Folar da Pascoa” - Recipe• 2Kg of flour• 500g of sugar• 40g of baker’s yeast• 2 eggs• 2 lemons• 1 tsp. Cinnamon• Salt• Warm Water• 2 hard boiled eggs• • Empty the baker’s yeast in a little bit of lukewarm water, let it develop a bit. Combine eggs and

lemon zest and mix well. Add the flour with the sugar, cinnamon and a bit of salt. Slowly add it to egg mix.

• • Knead very well with mild warm water until the dough comes together and off your hands.• Let it rise and then form the “folars” into large, round balls, (about 6-8in. around) flattened a bit

(make sure to reserve some dough for the crosses).Put one or two hard-boiled eggs into the center of each” folar”, and cross two strips of dough over the eggs and one wrapped around the cross. At this point you can let it rise once more for an even fluffier bread. Brush egg yolk over the” folars” and bake it on medium heat about 200C or 350F for 35 to 40 minutes.

PORTUGUESE CAKE “Pão-de–Ló” Ingredients

~ 6 eggs~ 1 Tsp Butter ~ The weight of eggs in sugar~ ½ the weight of eggs in self- rising flour

Directions:First of all warm up the oven, butter the cake pan and sprinkle it with flour. You´ll need two bowls to separate eggs. Separate the yolks of the whites. Add the sugar to the yolks and beat until you obtain a homogeneous mixture. Add up the flour to the mixture and beat it again. Beat egg whites until they are real stiff. Add to the mixture and mix softly. Pour the mixture into the cake pan and put it in the oven. Bake about 45 minutes or until a toothpick comes out clean after inserting into cake. After baking, wait around a quarter of hour until the cake cools and then remove from the pan. This Portuguese sponge cake is great with coffee or tea in one of those rainy and cold afternoons. Pão-de-Ló” – Easter Portuguese Cake / Sponge cake

A delicious Portugese Easter cake!

Ingredients:

9 egg yolks3 eggs12 tbsp sugar1 tbsp slightly warm water6 tbsp flour2 tsp baking powder

Preparation:

1. Beat the egg yolks with the sugar for about 10 minutes2. Add the eggs until reaching a creamy paste3. Add the water and mix it with a wooden spoon4. Finally add the flour and baking powder and mix it softly with the wooden spoon5. Pour the mixture into a circular baking dish covered with parchment paper 6. Place it in the oven for about 20 minutes at about 375 degrees

Pão-de-ló de Ovar »» Ovar sponge cake

• 2 whole eggs• 10 egg yolks• 200 gr. sugar (7 ounces)• 80 gr. Flour (sifted) (3 ounces)

• Preheat oven at 225C (437F). Use a springform pan (no hole in the• middle): grease it, line with parchment or wax paper, and then grease• again and flour. Beat whole eggs, egg yolks and sugar for 20 minutes• in the electric mixer. Fold in the flour, a little at a time, without• beating. Put the mixture in the pan and put in the oven for 20• minutes. Take out of oven and let cool. The middle of the cake will• fall down because it's not very well cooked, but it's really as it's• supposed to be. The middle of the cake will seem like an egg custard• and you can eat it with a spoon. Beware: This is a very rich cake.
