Arbor’s Registered Dietitians create delicious
and fresh recipes using a variety of produce
and healthy ingredients. They provide
useful nutrition education to students, as
well as implement promotions and taste-tests in cafeterias to encourage students to explore new foods.

Prep Time: 15min Serves: 4
Ingredients:
⬚ 1 ¼ cups Beets, diced, drained ⬚ ¾ cup Mandarin Oranges, drained ⬚ 1 Tbsp Red Onion, minced ⬚ ½ cup Apple Cider Vinegar ⬚ ½ cup 100% Orange Juice
Directions:
Drain canned foods and mince red onion. Stir all ingredients together in a bowl. Refrigerate to let flavors combine. Serve cold. Great as a side dish to fish or over a bed of mixed greens!

GROW The green tops of beets resemble chard, and can be cooked like any other greens as a tasty vegetable side dish.
NUTRITION The deep color is from betalains—a plant nutrient that is an antioxidant, reduces inflammation, and helps your body’s natural detoxification.
FLAVOR Beets have a VERY strong acidic flavor that is slightly sweet and similar to a mix of carrot and tomato. Use creamy or sweet ingredients to tone down the acidity.
TRIVIA Much of the granulated sugar we use is processed from the white sugar beet; it is not all from sugar cane.

10 Healthy Snacks for Kids
When a snack attack strikes, refuel with these nutritious
snacks!
(you may need adult help with some of these)
1. Peel a banana and dip it in yogurt. Roll in
crushed cereal and freeze.
2. Spread celery sticks with peanut butter or low-
fat cream cheese. Top with raisins. (Ants on a
log!)
3. Stuff a whole grain pita pocket with ricotta
cheese and Granny Smith Apple slices. Sprinkle
with cinnamon.
4. Mix together ready-to-eat cereal, dried fruit and
nuts in a sandwich bag for an on-the-go snack.
5. Smear a scoop of frozen yogurt on two graham crackers
and add sliced bananas for a yummy treat.
6. Make snack kabobs. Put cubes of low-fat cheese and
grapes on a pretzel stick.
7. Microwave a small baked potato. Sprinkle with low-fat
cheddar cheese and salsa.
8. Toast a whole grain waffle and top with low-fat
yogurt and sliced fruit.
9. Spread mustard on a slice of deli turkey and wrap
around a sesame breadstick.
10. Microwave a cup of tomato soup or
vegetable soup and enjoy with whole grain
crackers.

climate. Pineapples are an excellent source of
vitamin C and manganese. Vitamin C keeps your
immune system strong and protects your gums
from scurvy. Manganese is a helper mineral that
keeps your bones and nerves healthy and strong.
Beets contain a phytonutrient called betalains,
which fight free radicals and help the body detox.
Beets are also a source of folate, which helps
prevent birth defects. Beets come in a variety of
colors ranging from white to deep purple.
FUN FACT: Beets are in the same family as the
Venus Fly Trap!
