Happy March! Throughout February we saw frigid cold temperatures, as
well as some warmer temps in the 50’s. It’s always an adventure here in Minnesota!
One of my favorite things about The Pines is the effort to make each holiday as fes-
tive as the last. We celebrated Mardi Gras with a New Orleans style meal, a Hurri-
cane Happy Hour, and festive masks. Valentine’s Day brunch was also a great after-
noon filled with sweets, delicious prime rib, and family gatherings. I was also im-
pressed with how many residents dressed for the occasion in their reds and pinks.
We hope all guests for these occasions enjoyed themselves, and welcome you back
for future festivities!
As St. Patrick’s Day approaches, I am reminded of all of the wonderful heritages
that we serve. March 17th is a day to celebrate those of Irish descent, as well as those
who wish to join in on the traditions. Each year, a majority of us choose to wear
green on this festive day—but did you know why? I recently learned the tale that
people believed wearing green made themselves visible to leprechauns, who would
pinch anybody that they could see. People then began pinching those who didn't
wear green as a reminder to show that leprechauns would still perform their antics.
We promise there will be no pinching of green, or non-green wearers at The Pines
this St. Patrick’s Day!
On Easter Sunday, we will host a wonderful brunch for residents, families, and their
guests. Please be sure to make these reservations early on, as we will be cutting res-
ervations at a certain number to be sure we can properly accommodate our residents
and guests. Easter Brunch will be served on Sunday, March 27th, 2016.
You may have noticed a staffing change in our Business Office. The representative
from Augustana’s Home Office has moved on, and we now welcome Katie Dockry
to take on this position full-time. She started at The Pines at the end of February,
and we look forward to having her! Katie has extensive background in office man-
agement and customer service initiatives. Welcome to the Augustana family, Katie!
As always, we look forward to meeting new residents and families throughout the
next month. Please do not hesitate to ask a staff member if you have any questions
regarding upcoming events, activities, or outings.
I would like to introduce you to one of four, of our resident centenarians, Helen Sabatuk.
Helen shares her chronological age with only 450 thousand others worldwide. She has been
alive during the terms of seventeen presidents, and has witnessed firsthand a myriad of ad-
vances in her lifetime.
Helen was born at home, in Onamia, Minnesota, and has only ever lived in Minnesota. When
Helen was in the ninth grade her family moved to the big city of Minneapolis. This proved to
be a big culture shock for her and her siblings. Helen went on to graduate from North High.
During the great depression in 1936 at the age of 21, Helen married Theodore, a young man
she had met as a junior in high school.
Helen and her husband traveled within the United States, Canada, Mexico, the Middle East, and
extensively in Europe. She remembers being especially dazzled by the cities of Paris and Lon-
don. One place she has not been, is New York City, and said of that “I still gotta do that.”
When asked which president she first recalls she said FDR. When asked what advancements
have made the greatest impression on her she was at a loss to pick any one thing. Helen spoke
more about how she misses the old days. Times when things were simpler, women wore
dresses, people had good manners, communicated in person, and you knew your neighbors.
Helen thinks computers are wonderful, does not own a cell phone but does have a pair of
pierced earrings made on a 3D printer!
Helen likes to keep her mind engaged and feels that keeps it healthy. She enjoys current events,
and watching the political debates. Helen is looking forward to exercising her right to vote,
something she said we should never take for granted.

For questions or concerns to be
directed to our department mangers
feel free to stop by their office during
business hours, or step to the recep-
tion desk and ask to see them. Our
site administrator, resident services
director, and office manager, are
located behind the reception desk.
The leasing counselor is on the first
floor next to the general store. The
executive chef offices in the kitchen.
The maintenance director’s office is in
the basement/garage. The activity
director’s office is in the third floor
activity room. Business cards for the
department directors are available by
the reception desk on the wall next to
the calendar.
Nursing and home health aide office
is in the second floor, straight out of
the elevator. Questions about direct
cares or billing for health care are best
directed to that office.

I want to thank everyone who attended the “Heart Talk” presented by Gentiva. It is
amazing to find out how much salt a person is advised to consume in a day compared
to how much is actually consumed. This is why we need to keep in mind when we
are at the dinner table that it is a good chance the food on your plate does not need
additional salt. Sodium, referred to as salt, is already present in the food we are con-
suming and sometimes at a level that is above the daily value. DASH is a great prod-
uct to use to flavor your food along with other seasonings that can be found in the
pantry. These products have less sodium content but have great flavor. What I also
thought that was very interesting at the “Heart Talk” was that most medications have
sodium in them to help with preservation. This means the more medications you
take, the higher the sodium content. Please join us at our next meeting on March 22nd
titled “Savor the Flavor”.
Just to remind everyone that if you have any questions regarding your healthcare
services or healthcare bill to please stop by the nurses’ station office located on the
second floor for assistance.

Mom’s Classic Cole Slaw 1 cup Miracle Whip 1/2 cup white sugar
1/4 cup cider vinegar Salt, pepper, and paprika to taste
Whisk ingredients together until smooth and pour over cut cabbage slaw, being careful not to over saturate. If you enjoy a more savory slaw, substitute mayonnaise for Miracle Whip. Or add a touch of Dijon, Durkees Sauce, celery seed, pineapple, or shredded apple. So simple, and so good. Enjoy!
