Terry’s Eggnog Cheesecake

1 cup graham cracker crumbs 3 T butter, melted2 T sugar 3/4 cup eggnog2 eggs 1 cup sugar3 T fl our 1/4 tsp nutmeg3-8 oz. pkgs.cream cheese, softened

Bring all ingredients to room temperature before starting. Combine graham cracker crumbs, butter and 2 T sugar and press into bottom of 9-in spring form pan. Bake at 325 º 10 minutes. Set aside to cool. Turn oven to 425 º. Combine sugar, cream cheese, eggnog and fl our until smooth, but don’t over mix. Add eggs and nutmeg and mix well. Pour into pan.Place a shallow pan of water on the lower rack

to keep cheesecake moist. Bake 10 minutes. Reduce oven to 250 º and bake another 45 min. Do not

Using a food processor or mixer, thoroughly process the persimmon pulp, butter, baking soda and sugar until creamy. Add egg, beat well. In another bowl sift fl our with spices, teaspoonfuls onto a greased baking sheet about 1 in. apart. Bake at 350 º for 15-20 min until golden brown. Cool on racks. Melt chocolate chips and dip one half of each cookie into melted chocolate.

Scott’s Veggie Medley

1 zucchini, diced 2-3 carrots, sliced1 small butternut squash, cubed 3 potatoes, cubed1 sweet potato, peeled & cubed 1 red onion, quartered2 red bell peppers, diced 1/4 cup olive oil1 T chopped fresh thyme 2 T chopped fresh rosemary4 T balsamic vinegar OR lemon juice

Place carrots, potatoes and onion in one bowl and zucchini, squash, peppers in another. Salt and pepper each. In a small bowl, combine thyme, rosemary, oil and vinegar. Toss with vegetables in both bowls until coated. Spread vegetables in separate roasting pans. Roast in 450 º oven, potato medley for

45-50 min and zucchini medley for 20-25 min. Combine and serve.

Travis’ Pumpkin Bread

15-oz can pumpkin 4 eggs3 cups sugar1 cup vegetable oil3 1/2 cups fl our2/3 cup water1-1/2 tsp salt2 tsp baking soda1 tsp cinnamon1 tsp nutmeg1/2 tsp ground cloves1/2 tsp ginger

Combine pumpkin, eggs, sugar, oil and water. In a separate bowl, mix fl our, soda,salt and spices. Fold fl our mixture into pumpkin micture until just blended. Allow it to rest while you grease and fl our three 7”x 3” loaf pans. Bake 50 minutes at 350 º.

Jamie’s Easy Coff ee Cake

1 stick butter3/4 cup chopped pecansI sm jar maraschino cherries – drained & chopped2 cans big Texas style biscuitsBowl of cinnamon & sugar (1 cup sugar & 2 T cinnamon)Pancake syrup (don’t use the real maple syrup, it’s too thin)

Set oven at 350 º. Line bundt pan with pecans and cherries. Melt butter in bowl. Dip biscuit in melted butter, roll in cinnamon/sugar mixture until well covered and stand on end in pan. When pan is full, drizzle well with syrup ...when you look in the pan you should see syrup covering the bottom third of the biscuit. Bake for 35 – 45 minutes. To serve, put plate on top of bundt pan and fl ip over. Plate should be quite a bit larger to accommodate the syrup that will run out. Serve warm.

Holiday Peppermint Bark

1-12oz. package White Morsels 24 hard peppermint candies

Line baking sheet with wax paper. Microwave morsels in medium, microwave-safe bowl on 70% power for 1 min; stir. Microwave at additional 10 to 20 sec. intervals, stir until smooth. Place peppermint candy in heavy-duty plastic bag. Crush candy with rolling pin. While holding strainer over melted morsels, pour crushed candy into strainer. Shake to release all small candy pieces; reserve larger candy pieces. Stir morsel-peppermint mixture. Spread mixture to desired thickness on baking sheet. Sprinkle with lrg. candy pieces; press in lightly. Let stand for about 1 hour or until fi rm. Break into pieces. Store in airtight container at room temperature.

