Preface
School Nutrition Education Program “Nourishing Young Minds” is an initiative of
Department of Nutrition and Dietetics, Mount Carmel College, Autonomous. We are
extremely grateful to our Principals, Mount Carmel College for their constant
support to conduct this program.
As part of PG Food Science and Nutrition curriculum, Public Health and Nutritional
Epidemiology course, students impart nutrition education program in Government
schools. The objective of the program is assessment of nutritional status and
knowledge of children in nutrition, physical activity and hygiene. Children’s
knowledge is assessed pre and post nutrition education program. The beneficiaries
are children from selected Government schools from North, South, East and West
zone in Namma Bengaluru. The program is unique since PG Food Science and
Nutrition students are involved in developing unique innovative nutrition education
aids, programs and also teach the children through classes and interactive games.
Ever since 2013, “ Nourish Young Minds” under the aegis of Dr Sangeeta Pandey,
HOD of Nutrition and Dietetics, the program has been well received and has been
influencing young minds. The program is well contributed by Post Graduate students
mentored by the faculty and support of the educational institutions.
The program is unique since Post Graduate students are involved in sensitizing
school children and develop the onus of contributing to the community at a young
age. Children also become agents of change by spreading what they have learnt in
school to their family and community members. Hence, “Nourish Young Minds” has
been a small step in building a healthy world.

FOREWORD
I am delighted to write the foreword for the community development project conducted by
Post Graduate students of Food Science and Nutrition programme. The first report was
compiled in 2013 and the project was undertaken in few government schools located in urban
Bengaluru. The idea was initiated by the students as they recognized that there is a need of
Nutrition education to be brought in the regular curriculum of the school, which will create
awareness among the children regarding balanced diet, Micro and macro nutrients,
deficiency diseases, good food habits to promote health, sanitation, hygiene and importance
of physical activity to promote their optimum health. The first programme conducted in
various government schools was well received and this started the journey of continuous
programme covering various government schools in different localities.
As part of this project, every year 3-4 government schools were covered. This
programme aimed at developing innovative learning material and using them as a
tool to improvise the knowledge, attitude and practice regarding optimum nutrition.
School Nutrition Education Programme “Nourish Young Minds” was conceived and
delivered by the students to the government school children and post evaluation study
was conducted to observe the impact of the tools prepared and used.
I believe that this effort of our students has created change among the children
studying in the government school. Student’s participation in developing and
preparing interactive modules during the study has enhanced their own
understanding regarding the practical applicability of public health nutrition course.
I hope that this report will become a primer for other students to carry forward this
work to the next level helping children across the city to learn and practice the
knowledge regarding the optimum nutrition.

Method employed: Questionnaires were administered on nutritional knowledge,
hygiene and sanitation, physical activity, nutrition practice along with the food
frequency table. Nutrition education, a key element, was given to promote lifelong
healthy eating and exercise behaviors with innovative nutrition aids. Pre and post
evaluation of the program was done to assess the effectiveness of the nutrition
program.
Tools used: A programme calendar depicting the various session topics and details
with aids, teaching methods and activities planned, etc was provided to each school
before the commencement of intervention sessions. The aids were done in regional
language Kannada for better understanding and wider reach
Various nutrition-based teaching and learning aids such as charts and posters, flash
cards, games, presentations, and models were designed by each of the groups in order
to impart nutrition knowledge to the study subjects.
A handout comprising of an overall recap of each of the sessions conducted was
distributed to every student subjected to this intervention programme at the end of all
the sessions.

LAUNCH OF “NUTRITIUM” NUTRITION COUNSELING CELL
Nutritium in house nutrition counseling cell, was inaugurated on 20th
August 2015 by
our Principal, Sr Dr Arpana. Nutrition counseling and awareness is conducted by
students of PG Food Science and Nutrition, Department of Nutrition and Dietetics
under the guidance of Dr Sangeeta Pandey, HOD, Nutrition & Dietetics.
The aim of nutrition counseling cell is to counsel clients for therapeutic conditions,
healthy life, lifestyle modifications and sensitize community with outreach program
and In house nutrition awareness. The cell focused on provision of nutrition
counseling for students, teachers and support staff of Mount Carmel College. It also
would enable implementation and enhancement of nutrition counseling skills.

As part of Nutritium, the following activities have been conducted:
Canteen evaluation for healthy menu options
“Basic Health Check and Nutrition Counseling” for Support Staff was conducted by
First Year students of PG Food Science and Nutrition and PG Biochemistry. Basic
health checkup like BMI, BP, Blood Sugar and nutrition counseling was very well
received.

