enrolling in 4-H this year will be
done by YOU, the 4-H family. In
Region 15, all four counties will
be working with families to help
them go to https://iowa.4honline.com
to sign in and choose their 4-H
projects, 4-H activities, record their
awards and enter their livestock ID
information or approve weigh-in information. We have included a help
sheet with this months newsletter. Please DO NOT set up a new family
profile. You DO have a profile because your family was in the system
last year. For additional help on how to go online and re-enroll please
check out the 4H Online help sheets at:

2011 BEEF SCHOLARSHIP EXTRAVAGANZA
The 2011 Beef Scholarship Extravaganza will be held on
Friday, December 16, 2011 at Kildee Hall on the campus
of Iowa State University. This challenging and competitive
one-day event is open to teams of two or three high
school juniors and/or seniors. Team members do not
need to be from the same high school or county in order
to compete. The total potential scholarship dollars
available at this event is over $7,500. For more

DOG AGILITY TRIALS
Iowa City Dog Obedience Club who sponsors many of the
awards in the dog project is hosting Agility Trials Friday,
December 9 through Sunday, December 11th at the Iowa
Equestrian Center. Times are as follows: December 9th,
NOON-9:00PM; December 10th, 8:00AM-7:00PM;
December 11th, 8:00AM-7:00PM.
YOUTH COUNCIL UPDATE
DONATION DRIVE AT AWARDS NIGHT
The County 4-H Youth Council is
sponsoring a Donation Drive for the
Crisis Center of Johnson County. Please
bring your donations to Awards Night on
November 8. The Crisis Center
especially needs the following: canned fruit and fruit
juice, canned meats, hearty soups and stews, canned
vegetables, toilet paper, baby formula, diapers, laundry
detergent, pasta and rice. Let’s show how much 4-H
families care about those in need in our area!!!

WINTER HULLABALOO
Join us at the Iowa 4-H Center for a winter wonderland
celebration December 28-30th. Youth, ages 8-12, can
come and spend three days and two nights at camp
during their winter break. Campers will enjoy snow tubing
(weather pending), winter night hikes, lots of crafts,
games, and more. We will celebrate winter, camp style!
Check-in is at 6:00PM on Wednesday, December 28th
and check-out is at 4:00PM on Friday, December 30th.
For this three day, two night camp it is a cost of $110.

4-H EXTRAVAGANZA IV/NEW MEMBER EVENT
SAVE THE DATE - The 2012 Project Extravaganza will
combine with our former New Member Night and will be
held on Saturday, February 18 at the Fairgrounds. More
information will be out soon!
RURAL ROADWAY SAFETY EVENT
The new Rural Health and Safety Clinic of Greater
Johnson County is excited to offer a safety event for area
youth and their families on “Rural Roadway Safety”,
December 3rd from 12:00PM-3:00PM. This event will
take place at the Johnson County Extension Building and
will feature demonstrations, hands-on activities, and
more. Youth of all ages along with their families are
encouraged to attend. Lunch will be provided!
Registration is encouraged to get an accurate count for
lunch, but not required. To register for this event or for

2012 CITIZENSHIP WASHINGTON FOCUS
Citizenship Washington Focus (CWF) is a nine-day trip
for 4-H youth in grades 10,11,and 12. The trip provides a
setting to experience leadership and citizenship in a
whole different way at the National 4-H Center. Youth
who have participated in previous trips have returned to
report that it has been the single most educational
highlight of their 4-H career.
Participants can select either June 8-16 or June 15-23 to
attend the trip. 4-H’ers and adult chaperones will travel
by charted bus to Washington D.C. Some highlights of
the trip are: Lincoln’s Springfield Home, Gettysburg
Battlefield, Capitol Hill, Smithsonian Museums, Mount
Vernon and Kennedy Center. Besides tours and
workshops participants have time for socializing and
meeting new friends.
The cost of the trip is $1,370.00. This includes lodging,
transportation, tour site admissions, and most meals.
Registration and a $350.00 deposit will be required to
secure a spot. Registration opens October 1, 2011 and
closes December 15, 2011.

type gathering with hands-on activities. Workshops and
networking fill the day on Saturday, February 11.

