    1.1. probiotics

    Khi nim

    - Cnh tranh nng lng, v tr bm:Probiotics cnh tranh cht dinhdng v nng lng vi cc vi khun gy bnh duy tr v pht trin. Bng

    3.1. Nghin cu ng ca alginate n kh sng st ca vi

    khun L. acidophiluso q k

    Trong nhng nm gn y alginate c nghin cu s dng kh nhiu

    trong cc ch phm probiotics v cho thy kh nng bo v vi sinh vt khi

    nhiu iu kin bt li [15], [41], [42]. Cc nghin cu di y c tinhnh nhmnh gi tc dng ca alginat trong qu trnh ng kh vi sinh vt

    v so snh tc dng ca n vi mt nguyn liu c dng ph bin trong

    ng kh l sa gy.

    Trong sn xut, bt c nguyn liu no cng cn phi c tiu chun

    lm mc nh gi cht lng, gip sn phm cht lng tt. i vi nguyn

    liu probiotics, theo tiu chun ca IDF, s lng VSV trong 1 gam ch phmt 108-109 cfu/g. Mt khc, i vi nguyn liu ng kh, hm m l mt

    tiu chun quan trng, v hm m cao lm cho nguyn liu d hp th nc

    tr li [11], kh m bo t l VSV sng cao. Mt tiu chna cn quan tm

    4.1.1. c ngy

    Khi nh gi th cht ca nguyn liu to thnh sau khi ng kh, mu

    ng kh vi dch sa gy 10% v mu ng kh vi dung dch alginate 2%

    c th cht xp hn so vi mu ng kh vi nc ct v dch ly tm. Tuy

    nhin, mu ng kh vi alginate li b kt thnh mng, kh lm nh. Vic

    mu ng kh vi dung dch natri alginate to thnh dng nguyn liu kh

    nghin nh thnh dng bt mn c th c gii thch nh sau: alginate thc

    cht l mt heteropolyme saccharid mch thng cu to t hai gc uronic l

    acid - L- guluronic (G) v acid - D- mannuronic (M) [43]. Chnh cu trc

    ct (105). Kt qu ny tng t vi kt qu ca Lim Chi Minhv cng s

    thc hin nm 2008 [32]. Theo kt qu cng b ca Lim Chi Minh, t l

    sng st ca VSV sau ng kh ca sa gy (13,03%) cng cao hn so vi

    nc ct (0,07%).c bit, theo Lim Chi Minh, t l sng stca VSV sau

    khi ng kh vi nc (0,07%) tng ng vi kt qu nghin cu trn

    chng vi sinh vt khc cng thuc chi Lactobacillus l Lactobacillus

    salivarius vi nc(0,08%).

    Tc dng bo v vi sinh vt trong qu trnh ng kh c th c gii
