    t Schug Carneros Estate Winery in Sonoma, the traditions of the Old World almost

    seamlessly meld with modern winemaking techniques. By using only the finest

    grapes available and steadfastly maintaining the highest winemaking standards,

    their wines have gained acceptance worldwide as true contemporary classics. Founded in

    1980, Schug Carneros Estate Winery is the showcase and life-long dream of one of Cali-

    fornias most celebrated winemakers.

    In the 1970s, as Joseph Phelps Vineyards founding winemaker, Walter Schugs reputa-

    tion flourished as he made Californias first proprietary Bordeaux-style blend, now known

    around the world as Insignia and Joseph Phelpss legendary vineyard-designated Eisele

    Vineyards and Bacchus Cabernet Sauvignons. Drawing on his long experience in the

    production of fine wines in both Europe and California, Walter set up his own winery

    with his wife Gertrud in the cool, marine climate of the Carneros Appellation in the

    southern reaches of Sonoma County. Here he could concentrate on the two varietals that

    had always been closest to his heart: Chardonnay and Pinot Noir.

    In 1995, Michael Cox, a Sonoma-born winemaker, joined Schug. Trained in enology at

    UC Davis, he had worked in several California wineries before he moved from the NapaValley to Sonoma to work with Walter Schug as assistant winemaker. After just a year he

    was promoted to winemaker and placed in charge of all of the day-to-day winemaking

    duties, a position he still holds today.

    The roster of wines currently available from Schug Carneros includes a Sauvignon

    Blanc, a trio of Chardonnays, two Merlots, three Pinot Noirs and a pair of Cabernets.

    There is even a beautifully balanced Rouge de Noirs which is a Sparkling Pinot Noir that

    was inspired by Walter Schugs German ancestry. Each of them, like every wine at Schug

    Carneros, is lovingly handcrafted and proudly presented. All varietals are produced in

    limited quantities.

    If youd like to see for yourself what the wines

    are like, take the drive up Bonneau Road (about

    ten minutes from the town of Sonoma) through thevineyards and past the rose borders to the winery

    building, tucked into the hillside that contains the

    barrel caves. Behind the German style post-and-

    beam building there is a panoramic view of the

    surrounding area, and on a clear day Mount Diablo

    is visible off in the distance. Picnic tables are also

    available should you wish to enjoy your lunch in

    the sun, overlooking the winery chefs own herb

    garden.

    Hidden next to a dilapidated 40s-era former filling station on Highway 2

    Calistoga lies the Wine Garage. A unique wine shop in Napa Valley that retail

    wine in the store under $25. Sound crazy? Its true. And the proprietors ToddJoy Miller, have hit on a niche in the Valley that had been very missed by the lo

    there.

    There are a lot of winemakers here that cant afford to drink the wine

    make says Miller. Thats crazy, yes, but who can afford to drink a $65 bottle

    dinner every night?

    Many people miss The Wine Garage on the first try upvalley, but the sear

    well worth it. Miller stocks wine from all of Californias wine growing reg

    including fifty Napa selections and 40 from Sonoma County. When he first so

    out buying the initial inventory, I enlisted a local farmer buddy and his 15-

    box van and off we went all over California hunting down the deals. I tried to

    out the small producers who didnt have distributors so I could pass the sav

    on to my customers. And Miller did just that. His store is stocked with hquality juice all under $25 and all are unique. Most labels in the shop

    unrecognizable but all pass the same test; everything passes over Millers

    before he makes a buy. If I dont love it, I dont buy it, period. Sometimes I

    taste over a hundred wines in one day, load up the truck and haul it u

    Calistoga, unload at the store, and maybe I will crawl in bed by 3 a.m. Needle

    say my buddy bowedout of thedeal after theirsecond trip.I initially recruited

    on a hey lets go wine tasting in Santa Barbara until he realized how much w

    it entailed. Poor guy, he had to be at the farm at 5 in the morning.