Details:
School children between the age group of 10-15 years both genders were selected
from lower income and middle income group. Children in this age group high
nutritional demands and can be molded early at younger age.
Children nutrition knowledge were assessed pre and post nutrition education program
Nutrition Education Program was carried out with the help of following intervention
strategies like involving teachers and parents, presenting food based activities, using
creative aids and incorporating their participation.
Questionnaire was developed to assess the nutritional knowledge, attitude and
practice of the students. The following parameters were assessed

NUTRITION EDUCATION AIDS
The process of imparting nutrition education program involved usage of nutrition aids
prepared for the children to educate them in a simple method.
1. NUTRITION
FOOD GROUP CHART
A pictorial chart was made to teach the classification of the five
food groups to the children. It emphasized on the importance of
different food groups. During this session a self-evaluating test
was conducted to assess children’s daily food intake based on
food groups of children
FOOD GROUP MATCH
An aid was made to conduct an activity -match the match the
different food groups with their sources. The aid was to expand
the knowledge of the children on how important all five food
groups are which included cereal & grain group, fruit group,
vegetable group, protein group & dairy group.
MY PLATE CHART
My plate chart developed as an aid to teach the children about
what an every day’s food plate should include. It consists of the
five food groups i.e. cereals, fruits, vegetables, meat products
and dairy along with certain examples in each category,
represented diagrammatically. The chart also included certain
benefits of each food group to the body.
ACTIVITY ON MY PLATE:
An activity regarding My Plate was conducted where pictures
of different food items along with a plate which had markings
of the sizes were placed in front of the children. Each child was
asked to stick the food item on the plate.This enabled the

children to learn about the quantity of each food groups to be consumed.
MY PLATE CLOCK:
The colorful divided plate includes sections for vegetables,
fruits, grains, and foods high in protein. Relating my plate with
a clock helps the children to know the importance of meal
timing and a reminder that all the food groups are necessary in
their plate as a part of balanced meal.
LEAD MY PLATE (Puzzle game):
An activity based innovative aid was made to help children
remember the categories of food. The basic rules behind the
game were: Following the healthy foods would lead you to the
right path and help you in reaching the healthy destination i.e.
MY PLATE. Whereas, the unhealthy foods would trap you and
make you lose the game.
VIDEO PRESENTATION:
A pictorial power point presentation was prepared highlighting
nutrients and sources. A video presentation on hand hygiene was
shown.
CALCIUM CHART
A chart was made on nutritional benefits of calcium, was done. It
highlighted on calcium, functions, toxicity and deficiency of
calcium, sources and RDA
FLASH CARDS
Flash cards were prepared based on nutrients like carbohydrates,
proteins, fats, iron, calcium and zinc. Each flash card had
pictures on sources of nutrient and the benefit of the nutrient in

our body. It aimed at helping them to know the importance of nutrient and their
sources
CHART ON SOURCES OF IRON
The aid illustrated the various important sources of iron. It was
created to make the target group aware of the various sources
available such that they could be included in their regular diets.
MICRO BUTTERFLY
Two micro nutrients iron and zinc are crucial for the growth and
development for children to build their immunity and prevent
occurrence of diseases like anemia (iron) and symptoms like
diarrhea (zinc).The various functions, sources and daily
requirements of these micronutrients are presented through the aid.
CALCI BONE:
Calcium is an important micronutrient for the bone development
in children. The various functions, sources and daily requirement
for calcium is represented using this aid.
VITAMIN PIE:
Vitamin pie represents both soluble and insoluble vitamins and
their sources. Children often tend to waste food not knowing the
major vitamins they are losing out. Through this aid the
importance of various sources of vitamins and their basic
functions were taught.
VITAMIN POEM:
A poem was made in a sing song style on the various vitamins.
The poem was made to help children remember the vitamins and
their important functions.

VITAMIN BODY
A pictorial image used to indicate which vitamin has an effect on
which part of the body. The purpose of this aid was to teach the
subjects about the significance of vitamins in the human body
SNAKES AND LADDER
The snake and ladder game was well-versed, vibrant and active
game among children offering the insight to various healthy foods
and junk foods. It helped in teaching children about healthy eating
practices for a healthy life. Snake (i.e. eating junk foods) will bite
you and ladders (i.e. eating healthy foods) will support you to win
the game quickly.
GUESS THE NUTRIENT
As the name suggests children were expected to guess nutrients
associated with sources and functions. The name of the nutrient
was hidden till they guessed right answer.
PORTION CONTROL CHART
Portion control chart included each food groups of the My plate
along with quantity. The chart showed different portions of hand to
indicate amount of each food group to be consumed. Example:
carbohydrate, vegetable portion should be equal to the size of a fist.
Protein sources like chicken should be equal to the size of a palm.
Peanut butter, equal to one thumb(1 tbsp) and oil equal to one
fingertip(1 tsp).
PICTORIAL FOOD CHART BOOK
The food chart book contains all the important nutrients that are
essential for the children. This book was utilized to teach the
children about healthy food and the portion size.

