This is the debut book by Danish gypsy brewer Jeppe Jarnit-Bjergsø of the bar Tørst , and Canadian chef Daniel Burns of the Michelin-starred restaurant Luksus – both of which are located in a shared space in
Brooklyn, separated by a 'secret' door, and where they elevate beer to the level of wine in fine dining.
Food & Beer examines the vision and philosophy of this brewer-chef duo.
With a stunning, bold aesthetic, and two types of paper, the design will highlight the dual visions of the authors and their spaces – Tørst, which is more rustic and relaxed, and Luksus, which is more sleek and refined.
9Winter & Spring 2016 phaidon.com Food & Cooking
The first high-end chef cookbook about beer and food pairings in fine dining from the only Michelin-starred restaurant in the world to exclusively pair food with beer.-Features 50 recipes and in-depth descriptions of the nature, taste, and flavor of the different kinds of beers being brewed today globally and how to pair these with food.-For all beer and brewing enthusiasts, serious home cooks, chefs, culinary students, and foodies throughout the US and internationally.-Foreword by internationally renowned chef René Redzepi, co-owner of Noma, Copenhagen, the #2 restaurant in the world.
Daniel Burns is the chef behind the Michelin-starred beer-pairing restaurant Luksus in Greenpoint, Brooklyn, which serves only 6–10 people per sitting and is only accessible through a 'secret' door in the beer bar, Tørst (which means 'thirst' in Danish). He has been a chef at Heston Blumenthal’s Fat Duck in the UK, pastry chef at René Redzepi’s Noma, and he ran the Momofuko test kitchen for David Chang in New York. He is from Nova Scotia, Canada and lives in Brooklyn.

Joshua David Stein’s writing has appeared in many publications. He is the food critic at New York Observer, a food and film columnist at Eater, and host at Heritage Radio Network. He lives in New York.

‘As art in the US gained international attention after 1945, earlier American art was cast off by critics and curators as a kind of demented uncle, in favour of establishing a more elevated pedigree, a celebrated cast of exalted European artists – but more was owed
to American art prior to 1945 than anybody understood, or cared to admit ...
The primary aim in this book is to develop a sense of integration of all facets of American art, and to stress the continuities and connections within
it during these years, all but overlooked until now. For the first time, essential aspects of the history of modernism in America, usually treated piecemeal, and seldom if ever connected, will be thoroughly integrated.’– William C. Agee

A ground-breaking account of American modernism that unites pre- and post-1945 art in a continuous narrative spanning four generations of artists.-A rallying cry for the re-positioning of pre-1945 American art in the art historical canon, and a challenge to the perceived ‘watershed’ of World War II found in most other books on the subject.-Written by one of the world’s experts in the field, in an accessible and compelling style, this is a must-read for students and scholars of American art as well as all those interested in modernism and its wider cultural history.
William C. Agee taught at Hunter College from 1988 until his retirement in 2014 and was awarded an endowed chair in 2004, the Evelyn Kranes Kossak Professor of Art History. Prior to Hunter, he held directorships at the Museum of Fine Arts, Houston and at the Pasadena Art Museum. ‘The leather-clad architect to the stars.’ – Dazed & Confused
Dubbed ‘The Leather Daddy of Luxury’ by New York Magazine, Peter Marino is the premier architect of luxury brand spaces worldwide, including for Chanel, Dior, and Louis Vuitton, in cities including Los Angeles, New York, London, Paris, Munich, Singapore and Tokyo.-This is the first book to look at the collaborative process by which Marino has commissioned site-specific works for luxury retail spaces from artists including Richard Deacon, Vik Muniz, Vanessa Beecroft, James Turrell, Not Vital, and Jean-Michel Othoniel.
Marino’s commissions explore the relationship between art and architecture. The process of these collaborations is documented here through personal anecdotes, notes, diaristic photographs and sketches, culminating in beautifully photographed images of the final work in situ. -Each chapter is dedicated to a single collaboration, following it chronologically through its developmental journey, with Marino giving his perspective on unifying themes, and the cross-pollination of the art and architecture.-Marino provides a narrative voice and vision – a knowledgeable guide to the creative world he inhabits.