NEW 4-H JUDGE’S TRAINING
A multi-regional training will be held for adults interested
in becoming a conference judge at county fairs. This
training will be delivered by Iowa State University
Extension Youth Program Specialists, current 4-H
Judges and youth.
Training will be held Saturday, November 19th from 9AM
-Noon at the Jefferson Co. Fairgrounds, Activities
Building; 2606 W. Burlington Ave.; Fairfield, IA. Register
by November 4th by contacting the Jefferson County
Extension Office at 641-472-4166. The cost for the
training is $20, this includes a judge’s handbook & your
name being entered in the statewide 4-H Judge’s
Database.

Learn about energy efficiency

club and lead a 30 minute talk/discussion about ways to
reduce energy use and save money in your home.

Excellence in 4-H work is demonstrated beyond just the
County Fair. Many of our 4-H’ers demonstrate their
project learning with their excellent 4-H record books.
This is how they receive their project awards in the Fall.
Trophies, plaques, and other various awards are handed
out for excellent exhibits. Award plaques and discs are
given to record book project achievement. Johnson
County is looking for sponsors for the following project
awards: Senior Merit/Excellence, Aerospace, Consumer
Management, Music Environment, Leadership,
Photography, Welding, and Woodworking. If you are

Re-enrolling with 4hOnline
IMPORTANT: THE EXTENSION OFFICE MUST HAVE YOUR EMAIL ADDRESS FOR YOU TO LOG INTO 4hOnline.
Logging In
1. Open a web browser and type in https://iowa.4honline.com.
2. You can click on the blue sentence, “Find more information about enrolling using 4hOnline” to get picture views of these step-by-step instructions.
3. Enter the family email address you provided to the Extension office last year (if you have never given the Extension office your email, call ASAP to get it entered into the system — you cannot log in without an email address). The office can help get you an email if you need!
4. Click “I forgot my password.” DO NOT CLICK “I need to set up a profile”. Anyone who has been in 4-H or had a family member in 4-H from 2009 to the present already has a profile.
5. Click “Send my password”.
6. Leave this window open. Check your email. There should be one from 4hOnline with your temporary password. Be sure to check your spam.
7. Return to the 4hOnline page and click “I have a profile”. Enter your temporary password exactly as it was sent in the email. It is case sensitive! Perhaps copy/paste it to eliminate errors.
8. Click “log in”.
9. Choose a new password you will remember. Write it down! Enter it twice when prompted to update your password, then click “continue”. This is now your password every time you log on to 4hOnline.
Now you will see your family information, plus a list of members and leaders associated with this family name and email address.
1. Click “Edit Family” if any of the information listed there is incorrect. Change and update as needed.
2. If everything in the family section is correct, you are ready to re-enroll! Click “edit” to the right of the person you want to start with.
3. Scroll all the way to the bottom of that screen and click on “Enroll for 2011-2012”.
4. Edit information as needed. If this member has his or her own email address, you can enter that on top. Emails will then go to both the family email and the personal email. This is ideal. The more contact, the better.
5. Please remember to list emergency contact information.
6. Second Household fields are there for children with divorced parents but both want information sent to them. If a parent is not involved, there is no need to fill out those fields.
7. Answer the statistical questions, make sure the school information is correct, and click “Continue”.
8. The “Additional Information” page replaces sheets you formerly had to sign and turn in. Please read, mark, and “sign” as needed, then click “Continue”.
The next page has two tabs you must work through, CLUBS and PROJECTS.
1. Verify you are in the correct club. If you are also involved in Sharp Shooters or Johnson Co. Horse & Pony, be sure to add that to your list. Select it in the drop-down menu, then click “Add Club.” Then click “Continue”.
2. Next, select what projects you are interested in for 2011-2012. You can choose as many as you want and can add and delete up until May. This is an important step, so you get updated information on your project areas for special workshops, deadlines, etc. LIVESTOCK FIELDS MUST BE SELECTED BY MAY 15 FOR YOU TO SHOW AT THE FAIR!
3. When you have finished selecting projects, click “Submit Enrollment”. You are done!
Now what?
1. Your enrollment status will show as “Pending” on your family member list. Repeat as needed until every member and leader you want to en-roll for 2011-2012 is listed as “Pending”.
2. If your status says, “Incomplete”, click the edit button again to find what you missed. Submit enrollment again.
3. When you are finished, click “log out” in the upper right corner.
4. You will get an email when the county office approves your enrollment.
5. You may return to your profile any time during the year using your email address and the password you chose. Please keep information up-to-date!

