island dressing, this casserole tastes just like our favorite hot sammy, and we didn’t have to stand over the hot stove to make it! Next time you’re having people over, make this casserole and step back – everyone will go wild for it!

Ingredients: Serves 6-86 slices rye bread, divided1 pound pastrami or corned beef, thinly sliced or shaved1 (14.5 oz.) can sauerkraut4 cups Swiss Cheese, shredded1 cup dill pickles, chopped1 cup milk1/3 cup Thousand Island dressing1/4 cup mustard3 large eggs2 teaspoons caraway seeds

DirectionsPreheat oven to 350º F and lightly grease a 9×11-inch baking

dish with butter or non-stick spray.Take four pieces of rye bread and cut them into cubes. Place

remaining bread in food processor, pulse until you’ve got fine breadcrumbs and set aside.

Spread cubed bread out along the bottom of your baking dish, then cover with 1/2 of pastrami. Top beef with sauerkraut, pickles, half of caraway seeds and 2 cups cheese.

Cover with remaining beef, caraway seeds and cheese.In a medium bowl, whisk together milk, salad dressing and

mustard, then beat in eggs until combined.Pour wet ingredients evenly over the casserole, then top

with breadcrumbs.Place baking dish in oven and bake for 40-45 minutes, or

until mixture is bubbly, top is browned and center is set.Remove from oven and serve hot.Recipe adapted from Cheese Cutters Corner

Cazenovia Public Library and Izaak Walton League Continue

Young Naturalists Program Series The Cazenovia Public Library will partner with the Izaak

Walton League to present the Young Naturalists program series for children ages seven and older. The engaging, hands-on programs are designed to get young people interested in science and connected to conservation and outdoor recreation. Participants will become citizen scientists and learn about local ecology through activities, art projects, and books. The next session, titled “Ready, Set . . . Sleep,” will be held Monday, November 19 at 4:30 pm in the Community Room.

The Izaak Walton League was founded in 1922 by 54 avid anglers dedicated to conserving outdoor America for future generations. The environmental organization is named after Izaak Walton, the 17th century author of The Compleat Angler—a classic book about the art and spirit of fishing. The League is one of the first conservation organizations to set forth an aggressive course of action to defend wild America by changing public policy.

During the program, participants will learn about hibernation and create a fun fall craft to take home. Registration is requested. This program is sponsored by the Friends of the Cazenovia Public Library.

DEAD DIVAS COMING BACK TO CAZ

Musical Event to fund scholarship Catherine Cummings Theater at Cazenovia College will

be presenting a reunion concert of DEAD DIVAS, a tribute to the legendary ladies of song on Saturday November 24, 2018 from 8:00-10:00 pm featuring local talent covering favorites from Aretha Franklin, Eva Cassidy, Billie Holliday, Whitney Houston, Cass Elliot, Natalie Cole and more.

“The idea to do a benefit concert centering on great female vocalists who have passed away was tossed around by my friend Robin Gara and I, and we decided to give it a try 4 years ago. The last DEAD DIVA concert turned out to be a huge success and a fun night, so we wanted to bring it back,” said Colleen Prossner, Theater Operations Manager at the Catherine Cummings Theater. “The idea was to create great music…a celebration of song and dance with live performances as a way to honor Brian’s memory. Hosting this year’s event will be Brian Gara, Jr., son of Brian Gara, and Charlie Wason, a life-long friend.

The two-hour show will feature many vocalists from the last Dead Diva concert including Carmine Chavarria, Lesley Koerner Lepine, Maggie Dougherty, Brenna Dougherty, Colleen Prossner, Gerry Wason, Brian’s wife Robin, Grace Gara, Faith Gara, Brian’s sister Bridget Stone and nieces Hayley, Hanna, and Lindsey Stone from Rochester, and Jazz dancer Hannah Wallinger from Connecticut. The live band features Tom Witkowski on piano, Jason Jeffers on drums and Sean Peters on Bass. Brian is remembered for his love of music, dedication to his family and community, and coaching hockey and baseball.

hockey player, who exemplifies the qualities that Brian promoted – a sense of humor, passion for hockey and commitment to school and community. Brian R. Gara (1964-2013) was a 1982 graduate of Cazenovia High School and captained the ice hockey team that claimed Cazenovia’s first Sectional title. His passion for hockey led him into a remarkable coaching career including programs such as Cazenovia Youth Hockey, Center State and the Syracuse Stars, winning three state titles. Brian was inducted into the Cazenovia Lakers Athletic Hall of Fame posthumously in 2016.

very early October. The date of Thanksgiving was probably set by Lincoln to somewhat correlate with the anchoring of the Mayflower at Cape Cod, which occurred on November 21, 1620 (by our modern Gregorian calendar--it was November 11 to the Pilgrims who used the Julian calendar).