2. PHYSICAL ACTIVITY
Physical activity is important for many reasons such as controlling weight and
reducing risk of heart disease. Posters were prepared on physical activity to spread
awareness, the importance of 60 minutes physical activity in daily routine. The
benefits of physical activity were explained and the ways to incorporate it in daily life
was discussed like climb, play, swim, run etc.
The following four points were highlighted
1. Exercise increases energy levels
2. Improve muscle strength
3. Maintain healthy weight
4. Enhances immunity
3. HYGIENE AND SANITATION
SANITATION CHART:
Sanitation is the provision of facilities and services for the safe disposal of
human urine and feces. Sanitation is important for all, helping to maintain
health and increase life-span. This purpose of this aid was to educate the
children about good sanitation practices.

HYGIENE BROCHURE
The brochure highlights the basics of hygiene. It was made in the form of a sequence
card to enable the children to understand one concept at a time. The purpose of this
brochure was to educate the subjects about the various good hygiene practices.
PERSONAL HYGIENE CHART
This is a pictorial description about the various ways of maintain
personal hygiene to lead a healthy life thereby, preventing diseases.
It includes overall ways that should be followed to lead a disease-
free life.This aid was used to teach the children about various
methods of maintaining personal hygiene.
BRUSH BOARD
This activity based aid titled “brush your teeth” depicts the various
steps involved in the brushing of teeth. This was an educational aid
plus activity to help children learn the right way of brushing their
teeth in order to maintain good oral health.
BUNTINGS
This was a pictorial aid made in the form of buntings related to
good hand hygiene practices. These buntings were made to
highlight the time before and after which the children are expected

to wash their hands. This was the second part of hygiene basics.
CONCLUSION:
The program was successfully conducted at Government schools at Bengaluru. The
objective to impart and improve the food habits of the study subjects was fulfilled.
Children were more receptive to learning and were very likely to adopt healthy
behaviors at a younger age.
Future studies regarding KAP should specifically assess the attitudes that students
have towards nutrition habits, importance of physical activity, hygiene, availability of
water and sanitation facilities at home and at school and focus on enforcing a healthy
lifestyle. Enhanced, comprehensive knowledge about these issues should be used to
improve low-cost but highly effective programs that will meaningfully attenuate the
burden of diseases, malnutrition and deficiencies or toxicities among students in rural
settings. The program was well received and appreciated in the institutions.

Venue : Government Urdu Primary School, Gutahalli, Bengaluru
Objective : Impart knowledge on right nutrition and food safety
Children are the future of our society, and for the development of an active and
healthy society, it is necessary for them to know the importance of healthy and good
food for maintenance of their health. Almost one in two children under the age of
five in India is undernourished. Among adults, 36 percent of women and 34 percent
of men are undernourished. Research has shown that the nutritional status of adults is
linked to that of children.

One of the gaps in addressing under-nutrition is a lack of awareness. Teaching
children about nutrition in the classroom has the potential to have long-lasting impact.
From students making healthier choices to improved academic performance, nutrition
education can benefit the whole school.
The Department of Nutrition and Dietetics in Mount Carmel College in Bengaluru has
conceptualized the Nutrition Education Program for schools in Bangalore. The
objective of the programme is to create awareness among young students about the
importance of hygiene through awareness of macronutrients and micronutrients in the
diet. At large, this program is a vital step to improve the nutritional status of the
Government school children.
QNet has partnered with the department to help promote nutrition awareness among
three government schools in Bangalore. The programme spread over a three month
period included an information session on the importance of nutrition, understanding
of basic nutrition, personal hygiene, and food habits. These were followed by physical
activities like yoga, aerobics, and games specially developed to help children
understand the importance of nutrition and physical activity to maintain optimum
health.

The first phase of this programme was rolled out in Government Urdu Primary
School in Guttahalli recently and received positive feedback from both students and
teachers. Teachers, in particular, were grateful for the programme since when students
experience poor nutrition and diminished health practices, it’s harder for them to
listen, concentrate, and learn.
Around 100 students participated in the pilot programme and reacted positively to the
information they received. In the next phase, the Nutrition Education Program hopes
to reach at least 300 more students.
QNet is delighted to partner with this programme as it is in line with our aim to instill
and promote a healthy lifestyle among Indians.

