PANA-KIRI ® -COTTA cauliflower and PASSION fruits - DESSERT - www.laMAISONdelaVACHEquiRIT.com For 6people Preparation time : 20 min Baking time : 20 min Restng time : 1 night Ingredients – 3 gelatin leaves – 200 g cauliflower – 4 Kiri – 45 cl milk – 40 cl liquid cream – 3 passion fruits – 1 mango – ½ bunch chives – 2 shallots – salt, Espelette pepper Method Wash cauliflower, put it in a pot, pour in milk, cream, Kiri, salt and Espelette pepper. Once boiling, leave it to cook for 10 minutes. Right when the cooking is finished, blend everything then add gelatin after softening it in cold water. Sieve the mixture then pour it in 6 containers of your choice. Leave it to cool in the fridge for a night. Make a tartar with mango, passion, shallot and chives, season. Slowly put the tartar on the panna-Kiri-cotta. Let’s eat ! 1 2 3 4

MethodWash cauliflower, put it in a pot, pour in milk, cream, Kiri, salt and Espelette pepper.