There are only two contemporary accounts of the 1621 Thanksgiving: First is Edward Winslow’s account, which he wrote in a letter dated December 12, 1621. The complete letter was first published in 1622.

Our corn [i.e. wheat] did prove well, and God be praised, we had a good increase of Indian corn, and our barley indifferent good, but our peas not worth the gathering, for we feared they were too late sown. They came up very well, and blossomed, but the sun parched them in the blossom. Our harvest being gotten in, our governor sent four men on fowling, that so we might after a special manner rejoice together after we had gathered the fruit of our labors. They four in one day killed as much fowl as, with a little help beside, served the company almost a week. At which time, amongst other recreations, we exercised our arms, many of the Indians coming amongst us, and among

the rest their greatest king Massasoit, with some ninety men, whom for three days we entertained and feasted, and they went out and killed five deer, which they brought to the plantation and bestowed on our governor, and upon the captain and others. And although it be not always so plentiful as it was at this time with us, yet by the goodness of God, we are so far from want that we often wish you partakers of our plenty.

The second description was written about twenty years after the fact by William Bradford in his History Of Plymouth Plantation. Bradford’s History was rediscovered in 1854 after having been taken by British looters during the Revolutionary War. Its discovery prompted a greater American interest in the history of the Pilgrims. It is also in this account that the Thanksgiving turkey tradition is founded.

They began now to gather in the small harvest they had, and to fit up their houses and dwellings against winter, being all well recovered in health and strength and had all things in good plenty. For as some were thus employed in affairs abroad, others were exercising in fishing, about cod and bass and other fish, of which they took good store, of which every family had their portion. All the summer there was no want; and now began to come in store of fowl, as winter approached, of which this place did abound when they came first (but afterward decreased

Brief History of ThanksgivingThe tradition of the Pilgrims’ first Thanksgiving is steeped

in myth and legend. Few people realize that the Pilgrims did not celebrate Thanksgiving the next year, or any year thereafter, though some of their descendants later made a “Forefather’s Day” that usually occurred on December 21 or 22. Several Presidents, including George Washington, made one-time Thanksgiving holidays. In 1827, Mrs. Sarah Josepha Hale began lobbying several Presidents for the creation of Thanksgiving as a national holiday, but her lobbying was unsuccessful until 1863 when Abraham Lincoln finally made it a national holiday.

Today, our Thanksgiving is the fourth Thursday of November. This was set by President Franklin D. Roosevelt in 1939 (approved by Congress in 1941), who changed it from Abraham Lincoln’s designation as the last Thursday in November (which could occasionally end up being the fifth Thursday, and hence too close to Christmas for businesses). But the Pilgrims’ first Thanksgiving began at some unknown date between September 21 and November 9, most likely in

To that list, we can probably add a few additional things that are known to have been native to the area and eaten by the Pilgrims: clams, mussels, lobster, eel, ground nuts, acorns, walnuts, chestnuts, squashes, and beans. Fruits and berries such as strawberries, raspberries, grapes, and gooseberries were available growing wild. Pilgrim house-gardens may have included a number of English vegetables and herbs, perhaps things like onions, leeks, sorrel, yarrow, lettuce, carrots, radishes, currants, liverwort, watercress, and others. It is unlikely much in the way of supplies brought on the Mayflower survived, such as Holland Cheese, olive oil, butter, salt pork, sugar, spices, lemons, beer, aqua-vitae, or bacon. It appears the Pilgrims may have had some chickens with them, so likely had access to a limited number of eggs. No mention of swine is found in any account of the first year. They did not yet have any goats or cattle: the first of those arrived on the ship Anne in 1623.

The “Popcorn Myth” would have us believe the Indians introduced the Pilgrims to popcorn at this Thanksgiving: but the Indian corn they grew was Northern Flint, which does not pop well. It was parched to make a simple snack, and the Indians sometimes ground it up and mixed it with strawberries for a cake-like desert. Potatoes and sweet potatoes had not yet been introduced to New England.

