Thank-you to Ace Hardware! President’s Message
April showers bring May flowers; my thought is keep an umbrella handy!
As you may have noticed that we have the slide show up and running. I want to thank Rita Long for her help getting us on track and working through the program adjustments. I would like to thank Cat Simkins and her team for the great new brochures for renting our fa- cility at the NBSC. The new brochures that Julie Mendez and her team have put together for advertising, in our newsletter and TV is also very well done. Thank –you to both committees for doing outstanding jobs.
Volunteers, we need you to fill in your hours each month in the special log, located at the re- ceptionist desk. The county requires us to show how many volunteers we have and how many hours they (you) spend each month. So please keep making your entrees.
Our membership is low right now, mostly due to many members who have not renewed and are still enjoying our activities. As a reminder program leaders are required to verify member- ship of all who attend and charge the non-member fee for those who have not renewed.

Ask Dotti
Happy Easter to all. I hope you have a wonderful holiday. I am sure we'll all be rolling in the aisles with tummy aches! I know you have your favorites recipes for ham, turkey or whatever, so no sense in going into that. How about a suggestion for a side dish and a simple dessert? Of course you can go fancy and make a bunny cake, but at our age forget the work!
Happy eating!
MAKE AHEAD GREEN PEA AND CRISP CORN SALAD
1 lb. Frozen tender peas, thawed and drained ¾ cup frozen kernal corn ½ cup minced purple onion ½ cup diced red pepper 1 cup shredded sharp cheddar cheese ½ cup chop, cooked bacon ¼-1/3 cup sour cream ¼-1/3 cup mayo salt and pepper to taste
In a large bowl combine first 6 ingredients. Combine sour cream and mayo. Stir into veggies until creamy. You don’t want the salad runny. Add salt and pepper and mix well. Refrigerate, uncovered at least 2 hours.
Yield; 6 servings
MINI RUM CAKES
2 cups cold milk 1 pkg. (3.4 oz) instant vanilla pudding mix 1 teaspoon rum extract 6 individual round sponge cakes 1 1/2 cups whipped topping fresh or frozen raspberries
In a small bowl whisk milk and pudding mix for 2 minutes; stir in extract. Let stand 2 minutes or until soft-set. Place sponge cakes on dessert plates, top with pudding. Garnish with whipped topping and berries.
NOTE: strawberries can be used. Use your imagination!
yield; 6 servings
ENJOY!

MUCHAS GRACIAS!
Many card players enjoyed the card party March 21st.
Dotti’s awesome dessert bar.
Thanks to all who came out and played at our Card & Game Party on March 21st. About 70 people had good fun playing Pinochle, Canasta, Mahjongg, Uno, Poker and so much more. A special thanks goes out to our Ops. Manager Barbara for selling tickets, helping with publicity and overseeing the room set-up and tear-down. Thank you, Yvette, and Naomi for decorating the room. I am grateful to Frances for her help collecting door prize tickets and selling raffle tickets. Dotti and her helpers Judith and Bonnie prepared and served a wonderful lunch, and Dotti's dessert table was awesome, proving again why it's called "fabulous" -- thanks! So much help from so many terrific people truly made this event a success! Cat Simkins Special Events Coordinator
