What are your
goals?
Package an existing
nitro beer you have on
tap?
Create a nitro variation
of an existing beer?
Design a new nitro
beer?
Make something
entirely new?

3 Methods of Nitrogenating Beer For Cans
7
In-Tank Nitrogenation
High pressure rated brites and PRVs
Push GN2 through carb stone, monitor head space pressure at 45psi
Counter-pressure fill, dose, seam, and sell
In-Line Nitrogenation
Must have gassing panel or in-line membrane infusion device
Infuse GN2 or beer gas (75% N2, 25% CO2) through gassing panel from brite tank to filler
Counter-pressure fill, dose, seam and sell
In-Can Nitrogenation
Package low carb beer from brite within 1.2-1.8 vol range
Fill at low pressure, dose, seam, and store cold for 5 days before selling
Easiest method

Nitrogen Solubility
8
Pressure
25-45psi in can
Temperature
40F or colder
Time
5 days stored cold
Low solubility in liquid
Requires 3 environmental conditions for beer
Time can be accelerated by increasing surface area of the beer exposed to nitrogen

Agitation
You can fast forward the time it takes for nitrogen to dissolve into solution by increasing amount of liquid exposed to the nitrogen molecules in the headspace over a short period of time
By shaking a can of pressurized beer dosed with LN2 for two minutes, you can achieve the same solubility state as 5 days cold

A Warning About
Refermentation
Can pressure ratings may vary from manufacturer and seam quality
Dosing can increase interior can pressures to 45 psi, leaving less room for pressure build up
Unfiltered, non-pasteurized beers with residual sugars are most susceptible

Widget Technology
11
First patented by Guinness in 1972
First commercial product released
in 1989
Floating widget released in 1997
Fixed Widget Released by Ball
Corp in 2010
© 2020 Chart Industries, Inc. Confidential and Proprietary
Fixed widgets serve as nitrogen
storage containers inside the can
Two one-way valves
Pressurized to equilibrium
After opening, the pressure
differential causes the gas to escape
and agitate the solution
Drink from the can or pour into a
glass
12© 2020 Chart Industries, Inc. Confidential and Proprietary
Important to maintain fill level and headspace
consistency
Three purge cycles recommended at 60 psi
Cans must be immediately inverted to allow LN2 boil-
off to occur at widget valve
Can pressures must be tested from lid, not from
bottom

The Hard Pour
Inexpensive and easy
alternative to the widget
Exactly the same cascade /
nitro effect
Must have means of achieving
cold infusion if not pre-
nitrogenating
Requires consumer education
Best consumed from a glass
14© 2020 Chart Industries, Inc. Confidential and Proprietary
Dissecting a
Nitro Head
The cascade effect is
caused by a combination
of protein hydrophobicity
and super small nitrogen
bubbles
The head has two parts:
smaller, compact bubbles
on the bottom and larger,
airier bubbles on top

The Right Glass Does Matter
17
Don’t stop the consumer education at how to pour…
Keep Cold, Drink Fresh, Pour Hard, and Use the right Glass!
Flat Bottom
No tulips
2-5 degree slope
Taper toward the rim
Slope changes will cause the cascade to
clump together

Clostridium
Botulinum (CBot) Toxin-producing bacterium
found in nature and present on all food surfaces
Requires anaerobic conditions to sporulate and create toxins
Requires heat to kill or cold chain to prevent
Risky in foods with pH of 4.6 and above
Managing TPO will not prevent growth

Filling
Use existing filler for
beer
Tank, In-Line, or In-Can
nitrogenation
No CO2 break out to
worry about
Make sure you dose with
liquid nitrogen

Nitro RTDs
Similar to hard seltzer, create neutral base from malt and design cocktails
Carbonated cocktails are most popular
Widget cans being used for aerated cocktails
Opportunity for “shake-and-pour” widget-less cans
22© 2020 Chart Industries, Inc. Confidential and Proprietary
Canned Wine
Attract new market
Easy to transport and drink outdoors
Drink from the can or pour into a glass
Improved Shelf Stability for Natural Wine
Opportunity for Nitro wine-based cocktails

Principles of
Liquid Nitrogen
Dosing
27© 2020 Chart Industries, Inc. Confidential and Proprietary
Safety First!
28
Nitrogen is an inert gas
Tasteless, odorless, colorless
Asphyxiant
Liquid Nitrogen exists at -180°C (-320.4°F)
Will cause burns on skin with prolonged exposure
Good NewsNitrogen will not affect the taste or freeze your beer
Chart Dosers are not pressure vessels
Open to atmosphere and automatically vents

Nitrogen is the most Common Gas
Found in the Air…
29
…but it can only exist as a liquid at

Liquid
Nitrogen
Consumption
Example
35
40 BBLs into 16oz Cans
35 cans per minute
.25g Liquid Nitrogen per Dose
40 BBLs = 9920 Cans (assuming no loss)
9920 x .25g = 2480g or 2.5L of LN2 (less than 1 gal)

Application Example
36© 2020 Chart Industries, Inc. Confidential and Proprietary
Liquid Nitrogen
Expansion
Expands rapidly from a liquid to a gas
1 : 694 volumetric expansion
.5g dose equates to 430ml after accounting for density
Visual “fog” characteristic of cold water vapor is being pushed out of the head space as the nitrogen expands