NUTRITION AWARENESS PROGRAM AT CUBBON PARK

The campaign named, "Nutrition Awareness Programme” was aimed to educate the
public on crucial topics like nutrition, fitness, sanitation and hygiene. Towards
creating a healthier society by popularizing preventive measures, the awareness
program made use of a variety of experiments on Health and Hygiene and many
poster presentations, depicting the importance of balanced diet and healthy lifestyle in
day to day life. Another strategy employed included involving children and youth in
the awareness programme by a conglomeration of games like – Hop Scotch, Wiggle-
Wiggle, Ludo, Snake and Ladders, and so on. These games provided a context for
engaging practice and children were able to develop a variety of connections with the
content and formed positive memories of learning. Children are the best messengers
to carry forward the information to their friends and family.
The first two stalls focused on imparting information about general nutrition and the
various nutrients. There were a number of posters and visual aids which made them
aware of important information like the amount of salt and sugar we subconsciously
consume in everyday products, how the claims of nutrition labels are wrongly
perceived by us, and the relationship between cravings and deficiencies. There were
also fun games focusing on good food choices, nutrients and the need to replace some
foods with healthier options, also shedding light on healthy methods of cooking.
The program helped to answer various questions of the public, imparting to them
sufficient basic knowledge about the food we consume on everyday basis. They were
also given visiting cards of the Nutritium Cell in Mount Carmel College, letting them
know that we, the staff and budding nutritionists, would be more than happy to help
them out with their further queries.

The second segment focused on physical activity and personal hygiene. Stall 2 had
games and posters that fascinated the crowd. Games included were my plate, memory
games, importance of washing hand and maintaining hygiene, pop up/explosion box
that explained the importance of superfoods, ping pong ball game that explained the
importance of physical activity.
The response from the audience was incredible which will encourage the students in
organizing more such activities. From kids to adults, all the age groups appreciated
the cause and the initiation of the awareness programme.
We received an excellent feedback from the public, some who were awestruck to
know a few facts they never thought about and others congratulated us for the
initiative!

Event Details:
School Nutrition Education Program was organized at Hoballi, Koramangala Taluk.
Various nutrition education aids, presentations and interesting games were used to create
awareness in local language for better understanding. Concept of balanced diet was explained
with display of nutrients, sources, associated benefits and deficiencies.
A thali plate was displayed with local food items to demonstrate “MY PLATE” concept to
educate mothers and children on portion sizes and balanced diet. Awareness on quantities of
sugar and salt in common processed foods viz potato chips, biscuits, chocolates was
explained. Innovative ‘hop scotch’ game helped in creating awareness on importance of
breakfast, nutritious diet, physical activity and hand washing. The unique ‘snake and ladder’
game illustrated calcium rich sources, benefits and consequences. The need to restrict on junk
food was explained through green, amber and red signal concept. “Eat or delete’ board game
explained healthy and unhealthy food choices items - cakes, chocolates, ice creams, noodles.
The interactive School Nutrition Education Program was well received and covered by media.
True to School Nutrition Education Program theme “Nourish Young”, the program was a
success and one small step to building healthy nation.

Faculty Enrichment Program 2018
Faculty Enrichment Program was conducted at Mount Carmel College, Autonomous
on 22.09.2018. Department of Nutrition & Dietetics conducted program on Right
Nutrition for the faculty and Support Staff. Three component program was delivered
and well received on the following aspects.

Healthy eating is an integral component for healthy living. The concept of
balanced diet with eating right was explained in the following areas:

Changing Work Environment – Be Nutri Smart: Dr Geetha Santhosh, Assistant
Professor
With the changing work environment, nutrition has become even more
important to attain good work life balance.
The talk focused on the following aspects:
Changing work scenario, age and working environment
Lifestyle disease – Cardio vascular disease, obesity, diabetes
Barriers for right nutrition
Smart nutrition choices with exercise, relaxation strategies
Life style management of PCOS: Ms Shubhi Agarwal, Assistant Professor
Owing to stress and obesity, PCOS, a complex hormonal disturbance seen in
women of reproductive age, is on the rise. Since it is a growing concern,
there was a strong need to address the issue and create awareness about it.
Therefore talk on PCOS and its nutrition management was delivered on the
following aspects:
Knowing PCOS, signs and symptoms
Nutrition, life style management with exercise, behavioral
modification.
