2012 Cabernet Franc CUVÉE MADELINE

Date of harvest: October 14, 2012.

Vinification & Élevage: This Cuvée was made with 100% Cabernet Franc from our 19th street vineyard. The fruit was harvested on October 14th and 15th, 2012. Fermentation (40% whole-cluster) by indigenous yeast took place in oak vats and concrete. Élevage was done in neutral oak barrels and demi-muids, and in concrete vat. The wine aged on its lees for a total of 18 months. As per usual for our winery, no racking was performed during that period. 2012 Cabernet Franc Cuvée Madeline was bottled un-fined and unfiltered on July 2, 2014. pH: 3.68 Total Acidity: 5.63 g/L FS02: 17 mg/L at bottling Alcohol: 13.8% /vol Residual Sugar: <2 g/L Average Brix at harvest: 23.7 Total Production: 612 cases of 12 bottles.
