    You may be tempted to think that hang time refers to how longyou stand at the tasting room bar while sipping through the wine list.

    However, in the wine-growing world it can also be a subject of pride,

    but, thankfully, for a more meaningful reason.

    Hang time is all about grape ripeness. With trends toward more

    concentrated, bolder and more alcoholic red wines over the last

    decade, winegrowers work hard at choosing when to pick grapes at

    harvest so that they get the ripest grapes possible, without being

    overripe, or with too high a sugar level. Allowing grapes to hang on

    the vine longer before picking can add fine qualities to a wine, but its

    not without risk.

    Relatively speaking, very ripe grapes produce a very high sugar

    level, which ferments to a very high alcohol level. But while sugarlevels, measured on a scale called Brix, rise inside the grape, the

    acidity decreases. Acidity is important because its what gives a wine

    freshness and a lively fruitiness. So, achieving the optimal balance of

    sugar and acidity at the time the grapes are picked is generally the

    primary objective.

    Grapes are typically picked when Brix readings are anywhere

    between 22 and 28 degrees, depending on the grape variety and the

    desires of the winemaker. Waiting for higher sugar levels means the

    possibility of the grapes becoming overripe, causing an unpleasant

    quality in the wine or else problems with fermentations that tend to

    be slow, or stop altogether.

    So, if you think of the growing season as the amount of time

    grapes remain on the vine, from bud break in the spring to picking

    time at harvest, then hang time is generally defined as the

    amount of time grapes remain on the vine after reaching a sugar

    level of about 24 Brix.Wine regions with warm but not very hot days and cool

    afternoons and evenings, like Monterey County, have a longer

    growing season than warmer regions up to a month longer when

    you take into consideration early budding and late ripening. They

    therefore capable of enjoying more hang time for the grapes.

    Stretching out the growing season allows the grapes to develop mo

    intense flavor, color and complexity, characteristics of great wines.

    Although measuring ripeness has been debated over the years,

    most people rely upon scientific measurements of sugar, acid and

    levels in the grapes. Others simply taste and examine the berries,

    seeds and skins, checking for physiological maturity. Regardless of

    how it is measured, there is little disagreement among winemakersto the value of grape hang time and its impact on their grapes.

    It seems like at least one in every three conversations I have with

    people in the wine trade, whatever the ostensible reason for the chat

    was, ends up discussing cork and its alternatives. With more than

    four billion bottles domestically purchased last year, youd think this

    would be a settled issue, but, alas, the inverse is true: the more wine

    we make and sell, the more options of bottle enclosures we have, not

    less, and some packaging solutions dont even involve bottles or

    enclosures as we normally think of them at all!

    Cork for an enclosure rose naturally enough given its the bark of

    different species of oak trees, and oak is one of the traditional

    woods for barrel staves, so it makes sense to get the most out of

    whats already being used; farmers are well known for frugality and

    lack of waste. What is not so well known is that it takes almost

    three decades of growth and several bark harvests, separated by

    seven years or more, before the first true harvesting of premium

    cork-level material is possible. Cork is one hundred percent natural,

    but its long lag time makes it less than ideal in todays global,

    accelerated wine world.

    Thus have evolved a number of alternatives to the pure, grade o

    cork, which, not incidentally, can run most of a dollar each even

    when purchasing large volumes. The simplest of these other optio

    involve different forms of the same natural cork but in combinatio

    with various stabilizers to allow smaller pieces of cork to be forme

    into the standard wine cork shape. Known as technical or

    agglomerated corks, these provide an affordable solution which giv

    most of the same oxygen transmission and enclosure performance

    a much more affordable cost.

    A middle ground between these two comes by way of the spark

    wine producer, whose corks require a special shape and performan

    because of the extra pressure from bottle fermentation; their most

    common cork uses two disks of natural cork on the stalk of the

    mushroom with agglomerated technical cork making up the cap

    the remainder. The still wines twin top does the same thing, bu

    with a disk on both ends and technical cork sandwiched between

    Moving away from a wine cork shape altogether takes us to the

    twist top, more formally known as the Stelvin enclosure; a liner cabe employed to precisely control the oxygen transmission rate, bu

    there is no head-turning thunk of the pulled cork. There is also th

    Zork, which combines artificial materials with an unwrapping

    process, and glass stoppers, which work best as a cork stopper

    replacement except for one thing: the O-ring necessary to mate th

    glass stopper with the glass bottle is the crucial element in how

    effective the stopper is.

