CUSTOMS AND BELIEFS

There are many cultural beliefs that are still practiced when it comes to Maori kai (food): Tapu (risky), noa (safe) and rahui (restrictions). These

concepts define what foods can be accessed and at what

times.

Manaakitanga is the concept that Maori must share,

entertain and be hospitable.

Karakia is practiced through the process of collecting and

procuring, through to its consumption.

HANGI

An underground oven that is used to cook meat and vegetables. It utilises steam created from hot rocks to cook the food.

Still used on special occasions.

TODAY

The most regularly consumed Maori

traditional food today is Kaimoana (seafood).

Ika (fish), mussels and kumara are

consumed on a weekly basis.

Hangi is usually only used on large

gatherings or special occassions.