An architect occasionally emerges whose vision is so fresh that it causes us to reconsider the very nature of architecture. Sou Fujimoto is one of those architects. Guided by instinct and keen observation, he casts convention aside. Both comfortably familiar and curiously enigmatic, Fujimoto’s dynamic
work grabs our attention, then lingers in our minds. Born and bred in Hokkaido, Fujimoto received his undergraduate degree in architecture from Tokyo University before embarking on an uncharted, solo exploration that probed the possibilities of architecture. Unfettered by the ideas
and practices of others, Fujimoto’s work has clarity of thought and purity of execution seldom seen. Fujimoto garnered significant international attention for his popular 2013 Serpentine Pavilion in London and was the youngest architect ever to receive this highly regarded commission.

Including never-before-published material, Marcel Breuer is an account of his entire career, from his beginnings at the Bauhaus in pre-war Germany through his collaboration with Walter Gropius, and the establishment of his own practice in the USA. Despite the fifteen or more years that separated
him from pioneers such as Frank Lloyd Wright, Le Corbusier, and Ludwig Mies van der Rohe, Breuer is often called the last of the first generation of Modernists. While engaging with Breuer’s principles and theories of Modernist design, the book also includes detailed
descriptions of his houses and buildings in Europe and the United States, including the Whitney Museum in New York and the UNESCO headquarters in Paris – as well as his iconic furniture such as the Wassily and Cesca chairs.

This Brutal World single-handedly reinvents, reappraises and repopularises the term ‘Brutal’ as it applies to architecture. The first book ever to do so, This Brutal World takes inspiration from the fast growing trend on social media and across the worlds of design and music for sharing all
things Brutal. Non-architect fans are posting images of many more buildings than the traditional canon of Brutalism ever included. Sharing their new-found passion, a wave of bloggers, Twitter and Instagram feeds are fuelling a resurgence of interest in Brutalist architecture.
This Brutal World takes a much wider and more celebratory view of what is Brutal. No longer relegated to those often controversial canonical works of the mid-20th century, Brutalism can now be celebrated in architecture all over the world.

Robert Mapplethorpe (1946–1989) is one of the twentieth century’s most important artists, known for his groundbreaking and provocative work. He studied painting, drawing and sculpture in Brooklyn in the 1960s and started taking photographs when he acquired a Polaroid camera,
in 1970. Beginning in 1973 and until his death in 1989, Mapplethorpe explored the flower with extraordinary dedication, using a range of photographic processes – from Polaroids to dye-transfer color works. In carefully constructed compositions, he captured roses,
orchids, snapdragons, daisies, tulips and other species – both common and rare – and forever transformed the way we perceive a classic and familiar subject. The result – a stunning body of work – is collected in this elegant book, Mapplethorpe Flora: The Complete Flowers.

Award-winning Magnum photographer Stuart Franklin’s exploration of how we are driven to visually document our experiences and the world around us.- Touching on both the psychology and philosophy of photography in a concise and fluid writing style, this book shows an approach similar to the way in which Alain de Botton tackles philosophy.-From photojournalism and war photography to work recording our culture, the book features a wide range of photographers: from the concerned lens of Don McCullin and Ian Berry, and the surreal street photography of Eugène Atget and Sibylle Bergmann, to the colour-saturated work of Martin Parr and staged scenes of Gregory Crewdson.
Franklin offers a unique and authoritative perspective as both an acclaimed practitioner of photography and an eloquent writer.-This elegantly written book is an ideal gift for aspiring photographers.
Stuart Franklin took one of the most powerful photographs in the history of the twentieth century – the ‘tank man’ – a lone man bringing to a halt a line of tanks entering Tiananmen Square, Beijing, in 1989. He is a member of Magnum Photos and was president of the agency from 2006–2009. He lives in Oxford, England.