Enjoying Thanksgiving Dinner When You Have DiabetesFor the nearly 26 million children and adults living with diabetes, the Thanksgiving meal can cause some anxiety when it comes to maintaining healthy blood sugars. Mashed potatoes, rolls, stuffing, sweet potatoes or winter squash, and pumpkin pie are all carbohydrate sources. Controlling your blood sugar means watching the amount of total carbohydrate consumed at a meal. The following tips can help control blood sugar levels while allowing you to still enjoy the festive holiday meal.
Be physically active. Compensate for the extra food you eat by being more active than usual. Instead of napping after Thanksgiving dinner, go for a walk or start a new family tradition of some type of physical activity (ice skating, flag football, hiking, bike ride).
Be selective. Eat your favorite special foods and pass on the rest. For example, eat the stuffing and pass on the mashed potatoes or rolls.
Choose reasonable portions. Instead of eating a heaping pile of stuffing, enjoy ½ cup or an amount about the size of a baseball.
Offer to bring a dish. Bring a side of non-starchy vegetables like seasoned steamed green beans or a green salad. They will help to fill you up and keep you from eating other high-calorie foods.

Serves: 10 (Serving size: 1⁄2 cup)Ingredients8 cups dried whole wheat bread cubes 3 Tablespoons margarine or butter 2 cups diced celery1 cup chopped onions1⁄4 cup sliced mushrooms or one can mushrooms (optional) 1 teaspoon ground sage 3⁄4 teaspoon poultry seasoning 1 teaspoon pepper 3 cups chicken or turkey broth
Directions1. Toast bread cubes and set aside – see “Tips” below. 2. Melt margarine or butter in a medium sized frying pan. 3. Add celery and onion, cook until tender, about 10 minutes. 4. Add mushrooms, seasoning, and broth. Cook 5 minutes. 5. Remove from heat and add toasted bread cubes. Cover and let stand 10 minutes. Serve immediately. 6. Refrigerate leftovers within 2 hours.
TipBread cubes can be toasted by cutting 15 to 20 slices of bread into cubes, spreading the cubes evenly over a cookie sheet, and and bake at 350°F for 10-15 minutes, or until lightly browned.

Food Safety Tips for Stuffing For many, stuffing is an essential part of the Thanksgiving meal. For optimum safety and uniform doneness, the USDA recommends cooking stuffing separately. However, if stuffing a turkey is a tradition, follow these food safety tips to ensure that the stuff-ing and turkey are safe to eat.• Cook any meat, poultry, or seafood you plan to use as an ingredient in the stuffing before adding it to the stuffing and turkey.• The wet ingredients (e.g., broth) for the stuffing can be prepared ahead of time and refrigerated. Do not mix the wet and dry ingredients (e.g., bread crumbs) until just before stuffing the mixture into the turkey cavity. Remember not to let the prepared stuffing cool. Spoon it directly into the turkey cavity after it is made.• Stuff the turkey loosely. About ¾ cup stuffing per pound of turkey.• Do not stuff turkeys that are to be grilled, smoked, fried, or cooked in the microwave.• Immediately place the stuffed turkey into an oven set no lower than 325°F. Cook the turkey until the turkey and the stuffing have both reached 165°F. Check the temperature with a food thermometer. Refrigerate the turkey and stuffing within 2 hours after cooking. • Use leftovers within 3 to 4 days. Reheat leftovers to a safe minimum internal cooking temperature of 165°F. Keeping Active When It Is Cold Outside Being physically active can sometimes be a challenge when it is cold outside. How-ever, children still need 60 minutes or more and adults need 30 minutes or more daily of moderate physical activity. Here are some tips to keep you and your family active when it is cold outside:
1. Dress in layers and head outside for a family walk.2. Go sledding.3. Build a snowman. 4. Try cross-country skiing.5. Turn on the music and dance!6. Check with your local park and recreation centers for organized indoor sports such as basketball. They often have leagues for both children and adults.7. Choose an exergaming video game like Wii® Fit or Dance Dance Revolution.8. Go to an indoor pool and swim laps.9. Check with the local school to see if it offers open gym in the evenings or on the weekends when community members can play basketball, walk, or participate in other active games.10. Limit TV and computer sedentary time to two hours or less daily.
