They will offer breakfast and you can have all of your questions answered. Friday, November 21, Chad Parker will be here to offer lunch and talk about “risks retirees face at retirement”. In The Spotlight: Jim & Ellie Whitmore

red rock Canyon was designated as Nevada’s first National Conservation Area (NCA). red rock Canyon is located 17 miles west of the Las vegas Strip on Charleston boulevard/State route 159. The area is 195,819 acres and is visited by more than one million people each year. red rock Canyon offers a 13-mile scenic drive, more than 30 miles of hiking trails. There are 22 trails, most are easy to moderate, with six classified as moderately strenuous or strenuous. It also offers rock climbing, horseback riding, mountain biking, road biking, picnic areas, nature observing and a visitor center with exhibit rooms and a book store. The unique geologic features, plants and animals of red rock represent some of the best ex-amples of the Mojave Desert. In 1990, special legislation supported by the Nevada congressional delegation, changed the status of the red rock recreation Lands to a NCA. This legislation pro-vides the funding to protect and improve the area. Just the phrase “drive-through specialty coffee” makes the upcoming fall and winter sound wonderful. “The Splash Pad”, one of our new local businesses, has been doing a brisk drive through business selling fresh fruit smoothies, gourmet sodas, soft drinks and delicious brownie and cookie treats to everyone in town. Now that the cool weather is arriving they have plans to add a bigger selection of coffee and hot cocoa steamers with espresso coming soon. They are the only drive-through offering specialty coffee in Mesquite and we know many of you will want to visit and not have to change your robe and slippers. You may remember reading about their colorful little location at 272 W. Mesquite blvd. in the September 2 issue of the Desert valley Times. The Chesley brothers, McQuade, Ma-Clinn and MaKay along with their partner Michelle Sweetin enticed the kids and young parents with the new and popular infused gourmet sodas, ice cold treats and shaved ice during the hot days and made the transaction painless for parents who didn’t want to drag kids through hot parking lots. Now it is our turn to take advantage of those cool mornings with yummy coffee and cocoa offerings along with your fresh fruit smoothie to start the day. The Splash Pad is open 7 a.m. to 10 p.m. Monday through Saturday. Drop by for a cup and check back often for new selections.

ellie and Jim Whitmore moved here from Alexandria, vA four months ago, and they are as busy now as when they were being paid to work full time, says Jim with a laugh. After living all over the U.S.—various locations in Florida, California, ohio, Colorado, virginia, Seoul, Korea, and Wash-ington, D.C., they wanted a desert location. Their choice of Mesquite was based upon several factors, including the size of the town, access to medical facilities, and proximity to a military installation. However, “It was the people of Mes-quite that put it at the top of the list overall”, they said. “ev-

eryone is extremely friendly and they seem to really care about their neighbors.”Jim retired from the Air Force with a 20 year career flying fighter aircraft, and having various

staff positions. Jim and ellie met and married while he was assigned to George AFb in victorville California. At one time, he was assigned as a detachment from Nellis AFb coordinating Close Air Support for Army units preparing to deploy to the Mideast.After retiring from the Air Force, Jim worked as a systems accountant working for Defense Fi-

nance and Accounting Service. After their fifteen years in the Washington DC area, Jim retired the second time as a program analyst working to standardize and expedite the security clearance processes.The Whitmores were attracted to Mesquite also due to the numerous golf courses in the com-

munity—which they have yet to visit! Definitely on the “to do” list! They are enjoying the pools, card games, bingo, trivia, bocce, beer club, social club, slot tournaments, wine dinners, ice cream socials, and special events dreamed up by our great staff. The bits of “spare time” are spent un-packing boxes. The Whitmores are looking forward to meeting more wonderful folks and finding more activities that fit their personalities.

If you listen closely to the “talk on the street”, you will hear a lot of positive comments about the latest enhancements at the 1880 Grille implemented by Gary Livigne, Food & beverage Director. In addition to several menu changes, expanded happy hour and the special football package, Gary hired our new executive Chef, Ian Phinney. Ian, who originally hails from San Jose, brings over 16 years of “kitchen experience” to the 1880 Grille, starting as a prep cook and working his way up to executive Chef. His favorite food specialties are Asian/ euro fusion. Ian said, “We are continuing to expand our menu with offerings of freshly prepared, made from scratch dishes, rather than serving the convenience prepared food”. He went on to say that most all the meats are fresh instead of the processed styles, that a baker delivers fresh bread daily and fresh produce is delivered 5 days a week. These are most welcomed changes from the past, as is evidenced by the increased number of patrons. The 1880 Grille just experienced its biggest month ever. As Ian said, “Nothing sells better than taste!” Ian has been with Troon a little over 2 years. He most recently was the executive Chef at Sun City Alliante. Prior to Alliante he worked in Lake Tahoe and restaurants in the Las vegas area including the Las vegas Country Club. Ian looks forward to raising his family in Mesquite. Roasted Butternut

