In the last 25 years, IECD has been involved in training in hospitality & catering, which offers great opportunities to disadvantaged youth in developing countries. These trainings focus both on technical skills acquisition and full development of the person. This innovative model of vocational training, supported by IECD and its technical and financial partners, has been deployed in 13 countries. I am convinced that through this joint effort with our local partners, we demonstrate that working in hospitality & catering can be virtuous and promising for thousands of young people in the world. Since 1992, thanks to strong ties with local partners deeply implanted in their region, 18 hospitality schools have been created or strengthened in 13 countries where the growing tourism industry generates employment. On the basis of its strong experience and proven impact for youth, IECD continues to develop the Hospitality & Catering programme through new projects in South-East Asia. IECD’s support to these organizations lasts for 4 years on average, whereas their age varies widely from a few years to 41 years for the oldest one. In each school, an average of 77 youth per year receive initial training in various branches of hospitality & catering: culinary arts, restaurant service and bar, room service, reception, bakery & pastry. On completion of the training, the students graduate with an excellent success rate and obtain a Certificate of Professional Competence, a Technical Baccalauréat or an Advanced Technician Certificate. All the supported projects ensure an efficient professional integration to the young graduates. Most of these schools also offer continuous training to professionnals currenlty working and short trainings about hygiene and nutrition for local communities. The tight links between schools and businesses are key to the success of the trainings. Professionals are involved at various levels:

- Designing the training contents- Participating in the student selection and assessment panels - Training of trainers- Internships- Preparation for employment activities - Financial or material donations

These interactions ensure the trainings are in line with the needs expressed by the hospi-tality & catering professionals and the tourism industry. They enable the implementation of an educational model mixing studies and work, providing the students with their first work experiences in field conditions.

A strong connection between schools and businesses

The philosophy behind the IECD programme is to support schools in securing their business model and to help them reach partial or full self-financing.

Tuition fees constitute a direct financial contribution for all schools, even though their amount is largely symbolic. The diversification of income sources systematically means a better self-financing rate and enables to offer reduced training costs to disadvantaged youth, target of these projects.

The development of income generating activities through training hotels and restaurants, bakery-pastry shops and catering services satisfies the twin objectives of training the students and securing the business model, turning these schools into real social enterprises!

Sustainablebusiness models

The recognition of the trainings by local governments is another major challenge, and remains a central objective for current and future projects.

Most schools supported by the programme maintain regular contact with the ministries in charge of vocational training and tourism. The diplomas issued after completion of the trainings are approved and recognised by the State.

This institutional recognition adds up to the recognition by the industry professionals, thus ensuring a fast socioprofessional integration to young graduates and a remuneration level on average 1,6 higher than the minimum wage requirements.

«La Rizière» Hospitality School in Madagascar: the combination of a innovative pedagogical project and a sustainable business model

In July 2012, IECD and its partner Saint François-Xavier secondary school launched La Rizière, built as a social enterprise. It gives disadvantaged youth of Fianarantsoa area the opportunity to train in hospitality and catering during 1 or 2 years. Every year, 52 new students choose between cooking, restaurant service and housekeeping, and get strong skills ensuring their very fast integration on the labour market : 3 months after completing the training, 89% of the students already have a job!

The Hospitality and Catering Training Center in Thailand (HCTC): a springboard for young people from the Karen minority!

Located in Mae Sot in the North-West region of Thailand, the vocational training center was launched in 2009 by IECD and the Tak Border Child Assistance Foundation. In the context of Thailand, where tourism is a major sector of the economy, the multidisciplinary training in front office, cooking, service and housekeeping offered by the HCTC opens up great professional opportunities to 30 young people every year, after completion of a two-year, practice-oriented training.

Inle Hospitality School: building hospitality future in Myanmar

The Inle Heritage Hospitality Vocational Training Center (IHHVTC) was built in 2014 along Inle Lake, to train local young people - mostly belonging to the Inthar minority – in the promising fields of hospitality and catering. Since 2016, IECD is supporting the IHHVTC, where, every year, around 40 young people from 17 to 23 years old benefit from a ten-month training (including a one-month internship) and choose one specialization between cooking, service, front office and housekeeping.

Bakery & pastry schools in Hué and Ho Chi Minh City in Vietnam and Yangon in Myanmar: the transfer of an authentic know-how

Since 2015, IECD is supporting bakery and pastry schools, two of which are at an early stage of development. Each school trains 10 to 20 young people per year in the techniques of making all types of breads and pastries. Special attention is given to the integration of girls, who will eventually represent at least half of the students. These schools are intented to become real social enterprises, thanks to the income generated by the sale of products made by the aspiring bakers!

The ASSET-H&C platform: Association of Southeast Asian Social Enterprises for Training in Hospitality and Catering

2016 also saw the launch by IECD of the ASSET-H&C platform bringing together 12 vocational training centres located in Cambodia, Laos, Myanmar, Thailand and Vietnam, the primary vocation of which is to train disadvantaged youth in hospitality and catering. Such networking will enable the exchange and transfer of best practices and know-how. It will benefit the member institutions and, through them, around 1 400 young people each year.
