Intangible Cultural Heritage of Humanity’ and Paris is certainly the best place to enjoy it! Street food continues to develop! More than a single trend, it signals the rise of a whole new type of gourmet food that has been adopted by Parisians. And the craze for food trucks (mobile gastronomy), which began in 2011 with the burgers of Kristin Frederick’s Camion qui fume (she trained at Grégoire Ferrandi and Apicius), has spread to other types of food to such an extent that food truck tours are organized giving rise to the gathering of stylish vans; Paris City Council is also planning to provide 40 new sites where vans can park up. Their credo: quality products and cooking. Tacos, burgers, seafood platters and Breton crepes, cupcakes … Their itineraries can be followed via the social networks. But this craze for street food extends beyond food trucks. Burgers, hot dogs, and dim sum for a quick snack have never been so popular at specialist food stalls like Blend, Big Fernand, Yoom or American coffee shops like Le Dépanneur at Pigalle. La Candelaria has launched a trend for tacos among trendies in the Haut Marais and L de Liza specializes in Lebanese sandwiches. Gastronomic sweet food is also a must with creative cakes and pastries and other sweet treats. For example, Fées parisiennes, which update old classics, like a jeweller, and Odette, recently opened and specializing in choux à la crème presented in a ‘Roaring Twenties’-style box, and many other places to drool over.

>Another big trend: ‘open kitchen’ restaurants Open kitchens like those in New York and Asia. Watching chefs working and creating dishes, behind a counter, is entertaining and creates a convivial atmosphere. Alain Dutournier’s restaurant Le Pinxo and the Atelier de Joël Robuchon at Saint-Germain started the trend several years ago, and since then, several other open-kitchens have opened: the Spring Restaurant with its single menu signed Daniel Rose or Yam’Tcha which Michelin-starred chef Adeline Grattard has just moved to a new address where she pairs food and tea, and has opened a baos boutique. At the Workshop Issé Bis, which seats less than 10, the chef Ofuji serves fine noodles, sashimi and prepares a surprise menu in the evening, like at Kunitoraya which offers delicious breaded pork, whelks and leeks in Yuzu-miso sauce. Anne-Sophie Pic has opted for a glassed-in kitchen in her starred restaurant La Dame de Pic, which offers passers-by in the street a view of the cooking in the kitchen. And at Saint-Lazare train station, Michelin-three-starred chef Eric Fréchon serves generous balanced portions of food at his restaurant Lazare. In the same vein: restaurants organized around a wood-burning grill for roasting meat in front of customers. The newest on the scene: Beaucoup opened by the talented and trendy team Glou and Jaja, L’Atelier Vivanda, the address of starred chef Akrame Benallal, and Le Drugstore Steakhouse at the Publicis Drugstore.

Tables d’hôtes for a quick snack

Tables d’hôtes in grocery stores, shop areas in restaurants, bars to eat at in markets, tasting areas in shops, hotel restaurants and restaurants which are also bars or even clubs and art galleries … The trend is for breaking down frontiers and blurring genres, and for restaurants designed as lively places, and especially a trend for concept establishments. Grocery stores with a few tables for finishing off one’s shopping with a light meal are very popular: at Claus, there are great breakfast products to buy and taste on the premises. At the Alain Milliat shop, people come from afar for high-quality fruit juices to enjoy with flavoursome and healthy snacks. Causses has some of the best gourmet products, from charcuterie to dairy products, as well as fruit and vegetables; the small