Squash with Ricotta Gnocchi

ingredients:2 tablespoons olive oil4 cups peeled and diced butternut squash11⁄2 teaspoons butter1 cup chicken stock, hot1 tablespoon thinly sliced sage leaves1⁄4 teaspoon kosher salt1⁄4 teaspoon freshly ground black pepper11⁄2 cups grated Parmesan cheese11⁄2 teaspoons finely chopped parsley1⁄4 cup toasted pumpkin seeds

Gnocchi11⁄4 cups ricotta3⁄4 cup plus1 tablespoon all-purpose flour, sifted1 egg3 tablespoons olive oil3⁄4 teaspoon kosher salt

Directions:Place 2 tablespoons olive oil in a small roasting pan and add squash. roast in a 400-degree oven until the squash softens, about 20 minutes. remove squash from pan and set aside.To prepare gnocchi, place ricotta, flour, egg, 3 tablespoons olive oil and 3⁄4 tea-spoon salt in the bowl of a food proces-sor. Process until the ingredients form a smooth dough, about 30 seconds. Trans-fer dough to a bowl.bring a large pot of salted water to a boil over high heat. Using two teaspoons, shape the dough into gnocchi dumplings. Slip the gnocchi into the boiling water a few at a time. They will float to the sur-face. once they’re floating, allow them to continue cooking until done, about 2 to 3 minutes. Use a slotted spoon to carefully transfer gnocchi to a bowl.Add the butter to a medium sauté pan over medium heat. Add the roasted squash, gnocchi and stock. Cook until heated through, 1 to 2 minutes. remove from heat, add the sage, and season with salt and pepper. Serve gnocchi and squash in bowls, garnished with Parmesan, parsley and pumpkin seeds.

Featured Club: Tennis

You haven’t heard the sound of bouncing balls and rackets lately, right? That’s because the tennis and pickleball courts have been refurbished and are now sporting a new surface. The new surface is the riteWay covering, installed by MK House Consulting Inc. from Las vegas.

Additionally, there have been many improvements to the tennis courts besides the sur-face. There is a new message board and backboard for individual practice. Fencing was added in the past which makes the courts tournament ready.

The Sun City Tennis Club has grown exponentially with the addition of new residents and now has a mem-bership of over 40. With new neighbors arriving all the time, the tennis club is still growing.

Not only is the tennis club a good source of exercise and competition, there is also the opportunity to meet and socialize with new friends and neighbors.

As with all sports, there are multiple levels of expertise. The tennis club has members at every level of play and will help you become a better player. Whether you are a novice or near pro, the free tennis clinics will help you improve your game.

Tennis Club President and certified instructor, Donna eads leads the tennis clinics on Thursdays and Satur-days at 9 a.m. that cover all aspects of tennis. There is a different focus at every clinic.

The tennis club is also philanthropic, holding yearly events that support local charities. The Holiday Classic event on Saturday, December 6th supports the Toys for Tots charity. The Lobs and Drives event allows golfers and tennis players to play both. The golf portion is held on Wednesday, November 12 and the tennis portion is set for Thursday, November 13. You can play one event or both.

Writing a small biography about yourself really isn’t as easy as one might think. I hope I can tell you a little about myself to help you get to know me better.

My name is Presilla ramos-Garcia. I am 23 years old and I live here in Mesquite. I have lived here for about 8 years and counting. originally I am from Fort Collins, Colorado. However, I did live in Washington D.C. for a short period of time before I moved here to Mesquite.

Lucky me, I am the mother of one baby boy. He is now 6 months old and as precious as can be. My husband, Philip, is from California originally and has lived in Mesquite for about 12 years. Currently my father, mother, brother, and grandparents also live here.

I have worked at the front desk here at the Pioneer Center as a concierge since August and I love every single minute of it! before working here, I worked at a hotel, spa and salon, and a tanning salon. Working at the front desk is what I love to do. Meeting new people, hearing fun stories, and seeing happy faces is what I enjoy most about my job.

Here at Sun City I encounter many great people and I look forward to those I interact with on a daily basis. Thank you for letting me serve you in this beautiful community. I look forward to this next chapter of my life here in Sun City.