    As you can see, while the common wisdom is that once the gra

    are in and the aging in barrel is done all the problems are over, the

    reality is that until the wine is in your mouth, there are decisions t

    make and potential problems to avoid every step along the way. Nenclosure solves all the problems, and the best option, the traditio

    all-cork cork, is not inexpensive; there are lots of more affordable

    alternatives, but each lacks something, making it less than ideal as

    replacement. Keep that in mnd the next time you reach for your

    opener and enjoy!

    During a wine tasting at Beaulieu Vineyard, you will not only

    experience todays great wines, you will also gain an understanding

    how the wine business has evolved in the past fifty years and in

    fifty years before that.In 1900, Georges and Fernande de Latour visited Rutherford,

    which Fernande declared a beau lieu, or beautiful place. Georges

    founded Beaulieu Vineyard in the red dust of Rutherford to create

    wines as great as, or even greater than, Frances best. BV was able to

    stay in business during Prohibition by producing sacramental win

    for San Franciscos Catholic churches.

    In 1938, Georges brought Andr Tchelistcheff to the BV team.

    Known as the Maestro, Andr was arguably the winemaker most

    responsible for the Napa style made so famous in the 1970s and

    1980s. Among many innovations, he introduced cold fermentation

    for white wines, secondary malolactic fermentation via inoculation

    reds and the use of small French oak barrels for aging. He alsoproduced Napas first cult wine, the Georges de Latour Private Rese

    Cabernet Sauvignon.

    Since that time, BV has continued to innovate. In 2008, a winer

    within-a-winery was created to craft the small-lot reserve bottlings.

    This strategy, like many others pioneered by BV, has been emulated

    by a number of other wineries.

    BV produces a wide range of wines. Besides the Georges de Lato

    Private Reserve Cabernet Sauvignon, the Reserve series offers

    Cabernet Sauvignon, Chardonnay, Pinot Noir and the Tapestry red

    blend. The BV Napa flight includes Cabernet Sauvignon and

    The year was 1969. Neil Armstrong took

    his first steps on the moon; the New York

    Mets were on their way to their first National

    League pennant; Butch Cassidy and the

    Sundance Kid was topping the years box

    office sales. And an intrepid young

    Midwesterner, yearning to answer the call of

    his ancestors, was scouring Napa Valley for

    the perfect piece of land on which to plant the

    family flag.

    Now, on the eve of Jay Corleys 81stbirthday, he looks back at his 40+ years in the

    Napa Valley and looks forward to the next

    generations taking the reins of the Corley

    Familys Monticello Vineyards

    A Dream Takes Root

    In 1969, the Stanford-educated Corley was

    a running a successful publicly traded

    company in Los Angeles, but wanted to trade

    his three-piece suit for overalls. After all,

    farming was in his blood. Every generation of

    my family for 400 years has been farmers. As

    a boy, I loved spending time on my

    grandfathers farm in southern Illinois. I just

    always wanted to get back to farming.

    At the time, Corleys friend, a wine shop

    owner in Los Angeles, was developing a piece

    of property in Yountville. He invited Corley to

    come for a visit, and Corley was hooked. I

    would come up nearly every weekend for nine months to see what

    was going on here. I would just roam around, get to know people,

    ask questions. There werent many people around, but the ones who

    were, as Corley ticks off the names of

    contemporary Napa Valley pioneers, were

    very helpful.

    A self-described Burgundy guy with a

    taste for Pinot Noir and Chardonnay, Corley

    was looking for a place where those varieties

    would thrive. He found it in an 80-acre pru

    orchard at the southern end of Napa Valley.

    He liked the propertys proximity to the

    cooling breezes of the San Pablo Bay and the

    fact that it sat next to the Napa River. I did

    think of being on Highway 29 to capturevisitors, I wanted to be on the river because

    knew access to water would be essential.

    Once the property was cleaned up, Corl

    didnt cut corners planting the vineyard. W

    used all of the new technology coming out

    Davis. We tested the soil everywhere, and w

    drilled holes in the ground to see how the

    water was flowing. Then we planted the vin

    closer together than most people were doin

    in those days to stress them.

    The Next Generation

    Things went well enough those first year

    to make Corley think, we can do this. Soo

    the successful winegrower wanted to build

    winery. As an graduate student years earlier

    Corley had written a thesis on starting up a

    winery. He opened his desk drawer, dusted

    the old thesis and got started.

