Food services training focuses on healthy, homemade optionsStaff in Pattonville’s food services program

spent time before school began learning more about incorporating healthy, homemade items into their school menus.

The training was part of Pattonville’s new part-nership with Chartwells School Dining Services. This summer, the Pattonville school board ap-proved a contract with Chartwells to manage the district’s food services program while retaining its own local food service employees. Bridget Jordan, a Chartwells employee, manages the day-to-day operations of Pattonville’s program, including food purchasing, menu development, staff train-ing, meeting state and federal requirements and other services. All other food service employees, including school cafeteria managers and cooks, are Pattonville employees.

On Thursday, Aug. 7, Chartwells School Dining Services Regional Chef Ralph Garcia and Regional Marketing Manager Lisa Catron were at Pattonville to introduce food service staff to Chartwells’ food concepts and preparing fresh-baked pizzas. The pizza linewillbeoneofChartwellsfirstinitiativestowardsmovingtomorehomemadeitemsandscratchcookingwithintheschools.

ThetrainingwasheldatHolmanMiddleSchool, thefirstsiteinPattonvilledesignatedtorolloutthenewChartwellsfoodconcepts. Staff members from Holman, Pattonville Heights Middle School and Pattonville High School received training on preparing a variety of pizza products including traditional pizzas, calzones and Stromboli’s, all of which will be integrated into school menus district-wide over the school year. Catron shared marketing tips and strategies to give a restaurant-like appearance to the schools’ food and serving lines. Holman is scheduled to roll out the new food concepts by the end of September.

Chartwells is the largest food services management company in St. Louis with a client list that includes the following area school districts: Clayton, Kirkwood, Ladue, Lindbergh, St. Charles and University City.
