Don Juan Manchego DOP is produced exclusively with high quality milk from the Manchega breed of sheep. By combining old world techniques with a state of the art facility and equipment, this 4-month Manchego has great character. This cheese has a floral aroma with a gentle, nutty flavor, making Don Juan Manchego the mildest version of this Spanish classic.

Aged to perfection, this 12-month DOP Manchego is made by the renowned Spanish Manchego producer Coqueya who takes pride on marrying old techniques with modern technologies. The silver winner at the 2012 World Cheese Awards, this mature Manchego exhibits a nice level of complexity and has just the right mix of savory and sweet. Its rich golden paste is firm and surrounded by the traditional herringbone prints, to mimic the traditional look when cheese curds were pressed with a straw cheese belt.

Made by one of the oldest Manchego producers, Coqueya, Don Juan Manchego loaf is made from 100% Manchega sheep’s milk without the addition of egg white lysozyme. Its semi-firm paste boasts a rich golden color and smooth texture. A mild cheese at first, its floral aroma and nutty flavor unfolds with each bite. The convenient loaf shape makes this cheese ideal for food service and deli applications, easy to slice and store.

Mahón is a cow‘s milk cheese named after the capital of Menorca. After ripening in underground caves for at least 60 days, Mahón develops a bold, magnificent flavor. The yellowish-orange rind, which is rubbed with olive oil and paprika, conceals a soft, slightly briny and nutty interior. This cheese is sold at stages ranging from semi-cured to very old. Historically it was formed in these easy square blocks with shipping in mind since the island exported large quantities of this special cheese by boat to mainland Spain. Mahón is traditionally served as an appetizer, drizzled with olive oil and served with a sprig of fresh rosemary.

The Marcona almond also referred to as the “Queen of Almonds,” is considered one of the most delectable varieties of almonds in the world. These nutrient rich nuts are high in Oleic acid and Vitamin E making Marcona almonds one of the healthiest snack choices. Offered both roasted and salted, and fried in olive oil, Marcona almonds are savory and sweet, with a delicious fruity and smooth finish.

Beemster Aged (18-Months) is considered the signature Dutch cheese throughout Holland. The complex flavors develop over the year-and-a-half aging in our 100+ year-old warehouse. Firm textured with some crystallization, a deep ochre interior and notes of toasted walnuts and a brown-butter finish.

Beemster Signature is hand selected by our master cheese maker as an exceptional representation of Beemster's craft. Aged a minimum of 12 months, Signature is firm, smooth with some delightful crunchy crystallization and a full, rich flavor with sweet caramel notes.

Vlaskaas is a cheese that was historically made only once a year during the flax harvest festival. Vlaskaas is a buttery and semi-soft cheese with a unique sweet-milk flavor, notes of almond and a touch of sharpness that adds depth.

One of the most popular cheeses in Italy, Grana Padano is a hard-grating cheese made in the Po Valley across northern Italy. It is similar in size and texture to Parmigiano Reggiano, but matures in a shorter period of time. Grana Padano is a sweet and savory golden-hued cheese with delicate, fruity and light-tasting characteristics. The name “Grana” was bestowed upon the cheese because of its “grainy” consistency. It is produced by curdling the milk of cows that are milked twice a day. The wheels have a golden rind and a slightly oily sheen, and the sides are imprinted with the official Grana Padano DOP mark. Its production area includes five regions and 32 provinces in the Po Valley, making it a signature cheese of Italy.

A unique mountain cheese, Gran Maso is a cow’s milk specialty from the northern mountainous Italian region of South Tirol. A cousin to the famed Grana Padano, it is hand-made to a traditional recipe, using virtually the same processes. The herd’s diet of natural, GMO-free feed of fresh, aromatic plants and hay from the alpine pastures lends itself to this cheese’s characteristic golden-straw color. The air and regional flora give Gran Maso a distinct but delicate flavor of the land, with a crumbly textured body.

Parmigiano Reggiano is produced exclusively in the provinces of Parma, Reggio Emilia, Modena and parts of Mantua and Bologna. This mature, hard and nutritious cow’s milk cheese is produced using very strict standards, and only the highest quality ingredients. Aged for over two years, Parmigiano Reggiano Export Quality is a premier cheese, its long maturation period highlighting the intensely nutty flavors and slightly salty, fruity finish.

The cheese is named after Pecorino, specifying the sheep’s milk that it is made with, and Romano, referring to the Lazio countryside outside of ancient Rome. All of Atalanta’s Pecorino Romano is PDO-designated and made purely of fresh ewe’s milk. Using time-honored production and maturation methods, Zerto Genuino Pecorino Romano comes by its full, classic sharp, salty flavor and signature grainy, crumbly texture naturally.

Mascarpone is pale and cream-colored with a soft, spreadable texture. Similar to English clotted cream, Mascarpone is made from cow’s milk and features a light taste with a slight tang and a rich, silky texture. The cream is churned like butter and then drained for a thick, luxurious feel.

Part of the “stretched curd”, or pasta filata, family of cheeses, this Italian staple is made with whole cow’s milk collected solely from the approved Provolone production area. Ghidetti’s master cheese makers expertly form the “dough” into the traditional Provolone shape, and through skillful curing techniques, achieve a full, buttery, pleasingly sharp flavor and distinctive semi-firm, smooth texture.