    All seven of Corleys children helped out at the winery during th

    high school years. But Corley encouraged them to go off, experienc

    the world outside of the winery where they had grown up, and the

    come back if they wanted. Kevin Corley, now Winegrower and

    President, became a successful banker in Los Angeles. Stephen

    Corley, now the winerys Director of Sales and Marketing, was a CPA

    who worked at the accounting firm KPMG before he came back to

    the winery in 1997.

    Chris Corley, the youngest of the three, has worked at the winery

    the longest. Initially aiming to be a marine biologist, Chris eventually

    decided he would rather drown in wine than sea water. He worked

    in the cellar under other winemakers for 13 years before he earned

    enough stripes to become head winemaker in 2002.

    Now the three brothers form a harmonious management team. Three

    of them is better than one of me, says the senior Corley.

    The Jefferson Connection

    Jay Corley was a great admirer of Thomas Jefferson, who was not

    only a founding father but also Americas first great connoisseur. He

    honored the third President by naming the winery Monticello

    Vineyards after Jeffersons mountaintop home in Charlottesville,

    Virginia. In 1984, the Corleys built the Jefferson House, a very clo

    replica of Monticello, on the Home Ranch that is now used as offic

    space and to entertain guests. The four acres of grounds surround

    the Jefferson House are comprised of the same trees, shrubs and

    flowers Thomas Jefferson planted at Monticello.In the quaint, rustic tasting room, the staff pours a little bit of every

    thing the Corleys produce from 80 acres of vines on the Home Ranch

    the Oak Knoll District as well as four other estate vineyards in Napa

    Valley. With 30 vintages under their belts, the Corleys like to show off

    their library wines in reserve tastings in the Jefferson House. Slip into t

    comfortable black leather chairs and enjoy a flight of Cabernet Sauvi-

    gnon, some Merlot, or their very popular estate Pinot Noir. People co

    for our Cabernet Sauvignon, Stephen Corley says, but they leave wit

    Cabernet and Pinot Noir.

    Todays wine connoisseur has grown up

    with wine no longer being a sought-after

    culture, but a sheer household necessity.

    They no longer depend on adolescent movies

    in order to determine what wine is politically

    correct to drink. They are even very skeptical

    of well-known magazine scores that tend to

    give better grades to more frequent

    advertisers and Frenchy wines.

    The new, bold connoisseurs are far more

    confident they know exactly what they like

    and what they dont. These connoisseurs are

    also looking for something different: different

    blends, different appellations and more

    boutique-style wines that are handcrafted

    and hand pushed, small-lot wines.

    Suisun Valley is often referred to as The

    Napa Back Road. Quite surprisingly, The

    Napa Back Road only takes about 20

    minutes from the Highway 121 Napa

    entrance of the Silverado Trail to The Vezr

    Family Blue Victorian Winery, just one of 18

    wineries in the Suisun appellation. Better yet,there is only one traffic light between

    Silverado Trail and Suisun Valley.

    As these new wine connoisseurs become

    club members of the boutique wineries in

    lesser-known appellations, they are truly

    becoming cult-like about their support of

    their favorite off-the-main-road boutique

    winery. With this said, club members of all

    three of the Vezr Family wineries in Suisun

    Valley are some of the most devoted and

    enthusiastic of all fans and one can easily see

    why. Vezr Family wines are exceptional, its

    the only place you can taste and buy $200

    quality wines for $45 to $90 a bottle, and

    every wine is good to exceptional. You will

    not encounter the all-too-common scenario,

    where only one out six flights of wine is

    marginally acceptable to be considered for a

    mercy bottle. (Definition: When the winery

    staff is so nice and yet none of the wines

    appeal to you, you simply buy a bottle to be

    kind i.e. mercy bottle). At Vezr wineries,

    this is never the case. In fact, there are more

    than 20 different wines and ports and all of

    them are so delicious you have a hard time

    stopping yourself from buying a bottle of

    everything you taste.

    The fact that all of their wines are so goodis not by chance. One reason is, of course,

    the wonderful Suisun Valley which presents

    one of the worlds top ten growing conditions

    for fine wines, the other reason is passion,

    and family passion at its best. The Vezr

    family name is an ancient Hungarian name of

    the Chieftains that travelled over the Caspian

    Plains to Central Europe with Attila the Hun.

    Needless to say, Hungarian history, since that

    time, is filled with passion. Hungarians are

    often known for living life large and peopl

    who have such a driving energy to make

    dreams into reality. In fact, Napa and

    California itself owe its wine industry and

    fine grape varieties to the dreams and visio