    It is all worth it. Millers customers love him. He has a unique ability to h

    verbal description of a customers favorite wine and translate that in

    recommendation for sometimes a third of the cost. I have people all over

    country that use me as their local wine shop. I ship right to their door andcost of the shipping is a drop in the bucket compared to what they save on the

    of the wine.

    Miller gets deals on Napa wine too. I have winemakers from small win

    stop in every week saying I have something that will fit into the store, if they o

    If wineries were identified by tempera-

    ment, Rutherford Hill would be the strong,

    silent type. Founded in 1976, the winery

    broke new ground in the development of

    Merlot in the Napa Valley and has been going

    about business ever since in a humble, confi-

    dant way. Theres good reason for the confi-

    dence as Rutherford Hill Winery is recognized

    worldwide and critics consistently rate the

    wines as top notch.

    In 1996, Anthony Terlato and his sons, Bill

    and John, well known for their expertise with

    fine European wines, purchased the property

    and immediately improved the vineyards and

    the grape sources, and by the year 2000, had

    built a winery within the winery. The 5,100-

    square foot state-of-the art facility, functional

    in time for that years harvest, created an envi-ronment in which small lot wines could be

    given the time, care and consideration they

    needed within the Rutherford Hill portfolio.

    The familys guiding principle, Quality is a

    way of life, characterizes their pursuit of excel-

    lence, evident by another early decision to

    reduce production by 14,000 cases. This elim-

    inated inferior lots and met the demanding

    new quality standard they had set.

    Its no wonder then, that Rutherford Hill is

    affectionately called the king of Merlot,

    those lush, purple-black grapes from the

    surrounding region bursting with fruit flavor,

    nurtured by deep volcanic soil and afternoon

    sun that lingers on the hill. Today, 75% of

    production is aimed at the varietal and the

    2004 Rutherford Hill Merlot Reserve comes

    from the finest vineyard sources and barrellots. Dense and voluptuous on the nose, this is

    a multi-layered, well-structured blend of

    Merlot and Cabernet Sauvignon, offering

    depth and balance with rich flavors of black

    cherries wrapped in Belgian dark chocolate.

    This wine will age gracefully over the next

    decade but is luscious now and if there were

    wine personality contests, the Reserve Merlot

    might be voted most pleasant with food and

    friends.

    Gather a group and plan a visit to the

    winery, located at the peak of Rutherford Hill

    Road, just off Silverado Trail. Its a magical

    location and the view from the oak-studded

    picnic grove extends as far as the eye can see,

    glorious colors in the valley the backdrop to

    the wine in your glass. Picnic tables are placed

    for optimum gazing; squirrels chatter, jays

    chirp, and blue-belly lizards scatter in the

    brush. If youre looking for a peaceful way to

    spend an afternoon, this is the place, and as

    the friendly staff likes to say, life looks be

    Riesling is a white wine grape variety, just as Chardonnay or

    Sauvignon Blanc are also grape varieties. Unfortunately, Riesling does

    not enjoy the popularity of Chardonnay, but is a refreshing wine at a

    great value. In my opinion, its light characteristics offer a nice change

    from the trend toward heavier style wines in either red or white

    especially during the summer.

    A big myth about Riesling is that it is always a sweet wine. This may

    have been true during the sixties when a sweet Rieslings were popular,

    but it is not true today. The ubiquitous Blue Nun brand was a sweet

    wine from Germany during that period and it contained some

    percentage of Riesling and may have contributed to the growth of thisfalsehood. Wine drinkers today have more of a dry wine preference and

    thankfully enjoy many more choices when it comes to Riesling.

    Native to Germany, where it has grown extensively for centuries,

    Riesling wines have a delicate fruitiness with a noticeable acidity and

    pleasant spiciness. German-made versions are categorized according the

    degree of sweetness, with the price generally increasing hand in hand

    with the amount of sugar remaining in the wine. The residual sugar

    range of categories start at a level barely detectable and go all the way to

    extremely sweet. In France, it is also a popular variety in the Alsace

    region, which borders Germany, and where it is always made dry.