MY tables d’hôtes enable customers to enjoy a snack while doing their shopping. On the

first floor of the Grande Epicerie, the store’s new restaurant, La Table, is bathed in light and you can have lunch here with a view of the chicest departments in Paris. Not forgetting the many tasting counters: Ayamé, for sushi, Artisan de la Truffe or La Pause Rive Gauche. The newly revamped Galeries Lafayette Maison & Gourmet, which also moved to new premises at the end of 2014, houses 14 eateries and freshly-prepared food. Finally, La Boutique des saveurs, on the Saint-Martin covered market, strives to showcase producers from France’s national parks whose products are labelled ‘Parc Naturel’. Always popular, this market also includes Allen’s Market, the new address of New Yorker Joe Allen, where you can also enjoy a 100 % USA snack in the grocery section. Merci, the fashion, home decor and design shop, also has an organic-vegetable canteen on the shop’s ground floor and its own bar. And handy for film buffs is the ‘lounge’, an upstairs 150 m² loft at the Cinéma du Panthéon, where customers can enjoy dishes of the day, and cakes and pastries with a nice cup of tea. Nanashi, the organic ethical brand in rue de Paradis, has also opened on the lower ground floor of the hôtel particulier inhabited by the Bonpoint brand! As for Le Caviste Bio, this wine shop has several table d’hôtes in its cellar: 300 different wines and 10 dishes of the day.

Every year, even every season, brings its share of new addresses that the in-crowd all flock to. Big media focus or success through word of mouth, what are the new restaurants that everyone is talking about? New addresses for top chefs (Alain Ducasse at the Plaza Athénee after 10 months of closure for renovation work, Yannick Alléno follows on after Christian Le Squer at the head of the triple-starred Ledoyen and Michelin-starred chef in 2014 Akrame Benallal, who has opened an annexe of his Atelier Vivanda, in rue du Cherche-midi) from bistronomy to minimalist establishments and dishes full of character and flavour (52, le neo-bistro signed Charles Compagnon replaces Richer and is a big hit in the 10th arrondissement, Porte 12 voted best ‘table’ in the Fooding Guide 2015) inspired tasting bars for (Bob’s Bake shop and its excellent vegetarian bagels to enjoy in the new Halle Parol or the lively Niçois, with pan bagnat, pissaladière and rosé) not forgetting new restaurants with a view (Le Quindici by Julien Cohen on the 2nd floor of the Beaugrenelle shopping centre; a 700 m2 space with a view of the Seine which functions as a restaurant, trattoria, delicatessen and wine cellar, or L’Oiseau Blanc, the gastronomic restaurant of the Hôtel Peninsula which has a 360°view).

Fooding ® was created, at the instigation of Radio Nova, in 2000. The word is a contraction of ‘food’ and ‘feeling’, and was created to put a modern touch into gastronomy that was resting on the laurels of its starred cuisine. This movement which has taken off in Paris and abroad is a concept, an art, a state of mind, a new way of seeing and experiencing cooking. Le Fooding® advocates creative and trendy cooking full of surprises and new things. Events like Fooding® Week and the Grand Summer Fooding® are organized throughout the capital to familiarize the public with this innovative approach to cooking. For more than 10 years, the Omnivore Food Festival unveiled the creativity of a young generation of cooks from all backgrounds. Since 2012, the event has taken on a new global dimension by becoming a travelling cooking festival ‘the Omnivore World Tour Paris Food Festival’. These are classics, known throughout the world, and they contribute to the special gastronomic quality of French cuisine. Great chefs have taken up residence in Paris and proudly wear their stars awarded by the Michelin Guide. The 2015 guide has not added any new three stars to restaurants in Paris; the restaurant Ledoyen retains its third star thanks to the arrival of Yannick Alléno in September 2014. However, the 105th edition of this little red guide has awarded a first star to 10 restaurants in Paris.

The baguette is the emblem par excellence of French gastronomy and the indispensable accompaniement to Parisian meals. Every year, a team of experts awards a prize to an artisan baker for an outstanding baguette. In 2014, Antonio Teixeira, baker and owner of Aux Délices du Palais in the 14th arrondissement was elected as successor to Ridha Khadher of the Paradis Gourmand, in the same district. So, foodies can now enjoy his baguette à l’ancienne and revel in the fact that they are eating the same baguette as the French President, for whom the winner of the prize becomes the supplier for a whole year!