School of Medicine, the study, titled, “Detailed visual cortical responses generated by retinal sheet transplants in rats with severe retinal degeneration,” reveals that sheets of fetal cells integrate into the retina and generate nearly normal visual activity in the brains of blind rats.

“It’s been known that retinal sheet transplants can integrate into the degenerated eyes and allow the animals to detect light. But, beyond rudimentary light detection it was not known how well the visual system in the brain functioned with the newly integrated retinal transplant,” said Lyon. “In this study, we found that neurons in the primary visual processing center perform as well as neurons in animals with normal healthy retinas. These results show the great potential of retinal transplants to treat retinal degeneration in people.”

Age-related macular degeneration and retinitis pigmentosa lead to profound vision loss in millions of people worldwide. Degeneration of the retina as a result of age or progressive eye disease damages the light-detecting cells necessary for accurate vision. Current treatments can only help protect existing cells from further damage and are ineffective during late stages of disease once these cells are gone. Retinal sheet transplants have been successful in animal and human studies, but their ability to restore complex vision has not yet been assessed.

“Remarkably, we found fetal retinal sheet transplants generated visual responses in cortex similar in quality to normal rats. The transplants also preserved connectivity within the brain that supports potential of this approach in curing vision loss associated with retinal degeneration,” said Lyon.

Measuring the response of neurons in the primary visual cortex, Lyon and colleagues demonstrated how rats with severe retinal degeneration that received donor cells became sensitive to various attributes of visual stimuli, including size, orientation, and contrast, as early as three months following surgery. The study represents an important step forward in combating age- and disease-related vision loss in human adults. Follow up behavioral research will be necessary to further determine effectiveness and acuity.

Two Choices Jerry was the kind of guy you love to hate. He was always in

a good mood and always had something positive to say. When someone would ask him how he was doing, he would reply, “If I were any better, I would be twins!”

He was a unique manager because he had several waiters who had followed him around from restaurant to restaurant. The reason they followed Jerry was because of his attitude. He was a natural motivator. If an employee was having a bad day, Jerry was there telling the employee how to look on the positive side of the situation. Seeing this style really made me curious, so one day I went up to Jerry and asked him, “I don’t get it! You can’t be a positive person all of the time. How do you do it?”

Jerry replied, “Each morning I wake up and say to myself, Jerry, you have two choices today. You can choose to be in a good mood or you can choose to be in a bad mood.” I choose to be in a good mood. Each time something bad happens, I can choose to be a victim or I can choose to learn from it. I choose to learn from it. Every time someone comes to me complaining, I can choose to accept their complaining or I can point out the positive side of life. I choose the positive side of life.”

“Yeah, right, it’s not that easy,” I protested. “Yes it is,” Jerry said, “Life is all about choices. When you

cut away all the junk, every situation is a choice. You choose how you react to situations. You choose how people will affect your mood. You choose to be in a good mood or bad mood. The bottom line: It’s your choice how you live life.”

I reflected on what Jerry said. Soon thereafter, I left the restaurant industry to start my own business. We lost touch, but often thought about him when I made a choice about life instead of reacting to it. Several years later, I heard that Jerry did something you are never supposed to do in a restaurant business, he left the back door open one morning and was held up at gun point by three armed robbers. While trying to open the safe, his hand, shaking from nervousness, slipped off the combination. The robbers panicked and shot him. Luckily, Jerry was found relatively quickly and rushed to the local trauma

center. After18 hours of surgery and weeks of intensive care, Jerry was released from the hospital with fragments of the bullets still in his body.

I saw Jerry about six months after the accident. When I asked him how he was, he said, “If I were any better, I’d be twins. Wanna see my scars?” I declined to see his wounds but did ask him what had gone through his mind as the robbery took place.

“The first thing that went through my mind was that I should have locked the back door,” Jerry replied. “Then, as I lay on the floor, I remembered that I had two choices - I could choose to live, or I could choose to die. I chose to live.

“Weren’t you scared? Did you lose consciousness?” I asked. Jerry continued, “The paramedics were great. They kept

telling me I was going to be fine. But when they wheeled me into the emergency room and I saw the expressions on the faces of the doctors and nurses, I got really scared. In their eyes, I read, ‘He’s a dead man. “ I knew I needed to take action.”