Dick’s Oatmeal Cranberry Cookies

1/2 cup butter 1 egg1- 1/8 cup fl our 1/2 cup oats1/3 cup brown sugar 1/3 cup white sugar1 tsp vanilla 1/2 tsp salt1/2 tsp baking soda1/2 cup each: dried cranberries, white chocolate chips, chopped pecans

Beat egg, butter, vanilla together. Add the rest of the ingredients and mix. Roll into balls and place on greased cookie sheet. Bake 8-10 min at 350 º.

Granny’s Peanut Butter Rice Crispy Treats

4 cups of rice crispy cereal 1 cup white karo syrup1 cup of sugar 1 tsp vanilla1 1/2 cup of creamy peanut butter

Bring karo and sugar to boil and then boil for exactly 1 min. Take of burner add peanut butter and vanilla, stir until smooth. Pour over rice crispy cereal and mix together. Scoop spoonfuls on wax paper and let harden.

Lori’s Oreo Balls

1 package of Oreo cookies (can use any fl avor, the peanut butter ones are good for Thanksgiving and the peppermint

ones would be nice for Christmas time)1 package cream cheese.

1 package of chocolate almond bark

Smash the cookies and mix together with the softened cream cheese and roll into

small balls and put in the freezer about 20 minutes. Melt the chocolate and dunk the balls into it. Store them in freezer or

refrigerator and serve.

Nick’s Candy To Die For

Base: 1 cup chocolate chips 1/4 cup butterscotch chips 1/4 cup creamy peanut butter Combine in small saucepan. Stir constantly on low heat until melted and smooth. Spread on bottom of 13” x 9 “ pan.

Filling: 1/4 cup butter Melt in heavy saucepan on medium heat. Stir in 1 cup sugar and 1/4 cup evaporated milk. Bring to a boil and stir for 5 minutes. Remove from heat and stir in 1-1/2 cup marshmallow creme, 1/4 cup creamy peanut butter, 1 tsp vanilla. Then add 1-1/2 c. chopped salted peanuts. Spread over base layer and refrigerate until fi rm.

Caramel: 1-14 oz. pkg of caramels 1/4 cup heavy whipping cream Combine in saucepan and stir over low heat until melted. Spread over top of fi lling and refrigerate until smooth.

Frosting: 1 cup chocolate chips 1/4 cup butterscotch chips 1/4 cup peanut butter Stir over low heat until melted. Pour over caramel layer. Refrigerate for at least an hour. Cut into squares and store in refrigerator.

Radar’s Doggie Treats

1 box Jiff y Corn Muffi n mix 1 egg (shell and all) 1 pound liver (drained) 1/2 tsp Garlic power (opt.)

Pre-heat oven to 350º. Mix all ingredients baby food consistency. Pour batter evenly into a jelly roll pan, or 2-9.5”x 11” inch baking pans sprayed with cooking spray. Bake at 350 º for 20 min or until tooth pick inserted comes out clean. Cut treats into the desired size (0.5” x 0.5” works for most dogs). Break the treats apart. Bake for another 15 min. Allow treats to cool and dry completely before storing in the fridge. Treats will keep up to a week.

In Oklahoma, we’re pretty good at handling bad weather. Here at Oklahoma’s Own News On 6, we want

to off er a few extra suggestions to ensure everyone is safe and warm. Chief Meteorologist Travis Meyer

brings you some winter weather safety tips:

• Keep a good supply of rock salt and sand (kitty litter can be substituted for sand) to help with keeping your walkways safe. • Add a snow shovel to your disaster supply kit at home for when the snow is heavy. • Store a good supply of wood for your fi replace or wood-burning stove in case gas or electricity is lost. • Be sure to winterize your home by cleaning the gutters, trimming away trees, and fi xing roof leaks. • Remember to keep faucets dripping during periods of cold weather to keep pipes from freezing. • In case a pipe does burst, have someone teach you how to turn off the water valves. • Have a mechanic do a winter weather safety check for your car to keep you protected. • Keep your fuel levels as full as possible, at least half a tank, in case it is hard to reach a gas station.

• Place an emergency kit in your car. • Dress in warm layers with the outer layer being water repellent and carry gloves and a hat with you. • Cover your mouth with a scarf to protect your lungs when you are outside. • Please check on neighbors, friends, family and the elderly so we can keep all Oklahomans safe this winter.For a complete list of winter weather tips, kits, and more please go to NewsOn6.com/winterweather.