    California Rieslings offer a range of styles, from dry to sweet, and the

    style is not always indicated on the label. When faced with making a

    purchasing decision for a Riesling wine, be sure to ask if it is a dry or

    sweet (also referred to as off-dry). In either case, the wine has aromas

    of green apples, is light in body, has little to no influence of oak barrel

    aging, should be served very chilled to bring out its crisp acidity,

    maybe best of all, pairs wonderfully with many dishes, including sa

    spicy and Asian foods. It also serves as a great warm weather w

    because of its lower than normal alcohol level.

    As a sweet dessert wine, Riesling is often made as a Late Harvest s

    Grapes are picked in November, when they are extremely ripe

    sweet, with some having reached a dried, shriveled condition fro

    grape rot known as Botrytis.

    Rieslings are best grown in cool areas of California, Oregon

    Washington, where the grape acidity level remains relatively high r

    up to harvest time. Interestingly, many of the best Rieslings I hrecently tasted are being made in the Finger Lakes region of New Y

    State.

    Preheat oven to 350 degrees

    Six 3-inch cut beef shortribs

    1 unpeeled orange, cut in to 1pieces

    1 ounce ginger, cut into 1pieces 1 carrot, cut into 1pieces

    1 medium onion, cut into 1pieces

    1 tablespoon Sambal chili paste

    1 kaffir lime leaf

    1 bunch scallions, finely sliced on the diagonal

    1 small can Hoisin sauce,about 12 oz.

    2 cupschickenstock

    4 tablespoons olive oil

    Heat olive oil to medium high in an oven-proof roastingpan. Addshort ribs and

    brown on all sides until golden brown.Set ribs to the side.

    Addorange, ginger, carrot and onion to the roasting pan.Cook, stirring occasionally, until onion is soft.

    AddSambal chili paste,kaffir lime leaf, hoisin sauce and chicken stock. Bring to a

    simmer and add short ribs. Place covered roasting pan in 350 degree oven for

    about 1-1/2 hours or until short ribs are verytender. Remove short ribs from pan

    and keep warm. Strain braising liquid and discard solids. In a shallow bowl or

    plate,mound steamed Basmati rice, place one short rib on top, add braising liquid

    and sprinkle with sliced scallions.

    The calendar tells us that summer is now in full swing. It is

    definitely the season for ribs but, with every backyard cook laying

    out sheets of ribs doused with some relatively unimaginativesauces, it is also time to become more adventurous guided,

    when possible by Chef Marcus Uribe who has followed his heart

    into famous kitchens of the world, starting as a boy of six.

    restaurant has worked at several of Napas best known and most

    respected eateries, adding the secrets of Asian cooking techniques

    and ingredients to his beloved classic French style of preparation

    and serving.

    Asked to pair one of his favorite creations with a brisk red

    wine by ZD Wines, Chef Uribe was quick to offer his distinctive

    Mongolian Braised Short Ribs. Dont let the use of some lesser

    known ingredients keep you from trying the recipe. With theexpanded spice and foreign food sections at most supermarkets,

    it is relatively easy to find such things as Sambal chili paste and

    Hoisin sauce and kaffir lime leaf, and the very tantalizing hint of

    these unusual flavors will earn the cook high praise.

    To serve this fragrant and enticing dish and the recipe will

    provide ample servings for six heap a mound of cooked

    basmati rice onto each plate, and top with a braised rib. Add

    some of the braising liquid and sprinkle with sliced scallions. A

    crunchy young green salad is a good side dish and for wine,

    select a fruity, un-oaked Pinot Noir, such as the 2007 ZD Pinot

    Noir as suggested by Chef Marcus. Your guests will cheer yoursuccess and originality!