“What did you do?” I asked. “Well, there was a big, burly nurse shouting questions at

me,” said Jerry. “She asked if I was allergic to anything. ‘Yes,’ I replied. The doctors and nurses stopped working as they waited for my reply. I took a deep breath and yelled, ‘Bullets!’ Over their laughter, I told them, “I am choosing to live. Operate on me as if I am alive, not dead.” Jerry lived thanks to the skill of his doctors, but also because of his amazing attitude. I learned from him that every day we have the choice to live fully. Attitude, after all, is everything.

I then thought--I ate the berry in a twinkling. Then, to my surprise, I began to grow big again until I became of my former stature, and so I have since remained. Needless to say, I have never eaten again of the lavender fruit, nor do any of the beasts or birds that live upon the island eat it.”

They had all three listened eagerly to this amazing tale, and when it was finished, the Ork exclaimed, “Do you think, then, that the deep purple berry is the antidote for the lavender one?”

“I’m sure of it,” answered Pessim.“Then lead me to the tree at once!” begged the Ork. “For

this tiny form I now have terrifies me greatly.”Pessim examined the Ork closely. “You are ugly enough

as you are,” said he. “Were you any larger, you might be dangerous.”

“Oh no,” Trot assured him. “The Ork has been our good friend. Please take us to the tree.”

Then Pessim consented, although rather reluctantly. He led them to the right, which was the east side of the island, and in a few minutes brought them near to the edge of the grove which faced the shore of the ocean. Here stood a small tree bearing berries of a deep purple color.

The fruit looked very enticing, and Cap’n Bill reached up and selected one that seemed especially plump and ripe. The Ork had remained perched upon Trot’s shoulder, but now it flew down to the ground. It was so difficult for Cap’n Bill to kneel down with his wooden leg that the little girl took the berry from him and held it close to the Ork’s head.

Even before he had finished the berry, they could see the Ork begin to grow. In a few minutes he had regained his natural size and was strutting before them, quite delighted with his transformation.

“Well, well! What do you think of me now?” he asked proudly.“You are very skinny and remarkably ugly,” declared Pessim.“You are a poor judge of Orks,” was the reply. “Anyone

can see that I’m much handsomer than those dreadful things called birds, which are all fluff and feathers.”

“Their feathers make soft beds,” asserted Pessim.“And my skin would make excellent drumheads,” retorted

the Ork.“Nevertheless, a plucked bird or a skinned Ork would be of

no value to himself, so we needn’t brag of our usefulness after we are dead. But for the sake of argument, friend Pessim, I’d like to know what good YOU would be were you not alive.”

“I am King of this Island, allow me to say, and you’re intruding on my property,” declared the little man, scowling upon them. “If you don’t like me--and I’m sure you don’t, for no one else does--why don’t you go away and leave me to myself?”

“Well, the Ork can fly, but we can’t,” explained Trot in answer.“We don’t want to stay here a bit, but I don’t see how we

can get away.”“You can go back into the hole you came from.”Cap’n Bill shook his head; Trot shuddered at the thought; the

“ Y o u may be King here,” the creature said to Pessim, “but we intend to run this island to suit ourselves, for we are three and you are one, and the balance of power lies with us.”

The little man made no reply to this, although as they walked back to the shed his face wore its fiercest scowl. Cap’n Bill gathered a lot of leaves and, assisted by Trot, prepared two nice beds in opposite corners of the shed. Pessim slept in a hammock which he swung between two trees.

They required no dishes, as all their food consisted of fruits and nuts picked from the trees. They made no fire, for the weather was warm and there was nothing to cook. The shed had no furniture other than the rude stool which the little man was accustomed to sit upon. He called it his “throne,” and they let him keep it.

So they lived upon the island for three days and rested and ate to their hearts’ content. Still, they were not at all happy in this life because of Pessim. He continually found fault with them, and all that they did, and all their surroundings. He could see nothing good or admirable in all the world, and Trot soon came to understand why the little man’s former neighbors had brought him to this island and left him there all alone so he could not annoy anyone. It was their misfortune that they had been led to this place by their adventures, for often they would have preferred the company of a wild beast to that of Pessim.

On the fourth day, a happy thought came to the Ork. They had all been racking their brains for a possible way to leave the island and discussing this or that method without finding a plan that was practical.
